Again, we travel with the culinary World travel group from Volkermampft, this time we go to Vietnam. I was several times in Vietnam, it is quite close to where I live. And each time I was surprised how the people from Vietnam are friendly to everyone even after their hardship. It’s not that long ago when they were involved into a gruesome war, a horrible time! The country has reinvented itself and has survived! Vietnam is beautiful and I love their food! I will bring you some of them in this event, just like these puff pastry raviolis. Vietnam was from 1862 to 1941 a French Colony and of course they were influenced by their colonialist’s food. These Ravioli are made with puff pastry and pate, all French ingredients.

Vietnamesische Blätterteig Ravioli

Für ca. 20 Stück:
500 g Schweinehackfleisch
125 g Pate
4 Frühlingszwiebeln, fein gehackt
½ TL Pfeffer
½ TL Knoblauch Pulver
1 EL Mehl
1 Ei

Mix the meat with the pate, spring-onion, flour, egg and the seasoning and knead well. Put the puff pastry onto a working surface and cut rectangles of approx. 5/8 cm with the ravioli or pizza cutter. Use an ice-cream portioner and place a portion each onto one side of the rectangle. Fold the pastry over and press the sides together with a fork. Put the ravioli onto a baking tray and brush with the egg-yolk. Bake in the oven at 180 C for 25-30 minutes. You can serve them warm or cold.
