Delicious Winter Salad

Mommy always eats salad, my son once said when he was still a small child. Today he is neither small nor a child, he towers over me by more than a head. He is not so tall (195 cm!) because he has eaten salad, he calls greens compost. He doesn’t like it at all. Too bad because a fine winter salad like this is perfect! It must be colorful, have lots of different ingredients and a delicious dressing on top.

I am convinced that my son is so tall because he has eaten too much pasta!!!

Ingredients

  • 3 handfuls Endive Lettuce, cut into strips

  • 1 handful of Baby Spinach, sliced

  • 2 grated Carrots

  • 1/3 chopped Red Cabbage

  • 3 Spring Onions, chopped

  • 150 g soft Feta Cheese

  • Pomegranate seeds

  • 2 Tomatoes

Arrange on a wide platter. First place the endive on the plate as a ring. Top with the spinach. Mix the carrots and cabbage and place on top. Sprinkle over the spring onions. Chop 100 g feta and sprinkle on top. Now add the pomegranate seeds.

Step 3

Cut the tomatoes into small cubes and mix with the chopped 50 g feta. Then place in the middle of the salad. Add the dressing and serve.
