Ein grosser Klassiker der italienischen Küche ist das Spargel Risotto, Risotto agli Asparagi! Fein cremig, mit mildem Geschmack, wer kann da nein sagen!? Einfach, aber raffiniert, macht er sich als Vorspeise oder Hauptspeise immer gut!

Reis ist seit der Renaissance in Italien bekannt und wird vorwiegend in der Poebene angebaut. Die bekanntesten für Risotto geeigneten Sorten sind Arborio, Vialone und Carnaroli. In der italienischen Küche wird Risotto als erster Hauptgang (primo piatto) oder als Beilage zu einem Schmorgericht wie z. B. Risotto alla milanese zu Ossobuco serviert.

Wir lieben ihn! Deshalb nimmt er auch an der Kulinarischen Weltreise von Volkermampft teil, die diesen Monat nach Italien reist.

A great classic of Italian cuisine is asparagus risotto! Delicately creamy, with a mild flavor, who can say no!? Simple but refined, it always makes a good starter or main course! We love it!

Rice has been known in Italy since the Renaissance and is mainly grown in the Po Valley. The best-known varieties suitable for risotto are Arborio, Vialone and Carnaroli. In Italian cuisine, risotto is served as the first main course (primo piatto) or as a side dish to a braised dish such as risotto alla milanese to ossobuco.

That’s why it’s also part of Volkermampft’s Culinary World Tour, which travels to Italy this month.

Risotto agli Asparagi

Für 4 Personen:
500 g weisse Spargeln
350 g Risotto Reis
50 g Butter
1 EL Olivenöl
½ Zwiebel, fein gehackt
2 Knoblauchzehen, gehackt
1.5 L Gemüse Bouillon
30-50 g geriebener Parmesan
Salz und Pfeffer
Paprika
½ Bund Schnittlauch, gehackt
1 Briefchen Saffran

In einem schweren Topf die Zwiebel und die Knoblauchzehen in der Butter und dem Olivenöl glasig braten. Dann den Reis dazu geben und auch den erst glasig braten, dabei oft mit einer Kelle wenden, damit er nicht anbrennt. 2 Suppen Schöpflöffel Brühe dazu geben. Gut verrühren, den Saffran und Schnittlauch dazu mischen und sehr gut würzen.

Die Spargeln in 3-5 cm lange Stücke schneiden und dazu geben. Immer gut umrühren und die Brühe einköcheln lassen, wieder Brühe dazu geben und umrühren etc. bis der Risotto und die Spargeln fast gekocht sind. (das dauert ca. 30-40 Minuten) Nun den geriebenen Käse dazu geben und 20 g Butter. Gut mischen und heiss servieren.

For 4 Persons:
500 g white Asparagus
350 g Risotto Rice
50 g Butter
1 tbsp Olive Oil
½ Onion, finely chopped
2 cloves Garlic, chopped
1.5 L Vegetable Stock
30-50 g grated Parmesan
Salt and Pepper
Paprika
½ bunch Chives, chopped
1 sachet Saffron

In a heavy saucepan, fry the onion and garlic cloves in the butter and olive oil until translucent. Then add the rice and fry that too until translucent first, turning often with a ladle so it doesn’t burn. Add 2 soup ladles of stock. Mix well, add the saffron and chives and season very well.

Cut the asparagus into 3-5 cm long pieces and add them. Always stir well and let the broth simmer down, add broth again and stir etc. repeating, until the risotto and asparagus are almost cooked. (this takes about 30-40 minutes) Now add the grated cheese and 20 g butter. Mix well and serve hot.
