Nachdem ich Haselnüsse gestohlen hatte … ich meine ausgeliehen…. dachte ich, nun habe ich genug, um daraus Haselnuss Sirup zu machen. Das wollte ich schon ewig lange mal machen. Ich habe noch nie sowas ausprobiert, noch habe ich es gut geplant, aber das Resultat ist sehr lecker! Nur ca einen Teelöffel voll in den Kaffee und er schmeckt wunderbar haselnussig! (Anmerkung von Wilma: ich lege ein Bild bei, wo man sieht, wie die Haselnüsse gestohlen werden! Und ich denke, es ist ein steiler Aufstieg von Kuchenbaecker zum Hersteller von Nuss-Sirup! Well done darling!)

After having stolen hazelnuts… I mean borrowed… I thought finally I had enough to make syrup. I’ve always wanted to make some syrup. I never tried anything like this before, nor did I plan it very well, but the outcome was delicious. Just about a teaspoon of the syrup in your coffee and it tastes wonderfully hazelnutty. (Annotation from Wilma: I will show you a picture with the hazelnut thief! And I think, this is a stellar career from baking cakes, to making nut syrup! Well done darling!)

Haselnuss Sirup

Für ca 1 Liter Sirup:
300 g Haselnüsse frisch vom Baum

Die Haselnüsse schälen und im Ofen bei 160 C Grad ca 15 Minuten roesten, auskühlen lassen, dann in einem Küchentuch reiben, damit die Haut abfällt. Dann die Nüsse mit dem Wallholz zerkleinern. 

1 Liter Wasser
500 g Rohrzucker

Unterdessen das Wasser mit dem Zucker aufkochen, dann die zerhackten Nüsse zugeben und kurz sieden lassen. Dann Hitze herunter stellen und alles zusammen ca 45 Minuten lang köcheln lassen, um ca 1/4 der Flüssigkeit zu reduzieren.
Die Flüssigkeit durch ein Sieb abgiessen und den Sirup in eine Glasflasche abfüllen.
1 Teelöffel davon reicht in einer Tasse Kaffee, um dem Kaffee eine haselnussige Note zu geben. 

Die gehackten Nüsse muss man nicht wegwerfen, sondern im Ofen, auf ein Backpapier gestrichen, ca 30 Minuten bei 200 C Grad roesten. Sie werden wunderbar süss und knackig und passen auf Kuchen oder so zum Knabbern.

For approx 1 Liter Syrup:
300 g Hazelnuts fresh from the tree

Peel the hazelnuts and roast them in the oven at 160 C for approx. 15 minutes, let them cool, then rub them in a kitchen towel to remove the peel.
Then chop the nuts into smaller pieces.

1 Liter Water
500 g raw Sugar

Meanwhile bring the water with the sugar to a boil, add the chopped hazelnuts. Let boil for a few minutes, then reduce the heat and let simmer for 45 minutes to reduce 1/4 of the liquid. 
Pour the liquid through a sieve and fill the syrup into a glass bottle. 
1 teaspoon of this syrup into a cup of coffee is enough to give your coffee a wonderful hazelnut flavor. 

You don’t need to through the nuts away, just roast them, spread onto a baking paper in the oven at 200 C for 30 minutes. They are wonderful sweet and perfect for a cake decoration or just like this as snack.
