Danke, Lani!

That I like to bake bread, you may have noticed already. After all, there are 99 entries here on the blog under bread, not only with home-baked breads, but also with bread made dishes. However, I also like to bake after recipes from friends. I found a wonderful bread that appealed to me a lot at LanisLeckerEcke!
I’ve always wanted to use mashed potatoes in bread, just never dared. When I saw her wonderfully fluffy bread, well, it had to try!!! And as a plus, it was baked in a pot, which I love. I gave it a try and swapped out the white flour for whole wheat. The bread turned out wonderfully moist and I have to admit, it couldn’t be easier!!! Thank you, Lani!

For one big loaf:
650 g strong white (or whole-wheat) Flour
15 g Salt
11 g Dried Yeast
400 ml warm Water (if you use whole-wheat flour you might need 450 ml)
250-300 g mashed Potatoes
And this is the way I did it:
Mix the flour with the dried yeast in the bowl of the kitchen machine. Mix the warm water with the salt in another bowl, then add it to the flour while the machine is in motion. Add the mashed potatoes and knead for 5 minutes. Cover the bowl with a towel and let the dough rise for 2-2 1/2 hours.
After letting it rise pout the dough into a ferment basket, I just use a plastic basket. Don’t forget to sprinkle it with a lot of flour or the dough will stick to it!!!! This basket will give the bread some design and keep it round. Heat the oven to 230 C. Heat a heavy pot in it! Pitch the bread onto a baking paper and put it into the hot pot. Cover the pot with a lid. Bake for 30-40 minutes, then uncover and bake another 6-7 minutes. Cool the bread on a wire rack.
