But there is no \u201coriginal\u201d because every housewife has her own recipe.   <br><br>\nIt is impossible to imagine the carnival season and especially the Basel carnival without this soup. Alongside Zibelew\u00e4hie (Onion Tart) and Ch\u00e4sew\u00e4hie, (Cheese Tart) this soup simply belongs on the table! \u201cThere is no Basel carnival without M\u00e4\u00e4lsuppe!\u201d In Basel, flour soup has been eaten on the early morning of the carnival since the 19th century. Here in Zurich, this soup was mainly eaten on New Year&#8217;s Eve and was cooked at midnight!<br><br>\nRumor has it that a gossipy maid forgot the flour in the pan and it turned brown, which gave the soup its color. But as the maid didn&#8217;t want to throw anything away, this is how Basler M\u00e4\u00e4lsuppe was created!  \n        <br><br>\n\t\tSimon is my daughter&#8217;s fianc\u00e9 and he cooked this soup for us at midnight on New Year&#8217;s Eve! Add the flour again. Pour in the stock and bring to the boil, stirring vigorously with a whisk so that no lumps form. Reduce the heat and simmer for approx. 1 hour, stirring occasionally.
