Wo beginne ich, welches Pl\u00e4tzchen mache ich zuerst? Nun, dieses Basler Brunsli h\u00e4lt sich sehr lange, also beginne ich damit! Die Basler Brunsli sind nicht nur in Basel bekannt! Sie sind sehr stark schokoladig und gar nicht suess, sehr speziell! Und es nimmt am Blogevent der <a href=\"https:\/\/volkermampft.de\/feiertagsgerichte-aus-der-ganzen-welt-festliche-rezepte-fuer-jeden-anlass\/\">Kulinarischen Weltreise von Volkermampft<\/a> teil, der diesen Monat Leckereien f\u00fcr die Weihnachtszeit aus der ganzen Welt sucht.\u00a0<\/p>\n<p style=\"text-align: center;\"><strong>Etwas Geschichte:<\/strong><br \/>In der Publikation &#8220;Das s\u00fcsse Basel&#8221; von Eugen A. Meyer ist ein Brunslirezept aus dem Jahre 1750 publiziert. Laut Aussage des Basler Volkskundlers Dominik Wunderlin k\u00f6nnte das Brunsli noch \u00e4lter sein. Eine andere fr\u00fche Erw\u00e4hnung stammt aus dem Z\u00fcrcher Herrschaftsgebiet. In einem Artikel \u00fcber die Ern\u00e4hrung in Winterthur finden wir die Beschreibung der Willkommensmahlzeit f\u00fcr den Pfarrer Hans Rudolf M\u00fcller, die am 30. April 1725 in Winterthur stattfand: Es waren 59 Personen eingeladen und es wurden neben gut 330 Pfund Fleisch auch f\u00fcnf Pfund Brunsli serviert.<\/p>\n<p><em>\u00a0<\/em><\/p>\n<p style=\"text-align: center;\">Das Brunsli wurde fr\u00fcher stark mit Basel in Verbindung gebracht. Im Kochbuchklassiker &#8220;Basler Kochschule&#8221; aus dem Jahre 1908 von Amalie Schneider-Schl\u00f6th, ist das Rezept f\u00fcr das Brunsli mit einem Asterix (*) versehen, ein Zeichen f\u00fcr typische Basler Rezepte.<\/p>\n<p style=\"text-align: center;\">In der Beschreibung \u201eBasler Sitten\u201c, zeitlich in die zweite H\u00e4lfte des 19. Jahrhunderts einzuordnen, werden zu Weihnachten in den B\u00fcrgerh\u00e4usern Brunsli neben Anisbr\u00f6tlein, Haselnussleckerli, Zimtsternen, Hagebuttensch\u00e4umlein, Mail\u00e4nderli, Quittenp\u00e4stli und nat\u00fcrlich Basler Leckerli gebacken. In der Sammlung von Eduard Str\u00fcbin im Staatsarchiv Basel-Landschaft findet man einen weiteren Hinweis auf die Brunslitradition in der Region Basel, genau in Gelterkinden.<\/p>\n<p style=\"text-align: center;\">Eine Frau mit dem Geburtsjahr 1893 erinnert sich daran, dass die Grossmutter an Weihnachten Anisbr\u00f6tli, Brunsli und Mail\u00e4nderli gebacken hat. Brunsli wurden in Basel jedoch nicht nur zur Weihnachtszeit gebacken, sondern auch f\u00fcr andere Festtage wie zum Beispiel Hochzeiten. Where do I start, which cookie do I make first? Well, this Brunsli will keep for a very long time, so I start with that! Basel Brunsli are not only famous in Basel! They are very strong chocolatey and not sweet at all, very special! This cookie takes part in the blog event <a href=\"https:\/\/volkermampft.de\/feiertagsgerichte-aus-der-ganzen-welt-festliche-rezepte-fuer-jeden-anlass\/\">Culinary World Travel from Volkermampft,<\/a> which is looking for delicious Christmas recipes from all over the world.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Some history:<\/strong><\/em><br \/><em>In the publication &#8220;Das s\u00fcsse Basel&#8221; by Eugen A. Meyer, a Brunsli recipe from 1750 is published. According to the Basel folklorist Dominik Wunderlin, the Brunsli could be even older. Another early mention comes from the domain of Zurich. In an article about the food in Winterthur we find the description of the welcome meal for the pastor Hans Rudolf M\u00fcller, which took place on April 30, 1725 in Winterthur: 59 people were invited and besides a good 330 pounds of meat also five pounds of Brunsli were served.<\/em><\/p>\n<p style=\"text-align: center;\"><em>Brunsli used to be strongly associated with Basel. In the classic cookbook &#8220;Basler Kochschule&#8221; from 1908 by Amalie Schneider-Schl\u00f6th, the recipe for the Brunsli is marked with an asterix (*), a sign for typical Basel recipes. In the description &#8220;Basler Sitten&#8221; (Basel customs), which can be dated to the second half of the 19th century, Brunsli are baked at Christmas in the burghers&#8217; houses, along with Anisbr\u00f6tlein (aniseed rolls), Haselnussleckerli (hazelnut treats), Zimtsternen (cinnamon stars), Hagebuttensch\u00e4umlein (rosehip foam), Mail\u00e4nderli (Milanese treats), Quittenp\u00e4stli (quince treats) and, of course, Basler Leckerli (Basel treats). In the collection of Eduard Str\u00fcbin in the State Archives of Basel-Landschaft, one finds another reference to the Brunsli tradition in the Basel region, precisely in Gelterkinden. <\/em><\/p>\n<p style=\"text-align: center;\"><em>A woman with the year of birth 1893 remembers that her grandmother baked anisbr\u00f6tli, Brunsli and Mail\u00e4nderli at Christmas. Brunsli, however, were not only baked at Christmas time in Basel, but also for other holidays such as weddings. (from: Kulinarischeserbe.ch)<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/11\/sli8-683x1024.jpg\" alt=\"Basler Brunsli \" class=\"wp-image-15721\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">Fuer ca 40 St\u00fcck:<\/p>\n<p style=\"text-align: center;\">250 g gemahlene Mandeln<br \/>1\/4 TL Zimt<br \/>1 Prise Nelken Pulver<br \/>150 g Zucker<br \/>1 Prise Salz<br \/>2 EL Kakaopulver<br \/>2 EL Mehl<br \/>2 Eiweiss<br \/>100 g Schwarze Schokolade<br \/>2 TL Kirsch<\/p>\n<p style=\"text-align: center;\">Den Zucker, Salz, Zimt, Nelken Pulver, Mandeln, Kakao und das Mehl zusammen mischen. Die Schokolade reiben und zuf\u00fcgen. Das Eiweiss mit dem Kirsch kurz verklopfen und dann zugeben, alles gut vermischen. Schnell zusammen kneten. Etwas Zucker auf einem Backpapier verstreuen und den Teig darauf ca 4 mm dick auswallen.<\/p>\n<p style=\"text-align: center;\">Mit einem Blumen Ausstecher Pl\u00e4tzchen ausstechen, auf ein mit Backpapier belegtes Backblech geben und 1 Stunde ruhen lassen. Dann im vorgeheizten Ofen bei 200 C Grad 10 Minuten backen. Die Pl\u00e4tzchen sind luftdicht in einer Dose geschlossen ca 4-5 Wochen haltbar.\u00a0<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For approx 40 cookies:<\/em><\/p>\n<p style=\"text-align: center;\"><em>250 g ground Almonds<\/em><br \/><em>1\/4 tsp Cinnamon<\/em><br \/><em>1 pinch of Clove Powder<\/em><br \/><em>150 g Sugar<\/em><br \/><em>1 Pinch of Salt<\/em><br \/><em>2 tbsp Cocoa Powder<\/em><br \/><em>2 tbsp Flour<\/em><br \/><em>2 Egg-whites<\/em><br \/><em>100 g dark Chocolate<\/em><br \/><em>2 tbsp Kirsch (Schnapps)<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix sugar, salt, cinnamon, clove powder, almonds, cocoa and flour together. Grate the chocolate and add. Beat the egg-white with the kirsch together, the egg-white will not be beaten stiff. Add it and knead everything together into a dough. Sprinkle some sugar onto a baking paper and roll the dough out on it at approx 4 mm thickness. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Use a cookie cutter in the shape of a flower and cut out as many cookies as possible. Let rest for 1 hour.
