Dieser Braten ist gef\u00fcllt mit vielen feinen Sachen, die ihn ganz speziell machen. Dann wird er ganz langsam gegart. Dazu gibts ger\u00f6stetes Gem\u00fcse, das braucht keinen grossen Aufwand und eine feine Sauce mit Pilzen. Dazu kann man Pasta, Kartoffelbrei oder Reis servieren, aber nur Gem\u00fcse geht auch. Die F\u00fcllung macht den Braten schon ziemlich schwer und so muss man nicht mehr allzu viel dazu servieren.<\/p>\n<p style=\"text-align: center;\">Da dieser Braten sehr speziell ist, ist er ein perfektes Men\u00fc f\u00fcr die Weihnachtszeit. Man kann alles toll vorbereiten und der Ofen macht die Arbeit. Deshalb nimmt dieses Rezept an der <a href=\"https:\/\/volkermampft.de\/feiertagsgerichte-aus-der-ganzen-welt-festliche-rezepte-fuer-jeden-anlass\/\">Kulinarischen Weltreise von Volkermampft<\/a> teil, diesen Monat servieren wir Euch Feiertagsgerichte aus aller Welt. Mein Braten kommt aus der Schweiz!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Such a stuffed beef roast is really delicious! This roast is stuffed with many fine things that make it very special. Then it is cooked very slowly. It is served with roasted vegetables, which do not require much effort, and a fine sauce with mushrooms. It can be served with pasta, mashed potatoes or rice, but just vegetables will do. The stuffing already makes the roast quite heavy and so you don&#8217;t have to serve too much with it. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Since this roast is very special, it is a perfect menu for the holiday season. You can prepare everything in advance and the oven does the work. That&#8217;s why this recipe is taking part in <a href=\"https:\/\/volkermampft.de\/feiertagsgerichte-aus-der-ganzen-welt-festliche-rezepte-fuer-jeden-anlass\/\">Volkermampft&#8217;s Culinary World Tour,<\/a> this month we&#8217;re serving you holiday dishes from around the world. My roast comes from Switzerland!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/11\/rin9-683x1024.jpg\" alt=\"Gef\u00fcllte Rinderbraten Rolle\" class=\"wp-image-15685\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><strong>F\u00fcr 6 Personen:<\/strong><br \/>1.5 kg Rinder-Rollbraten<br \/>200 g Knoblauch Frischk\u00e4se<br \/>100 g Baumn\u00fcsse, grob gehackt<br \/>2-3 rohe Schweinsbratw\u00fcrste<br \/>100 g Br\u00e4t<br \/>1 Bund Basilikum<br \/>Salz und Pfeffer<br \/>Paprika<br \/>Rosmarin<\/p>\n<p style=\"text-align: center;\"><strong>Gem\u00fcse zum Beispiel:<\/strong><br \/>Bunte Spitzpaprika<br \/>Bohnen<br \/>Karotten<br \/>Fenchel<br \/>Broccoli<\/p>\n<p style=\"text-align: center;\"><strong>Sauce:<\/strong><br \/>1 kleine rote Zwiebel<br \/>2 Knoblauchzehen<br \/>20 g Butter<br \/>100 g getrocknete Steinpilze<br \/>Salz und Pfeffer<br \/>Paprika<br \/>Rosmarin<br \/>Oregano<br \/>50 ml Weisswein<br \/>100 ml Sahne<br \/>evt etwas Speisest\u00e4rke<\/p>\n<p style=\"text-align: center;\">Den Rinderbraten aus dem Netz nehmen oder das Garn entfernen und aufmachen. Er darf ruhig etwas durchzogen sein, denn sonst wird er trocken. Innen- und Aussenseite gut w\u00fcrzen. Die rohen Bratw\u00fcrste von der Haut entfernen und das Fleisch mit dem Knoblauchk\u00e4se, den gehackten Basilikum Bl\u00e4ttern, dem Br\u00e4t und den gehackten Baumn\u00fcssen vermischen. Alles gut w\u00fcrzen. Diese Masse auf den Braten schmieren. Den Braten aufrollen und entweder mit K\u00fcchengarn zusammen binden, oder wie ich, mit speziellen Silikonschn\u00fcren festmachen.<\/p>\n<p style=\"text-align: center;\">Den Braten in eine gefettete Auflaufform oder einen Br\u00e4ter geben und 2 Stunden auf 130 C Grad langsam garen lassen. Dann den Ofen auf 150 C Grad hochstellen und nochmals 1.5 Stunden garen lassen. Das Gem\u00fcse waschen und so schneiden wie gew\u00fcnscht. W\u00e4hrend der letzten 50 Minuten kann man Gem\u00fcse mitr\u00f6sten lassen. Einfach auf ein Blech legen und w\u00fcrzen mit Salz und etwas Oliven\u00f6l.<\/p>\n<p style=\"text-align: center;\">W\u00e4hrenddessen f\u00fcr die Sauce die getrockneten Steinpilze in warmem Wasser einweichen. Die Zwiebel und Knoblauchzehen fein hacken. Butter in einem Topf schmelzen und die Zwiebel und Knoblauchzehen darin weich kochen. Die eingeweichten Pilze kleinschneiden (ich nehme dazu eine K\u00fcchenschere) und zugeben. Das Einweich-Wasser nicht wegwerfen, das ben\u00fctzen wir zum Abl\u00f6schen der Sauce! Nach ein paar Minuten das Einweich-Wasser und den Weisswein zugeben. Alles gut w\u00fcrzen und leicht eink\u00f6cheln lassen. Die Sahne zugeben, gut vermischen und nochmals kurz k\u00f6cheln lassen. Falls die Sauce zu d\u00fcnn ist, mit etwas Speisest\u00e4rke eindicken.<\/p>\n<p style=\"text-align: center;\">Den Braten 5 Minuten ruhen lassen, dann sorgf\u00e4ltig aufschneiden. Mit dem Gem\u00fcse servieren und die Sauce dazu reichen.\u00a0<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><strong>\u200bFor 6 Persons:<\/strong><\/em><br \/><em>1.5 kg Beef Roast<\/em><br \/><em>200 g Garlic Cream Cheese<\/em><br \/><em>100 g Walnuts, chopped coarsely<\/em><br \/><em>2-3 raw Pork Sausages<\/em><br \/><em>100 g Veal Fries<\/em><br \/><em>1 Bunch Basil<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Paprika<\/em><br \/><em>Rosemary<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Vegetables for example:<\/strong><\/em><br \/><em>Variegated pointed peppers<\/em><br \/><em>Beans<\/em><br \/><em>Carrots<\/em><br \/><em>Fennel<\/em><br \/><em>Broccoli<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Sauce:<\/strong><\/em><br \/><em>1 small red Onion<\/em><br \/><em>2 cloves of Garlic<\/em><br \/><em>20 g Butter<\/em><br \/><em>100 g dried Porcini Mushrooms<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Paprika<\/em><br \/><em>Rosemary<\/em><br \/><em>Oregano<\/em><br \/><em>50 ml White Wine<\/em><br \/><em>100 ml Whipping Cream<\/em><br \/><em>maybe some Cornstarch<\/em><\/p>\n<p style=\"text-align: center;\"><em>Take the roast out of the net or the strings. Roll it out so it is flat. If there are some fatty parts let them in the roast, they make the roast more tasty and soft. Season the inside and outside well. Take the meat of the sausages out of their skin. Then mix all ingredients like the cheese, the sausage meat, the veal fries and the chopped walnuts together and season. Smear this onto the roast.\u00a0Roll the roast up again and fix it with some strings (or use silicon strings like me, they are perfect for this) <\/em><\/p>\n<p style=\"text-align: center;\"><em>Put the roast into a greased gratin dish or a roasting pan and roast in the oven at 130 C for 2 hours. Then turn the heat up to 150 C and roast for another 1.5 hours. Wash the vegetables and cut as desired. During the last 50 minutes you can roast the vegetables. Just put them on a tray and season with salt and a little olive oil.\u00a0<\/em><br \/><em>Meanwhile for the sauce, soak the dried mushrooms in warm water. \u200bChop the onion and garlic finely. Melt the butter in a small pan and fry the onion and garlic until soft. Cut the soaked mushrooms smaller, I do this with a kitchen scissor, and add them to the pan. Don&#8217;t throw the water from the mushrooms, we need it! After a few minutes add the mushroom water and the white wine. Season well. Let simmer and reduce for a while. Add the whipping cream and let cook for another few minutes. If the sauce is too runny add some cornstarch. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Let the roast sit for 5 minutes, then cut slices.
