Der Martinstag ist in Mitteleuropa von zahlreichen Br\u00e4uchen gepr\u00e4gt, darunter das Martinsgansessen, der Martinszug und das Martinssingen. Ich habe fr\u00fcher mit rotem, s\u00fcssem Martin \u00f6fters gekocht, Vermouth schmeckt gut. Im Moment erhalte ich den aber nicht, und so habe ich den weissen, s\u00fcssen Martini ausprobiert.<\/p>\n<p style=\"text-align: center;\">Es geht auch, aber der Rote hat einen intensiveren Geschmack. Ich koche gerne Huhn in diesem Wermut, denn das Fleisch nimmt jeden Geschmack an. So habe ich schnell ein feines Gericht gezaubert!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Perfect to todays Saint Martin&#8221;s day! Traditions include feasting on &#8216;Martinmas goose&#8217; or &#8216;Martinmas beef&#8217;, drinking the first wine of the season, and\u00a0mumming. In some German and Dutch-speaking towns, there are processions of children with lanterns, sometimes led by a horseman representing St Martin. I used to cook with red, sweet Martini quite often, Vermouth tastes good. <\/em><em>But at the moment I don&#8217;t get that one, so I tried the white, sweet Martini. <\/em><\/p>\n<p style=\"text-align: center;\"><em>It works too, but the red has a more intense flavor. I like to cook chicken in this vermouth because the meat takes on any flavor. So, I quickly conjured up a fine dish!<\/em><\/p>\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2023\/01\/mar09.jpg\" alt=\"Martini Chicken mit Auberginen\" class=\"wp-image-70175\"\/><\/figure>\n\n\n<p style=\"text-align: center;\">F\u00fcr 4 Personen:<br>3 H\u00fchnerbr\u00fcste in W\u00fcrfel geschnitten (ich musste meine von den Knochen schneiden)<br>4 Knoblauchzehen, grob gehackt<br>1 rote Zwiebel, grob gehackt<br>50 g Speck, gehackt<br>2 lange, d\u00fcnne Auberginen, in R\u00e4dchen geschnitten<br>Salz und Pfeffer<br>Oregano<br>Paprika<br>Chili<br>Rosmarin<br>100 ml weisser, s\u00fcsser Wermut<br>50 ml Sahne<br>Evtl. etwas Speisest\u00e4rke<\/p>\n<p style=\"text-align: center;\">Den Speck mit dem Knoblauch und der Zwiebel gut anbraten, dann das H\u00fchnerfleisch dazu geben. Alles gut w\u00fcrzen die Auberginen zugeben und durchbraten lassen. Dann mit dem Wermut abl\u00f6schen. Kurz eink\u00f6cheln lassen, dann die Sahne zugeben und evtl. mit Speisest\u00e4rke eindicken. Ich habe mein Gericht mit Spaghetti serviert, Kartoffelbrei oder <a href=\"https:\/\/pane-bistecca.com\/2018\/11\/13\/spaetzli-chnoepfli-swiss-pasta-dumplings\/\">Sp\u00e4tzli<\/a> passen aber auch wunderbar.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Serves 4:<\/em><br><em>3 Chicken Breasts cut into cubes (I had to cut mine off the bones)<\/em><br><em>4 Garlic Cloves, roughly chopped<\/em><br><em>1 red Onion, roughly chopped<\/em><br><em>50 g Bacon, chopped<\/em><br><em>2 long, thin Eggplants, cut into wheels<\/em><br><em>Salt and Pepper<\/em><br><em>Oregano<\/em><br><em>Paprika<\/em><br><em>Chili<\/em><br><em>Rosemary<\/em><br><em>100 ml white sweet Vermouth<\/em><br><em>50 ml Cream<\/em><br><em>Some Cornstarch if needed<\/em><\/p>\n<p style=\"text-align: center;\"><em>Fry the bacon well with the garlic and onion, then add the chicken. Season well, add the eggplants and fry until cooked through. Then deglaze with the vermouth. Let it simmer briefly, then add the cream and thicken with cornstarch if necessary.
