Ich habe lange rumprobiert, aber meine Rouladen sind immer zerbrochen. Nach mehreren Versuchen, habe ich nun DAS Rezept erarbeitet, das eine luftige Bisquitmasse macht, dass die Roulade elastisch bleibt. Ich habe diese Roulade mit Erdbeeren und Mascarpone gef\u00fcllt und sie wurde wirklich sehr gut. Man kann selbstverst\u00e4ndlich auch andere Beeren verwenden, oder die Roulade mit selbstgemachter Konfit\u00fcre f\u00fcllen, wie es meine Schwiegermama immer machte.\u00a0<\/p>\n<p style=\"text-align: center;\"><em>************<\/em><\/p>\n<p style=\"text-align: center;\"><em>Roulades are quick to make and fit on any coffee table! I tried for a long time, but my roulades always broke. After several attempts, I have now worked out THE recipe that makes an airy sponge mixture that keeps the roulade elastic. I filled this roulade with strawberries and mascarpone and it turned out really well. Of course, you can also use other berries or fill the roulade with homemade jam, as my mother-in-law used to do.\u00a0<\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/08\/rou8-1024x683.jpg\" alt=\"\" class=\"wp-image-14756\"\/><\/figure>\n\n\n<p style=\"text-align: center;\"><strong>Fuer den Rouladenteig:<\/strong><br \/>5 Eigelb<br \/>4\u00a0Eiweiss<br \/>3 EL kaltes Wasser<br \/>1 Prise Salz<br \/>100 g Zucker<br \/>1 TL Vanillezucker<br \/>75 g Mehl<br \/>75 g Speisest\u00e4rke<br \/>1 El Oel<br \/>1 gestrichener TL Backpulver<\/p>\n<p style=\"text-align: center;\">Das Eiweiss mit dem Salz und dem kalten Wasser steif schlagen, am Schluss den Zucker und den Vanillezucker zugeben, weiter schlagen bis die Masse gl\u00e4nzt. Nun die Eigelbe und das Oel unterziehen. Es ist ein Eigelb mehr als Eiweisse, weil es den Teig elastischer macht, genauso ist das Oel hilfreich, dass der Teig weich und elastisch bleibt. Das Mehl mit der Speisest\u00fccke und dem Backpulver mischen und unterziehen. Die Teigmasse auf ein mit Backpapier ausgelegtes Backblech giessen und glatt streichen.<br \/>Im Ofen bei 200 C 10-13 Minuten goldgelb backen.<br \/>Nach dem Backen sofort auf ein K\u00fcchentuch, das mit Zucker bestreut ist, auskippen und das Backpapier sorgf\u00e4ltig abziehen. Mit dem K\u00fcchentuch aufrollen, einfach das Tuch auf einer Seite hochziehen und die Roulade rollt sich fast von selber, und im K\u00fcchentuch drin aufgerollt ausk\u00fchlen lassen.<\/p>\n<p style=\"text-align: center;\"><b>Fuer die F\u00fcllung:<\/b><br \/>250 g Erdbeeren<br \/>200 g Mascarpone\u00a0<\/p>\n<p style=\"text-align: center;\">Unterdessen die Erdbeeren kleinschneiden. Den Mascarpone aufschlagen und die Erdbeeren darunter ziehen. Ich habe keinen Zucker zugegeben, man kann aber welchen zugeben.\u00a0\u00a0<\/p>\n<p style=\"text-align: center;\">Sobald die Roulade ausgek\u00fchlt ist, sorgf\u00e4ltig \u00f6ffnen, mit der F\u00fcllung bestreichen und sorgf\u00e4ltig wieder zusammen rollen. Ich habe sie in Folie gelegt und im K\u00fchlschrank durchk\u00fchlen lassen, dann auf eine Cakeplatte gelegt und mit Puderzucker bestreut.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><strong>For the Roulade Dough:<\/strong><\/em><br \/><em>5 Egg yolks<\/em><br \/><em>4 Egg whites<\/em><br \/><em>3 tbsp cold Water<\/em><br \/><em>1 pinch of Salt<\/em><br \/><em>100 g Sugar<\/em><br \/><em>1 tsp Vanilla Sugar<\/em><br \/><em>75 g Flour<\/em><br \/><em>75 g Cornstarch<\/em><br \/><em>1 tbsp Oil<\/em><br \/><em>1 level tsp Baking Powder<\/em><\/p>\n<p style=\"text-align: center;\"><em>Beat the egg whites with the salt and cold water until stiff, then add the sugar and vanilla sugar and continue beating until the mixture is glossy. Now fold in the egg yolks and the oil. I use 1 egg yolks more than egg whites because they make the dough more elastic, and the oil also helps to keep the dough soft and elastic. Mix the flour with the cornstarch and the baking powder and fold it in. Pour the dough mixture onto a baking tray lined with baking paper and smooth it out.<\/em><br \/><em>Bake in the oven at 200 C for 10-13 minutes until golden.<\/em><br \/><em>After baking, immediately tip out onto a kitchen towel sprinkled with sugar and carefully peel off the baking paper. Roll up with the kitchen towel, just pull up the towel on one side and the roulade will almost roll itself, and leave to cool rolled up in the kitchen towel.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the filling:<\/strong><\/em><br \/><em>250 g Strawberries<\/em><br \/><em>200 g Mascarpone\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>Meanwhile, chop the strawberries. Whip the mascarpone and fold in the strawberries. I did not add sugar, but you can add some.\u00a0\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>Once the roulade has cooled, carefully open it, spread with the filling and carefully roll it up again.
