Das Original ist mit Kalbfleisch gemacht, deshalb heisst es &#8220;Vitello Tonnato&#8221;, aber hier in Asien kriegt man ganz schlecht Kalbfleisch. Ich mache es deshalb auch mit Trutenbrust, H\u00fchnerbrust, Schweinefleisch oder gar mit Rindfleisch. Es schmeckt jedesmal gut!&nbsp;<br>Ich mag es ganz besonders gerne mit dem Trutenfleisch, das passt wunderbar und ist sehr mild, so dass die Sauce voll zur Geltung kommt! Ich finde dies immer noch eine der besten italienischen Vorspeisen!!! Deshalb nimmt sie auch an der <a href=\"https:\/\/volkermampft.de\/gerichte-gegen-die-hitze-die-besten-rezepte-aus-der-ganzen-welt\/\">Kulinarischen Weltreise von Volkermampft<\/a> teil, die diesen Monat Gerichte gegen die Hitze aus aller Welt sucht!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>I deliberately write &#8220;Carne Tonnata&#8221; in the title because this recipe can be made with all kinds of meat. The original is made with veal, which is why it is called &#8220;Vitello Tonnato&#8221;, but here in Asia it is very difficult to get veal. I therefore also make it with turkey breast, chicken breast, pork or even beef. It tastes good every time!&nbsp;<\/em><br><em>I especially like it with the turkey meat, it fits wonderfully and is very mild, so the sauce really comes into its own! I still think this is one of the best Italian starters!!! That&#8217;s why it&#8217;s also taking part in <a href=\"https:\/\/volkermampft.de\/gerichte-gegen-die-hitze-die-besten-rezepte-aus-der-ganzen-welt\/\">Volkermampft&#8217;s Culinary World Tour<\/a>, which is looking for dishes to beat the heat from around the world this month!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/08\/ton11-647x1024.jpg\" alt=\"Carne Tonnata besser bekannt als Vitello Tonnato\" class=\"wp-image-14739\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><strong>Fuer 6 Personen:<\/strong><br>Ca. 800 g Kalbsbraten fertig gekocht (oder 800 g Truten Brust, Schweinebraten, Rinderbraten) ganz d\u00fcnn aufgeschnitten&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong>Oder:<\/strong><br>2 St\u00fcck Truten Brust ca 800-1000 g <br>1 Zwiebel, grob gehackt<br>1 Karotte, grob gehackt<br>1-2 L Br\u00fche<br>Schwarzer Pfeffer<\/p>\n<p style=\"text-align: center;\">Die Zutaten ausser der Br\u00fche in einen schweren Topf geben und mit der Br\u00fche so weit auff\u00fcllen, dass das Fleisch bedeckt ist. Nun aufkochen, dann die Hitze reduzieren und 1 Stunde k\u00f6cheln lassen. Je nach Gr\u00f6sse der Br\u00fcste muss man l\u00e4nger oder weniger lang kochen lassen. (Kerntemperatur 80-85 C Grad) Das Fleisch herausnehmen und abk\u00fchlen lassen, dann mindestens 2 Stunden im K\u00fchlschrank lagern. Mit der Schneidemaschine in d\u00fcnne Scheiben schneiden.<\/p>\n<p style=\"text-align: center;\"><strong>Fuer die Sauce:<br><\/strong>1 Dose Sardellen (ca 8-10 Filets) (ich nehme 2 Dosen)<br>2 Dosen Thunfisch (je 220 g ) abgegossen<br>100 g Mayonnaise oder mehr (ich ben\u00fctze Miracle Whip Light)<br>Etwas Pfeffer und Salz<br>1 EL Zitronensaft<\/p>\n<p style=\"text-align: center;\">Die Zutaten zur Sauce im Becher vermischen und p\u00fcrieren. Einen Teil des Fleisches auf einem Teller anrichten. Nun etwas Sauce \u00fcber das Fleisch streichen, wieder eine Lage Fleisch darauf legen, nochmals mit Sauce bedecken und mit Kapern oder Zitronenscheiben dekorieren und servieren. Unbedingt k\u00fchl stellen, falls es vorbereitet wird. Ich empfehle viel Sauce zu machen, denn das Fleisch alleine hat nicht viel Geschmack! 2. Variante: Die Sauce auf einen Teller streichen und das Fleisch darauf geben. Den Rest der Sauce in einen Spritzbeutel f\u00fcllen und auf dem Teller sch\u00f6n aufspritzen.&nbsp;<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><strong>For 6 People:<\/strong><\/em><br><em>Approx. 800 g Roast Veal ready cooked (or 800 g Turkey breast, roast Pork, roast Beef) cut very thinly.&nbsp;<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Or:<\/strong><\/em><br><em>2 pieces Turkey Breast approx. 800-1000 g <\/em><br><em>1 Onion, coarsely chopped<\/em><br><em>1 Carrot, coarsely chopped<\/em><br><em>1-2 L Broth<\/em><br><em>Black Pepper<\/em><\/p>\n<p style=\"text-align: center;\"><em>Put the ingredients except the stock in a heavy saucepan and fill up with the stock until the meat is covered. Now bring to the boil, then reduce the heat and simmer for 1 hour. Depending on the size of the breasts, you may need to simmer for longer or less time. (Core temperature 80-85 C degrees) Remove the meat and allow to cool, then place in the fridge for at least 2 hours. Cut into thin slices with a slicer.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the sauce:<\/strong><\/em><br><em>1 tin of Anchovies (approx. 8-10 fillets) (I use 2 tins).<\/em><br><em>2 cans of Tuna (220 g each) drained<\/em><br><em>100 g Mayonnaise or more (I use Miracle Whip Light)<\/em><br><em>Some Pepper and Salt<\/em><br><em>1 tbsp Lemon Juice<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix the ingredients for the sauce in a mug and puree. Arrange some of the meat on a plate. Now spread some sauce over the meat, place another layer of meat on top, cover again with sauce and decorate with capers or lemon slices and serve. Be sure to refrigerate if it is being prepared. I recommend making lots of sauce, because the meat alone doesn&#8217;t have much flavor! 2nd variation: Spread the sauce on a plate and place the meat on top.
