Urspr\u00fcnglich stammt sie aus der r\u00f6mischen K\u00fcche (deshalb italienisch <em>alla romana<\/em>), bzw. im\u00a0r\u00f6mischen Dialekt:\u00a0<em>Salt\u2019 im bocca!<\/em> (\u201eSpring in den Mund!\u201c), breitete sich jedoch in ganz Italien aus. Normalerweise werden sie mit Kalbfleisch gemacht, aber hier ist gutes Kalbfleisch, das man auch bezahlen kann, kaum erh\u00e4ltlich.\u00a0<br \/>Es geht aber auch ganz gut mit Schweinefleisch. Man sollte sie aber sehr gut flach klopfen, ich mache das zwischen 2 Lagen Klarsichtfolie. Diese Saltimbocca sind sehr schnell gekocht und schmecken sehr gut! Natuerlich nimmt dieses Rezept an der <a href=\"https:\/\/volkermampft.de\/klassiker-der-italienischen-kueche-und-unbekannte-rezepte-aus-italien\/\">Kulinarischen Weltreise von Volkermampft<\/a> teil, die diesen Monat nach Italien reist.\u00a0<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Saltimbocca are very classic cutlets from Roman cuisine, with sage and raw ham, very well known in Italian cuisine. Originally from Roman cuisine (hence Italian alla romana), or in Roman dialect: Salt&#8217; in bocca! (&#8220;Jump in the mouth!&#8221;) but spread throughout Italy. Normally they are made with veal, but here good veal that you can pay for is hard to come by. <\/em><\/p>\n<p style=\"text-align: center;\"><em>They can also be made with pork. You should beat them very flat, I do it between 2 layers of cling film. These saltimbocca are cooked very quickly and taste very good! of course, this recipe takes part in the <a href=\"https:\/\/volkermampft.de\/klassiker-der-italienischen-kueche-und-unbekannte-rezepte-aus-italien\/\">culinary world travel of Volkermampft,<\/a> which travels to Italy this month.\u00a0<\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/06\/salt9-1024x683.jpg\" alt=\"Saltimbocca di Maiale\" class=\"wp-image-14141\"\/><\/figure>\n\n\n<p style=\"text-align: center;\">Fuer 2 Personen:<br>4 Schweins Pl\u00e4tzchen<br>4 Scheiben Rohschinken<br>4 Bl\u00e4tter Salbei<br>4 Zahnstocher<br>Salz und Pfeffer<br>Paprika<br>20 g Butter&nbsp;<br>etwas Oliven\u00f6l<\/p>\n<p style=\"text-align: center;\">Die Schweins Pl\u00e4tzchen zwischen zwei Klarsichtfolien flach klopfen, sie werden mindestens um 1\/3 gr\u00f6sser. Dann alle gut w\u00fcrzen. 1 Scheibe Rohschinken auf jedes der Fleischst\u00fccke geben, 1 Salbeiblatt darauf legen und mit einem Zahnstocher feststecken.&nbsp;<br>Die Butter mit etwas Oliven\u00f6l in einer Bratpfanne erhitzen und die Fleischst\u00fccke mit dem Schinken nach unten erst 2 Minuten braten, dann wenden und auf der Fleischseite durchbraten. Auf eine Platte geben.<br>Man kann nun den Bratenfond mit etwas Weisswein oder Marsala aufl\u00f6sen und das als Sauce servieren. Heiss servieren. Dazu passt Risotto hervorragend!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 2 Persons:<\/em><br><em>4 Pork Schnitzel<\/em><br><em>4 Slices of raw Ham<\/em><br><em>4 Leaves of Sage<\/em><br><em>4 Toothpicks<\/em><br><em>Salt and Pepper<\/em><br><em>Paprika<\/em><br><em>20 g Butter&nbsp;<\/em><br><em>some Olive Oil<\/em><\/p>\n<p style=\"text-align: center;\"><em>Flatten the schnitzel between two layers of cling-foil. They will grow to about 1\/3 more in size. Season them well. Now put one slice of raw ham on top of each schnitzel and one leave of sage. Fix it with a toothpick.&nbsp;<\/em><br><em>Heat the butter and a little oil in a frying pan and fry the meat first with the ham side down for 2 minutes, then turn them over and fry well until cooked. Put them on a plate. You can add some good white wine or marsala to the pan and use this a s a sauce. Serve hot.
