Sie werden zu allen M\u00f6glichen Speisen serviert und oft mit Paratha, dem Fladenbrot serviert. Jede indische Familie hat seine eigenen Rezepte dazu und sie unterscheiden sich auch je nachdem, ob sie aus dem Norden oder S\u00fcden Indiens stammen. Das Wort Achaar ist Hindu, f\u00fcr Eingelegtes, aber es stammt original aus Persien. \u0100ch\u0101r heisst ganz genau Gesalzenes, Eingelegtes, egal ob Frucht oder Gem\u00fcse. Die wohl bedeutendsten Zutaten sind in Indien Limetten, Zitronen, Mangos, Ingwer und Auberginen, aber ganz wichtig dazu, sind die Chillies oder Chili Pulver. Mein Achaar ist aus Aam (Mango) gemacht und geht unglaublich schnell!<\/p>\n<p style=\"text-align: center;\">Diese Mangos passen nicht nur zu indischen Speisen, sie sind toll auch zu Gegrilltem, zum Raclette oder zu einer Fleisch- und K\u00e4se Platte!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Achaar are pickles made with fruits or vegetables, well known in the Indian kitchen. They are served to all dishes and often eaten with Paratha, the Indian flatbread.\u00a0 Each Indian family has their own recipes, and they are also different if they originate from the south or north of India. The word Achaar is Hindi, for Pickles, but it originates from Persia. \u0100ch\u0101r means salted, pickled, made with fruits or vegetables. The best-known ingredients in India are limes, lemons, mangos, ginger, and eggplants, but very important is the addition of chili or chili powder. My Achaar is made with Aam (mangos) and is extremely easy.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>These pickles are not just good with Indian food, try them with grilled food, to Raclette or just to a cold cut and cheese plate!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/03\/man7-683x1024.jpg\" alt=\"Aam Ka Achaar \u2013 Indian Mango Pickles\" class=\"wp-image-13519\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr 2 Gl\u00e4ser:<br>2 grosse halbreife Mangos<br>1 TL Kurkuma<br>3 EL Fenchel Samen<br>3 EL Kreuzk\u00fcmmel Samen<br>2 EL Chili Pulver<br>1 EL Salz<br>4-5 EL Oliven\u00f6l (eigentlich m\u00fcsste man Senf\u00f6l ben\u00fctzen, aber das ist nicht \u00fcberall erh\u00e4ltlich)<\/p>\n<p style=\"text-align: center;\">Die Mangos in l\u00e4ngliche Streifen schneiden und in eine Sch\u00fcssel geben. Mit dem Salz mischen und ca. 1 Stunde stehen lassen, dann auf einem K\u00fcchenpapier abtrocknen. Die K\u00fcmmel- und Fenchel Samen in einer trockenen Pfanne r\u00f6sten. Dann mit den Mangos mischen. Das Kurkuma- und Chili Pulver dazu mischen, dann das Oel dazu geben. In Gl\u00e4ser abf\u00fcllen und soviel Oliven\u00f6l dazu giessen, bis die Fruchtstreifen bedeck sind. Man kann die Mango Pickles so im K\u00fchlschrank ca 2 Wochen aufbewahren. Sie passen logischerweise zu allen indischen Speisen, aber auch wunderbar zu allen Fleisch- und Fischwaren.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 2 Jars:<\/em><br><em>2 big, half-ripe Mangos<\/em><br><em>1 tsp Turmeric<\/em><br><em>3 tbsp Fennel Seeds<\/em><br><em>3 tbsp Cumin Seeds<\/em><br><em>2 tbsp Chili Powder<\/em><br><em>1 tbsp Salt<\/em><br><em>4-5 tbsp Olive Oil (actually, you should use mustard oil, but this is not available all over the world)<\/em><\/p>\n<p style=\"text-align: center;\"><em>Cut the mangos into long stripes and put them into a bowl. Mix them with the salt and let rest for 1 hour. Then dry them on kitchen papers. <\/em><em>Roast the cumin and fennel seeds in a flat pan. Then mix them with the mangos. Add the turmeric and chili powder and add the oil. Fill this into jars and add as much oil to cover the fruits. You can keep the pickles for up to 2 weeks in the fridge.
