Und der Vorteil ist, dass man genau weiss, was drin ist. Keine Haltbarkeitsmittel, keine Farbe, keine Chemie. Und ich finde, es ist sehr wichtig, heute genau auf solche Dinge zu achten. Man weiss ja gar nicht mehr, wieviel Chemie man unbewusst zu sich nimmt.<\/p>\n<p style=\"text-align: center;\">Zum Beispiel werden \u00c4pfel, bevor sie das ganze Jahr durch auf den Markt kommen, geschwefelt. So sehen sie wie frisch gepfl\u00fcckt aus. Doch wer hat schon frisch gepfl\u00fcckte \u00c4pfel in Fr\u00fchling? Eiern werden Farbe zugemischt, damit das Eigelb sch\u00f6n gelb ist. Bei gekochtem Schinken wird oft Wasser zugemischt, um das Gewicht der Verkaufsware zu erh\u00f6hen. Ich bin sicher, Ihr habt alle schon von den E-Nummern geh\u00f6rt, die oft den Esswaren zugesetzt werden. Nicht alle sind wirklich gesund. Dar\u00fcber k\u00f6nnte man noch stundenlang schreiben, Ihr k\u00f6nnt auch ruhig mal bei <a href=\"https:\/\/pane-bistecca.com\/category\/wirrettenwaszurettenist\/\">#wirrettenwaszurettenist<\/a> vorbeischauen, da wird eben richtig gekocht, was man so schnell fertig kaufen kann. Aber ich will Euch ja eigentlich \u201cnur\u201d ein P\u00e2t\u00e9 bringen, das recht einfach herzustellen ist. Ich habe danach die Reste portioniert und eingefroren. Das kann man sehr gut damit machen.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>I like to serve homemade p\u00e2t\u00e9 at my parties.\u00a0 Homemade just tastes so much better than store-bought. And the advantage is that you know exactly what&#8217;s in it. No preservatives, no colour, no chemicals. And I think it&#8217;s very important to pay attention to these things today. You don&#8217;t know any more how many chemicals you unconsciously consume.<\/em><\/p>\n<p style=\"text-align: center;\"><em>For example, apples are sulphurated before they come onto the market throughout the year. This makes them look like they have been freshly picked. But who has freshly picked apples in spring? Eggs have colour added to them so that the yolk is nice and yellow. Water is often added to cooked ham to increase the weight of the product for sale. I&#8217;m sure you&#8217;ve all heard about the E-numbers that are often added to edibles. Not all of them are really healthy. I could write about this for hours, you can also visit #wirrettenwaszurettenist, where we really cook what you can buy so quickly. But I really &#8220;only&#8221; want to bring you a p\u00e2t\u00e9 that is quite easy to make. Afterwards, I portioned the leftovers and froze them. You can do that very well with it.<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/03\/pat17-683x1024.jpg\" alt=\"H\u00fchnerleber- P\u00e2t\u00e9\" class=\"wp-image-13476\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr eine Cake Glas- oder Terrinenform:<br>500 g H\u00fchnerleber<br>150 g Butter<br>1 Knoblauchzehe, fein gehackt<br>\u00bd Zwiebel, fein gehackt<br>Frischen Thymian<br>Lorbeer Bl\u00e4tter<br>2 EL Cognac<br>Salz und Pfeffer<br>Etwas Muskatnuss<br>Nochmals 150 g Butter<\/p>\n<p style=\"text-align: center;\">Butter kl\u00e4ren: 150 g Butter in einem kleinen Topf langsam schmelzen und so lange kochen lassen, bis die Butter sich trennt. Die oben auf der Oberfl\u00e4che entstehenden weissen Blasen entfernen, sobald sich auf dem Boden kleine schwarze Punkte bilden, ist die Butter gekl\u00e4rt. Am Besten durch einen Kaffeefilter giessen, damit der Schaum nicht dabei bleibt.<\/p>\n<p style=\"text-align: center;\">F\u00fcr das P\u00e2t\u00e9: Die H\u00fchnerleber von allen \u201cF\u00e4den\u201d und Verschmutzungen s\u00e4ubern. Gut waschen und auf K\u00fcchenpapier trocknen. 20 g Butter in einer flachen Pfanne erhitzen und die gehackten Knoblauchzehen und die gehackte Zwiebel darin ca. 5 Minuten lang weich kochen. Die Leberchen und den Thymian zugeben, leicht braten lassen, dann den Cognac und 50 g Butter. Gut mischen und die Butter schmelzen lassen. Sobald die Leberchen gekocht sind, (bitte nicht \u00fcberkochen, bis sie gummig sind!) alles in einen Blender giessen. Die restliche Butter zugeben und mit Salz und Pfeffer abschmecken. Alles gut p\u00fcrieren!<br>Das richtig weich p\u00fcrierte P\u00e2t\u00e9 in eine Terrinenform, oder wie ich, in eine gl\u00e4serne Cakeform giessen, leicht abk\u00fchlen lassen, ca. 10 Minuten, dann die gekl\u00e4rte Butter dar\u00fcber giessen. Mit den Loorbeer Bl\u00e4ttern dekorieren und total ausk\u00fchlen lassen, dann \u00fcber Nacht mit Klarsichtfolie bedeck ganz durchk\u00fchlen lassen. <br>Das P\u00e2t\u00e9 h\u00e4lt sich mehrere Tage im K\u00fchlschrank, da die gekl\u00e4rte Butter wie eine Isolierung wirkt. Wenn das P\u00e2t\u00e9 angebraucht ist, entweder in kleine Gl\u00e4ser abf\u00fcllen und gut verschliessen, oder in Tubberware verschlossen im Tiefk\u00fchlfach lagern. <br>Zum Servieren kann man Scheiben davon abschneiden und auf einem sch\u00f6nen Teller servieren, oder man kann das P\u00e2t\u00e9 kurz durchr\u00fchren und in einen Spritzbeutel f\u00fcllen, dann damit R\u00f6schen auf Toast, Gurken, in Salatbl\u00e4tter, in Pastetchen oder vieles mehr spritzen. <\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For a cake jar or tureen mould:<\/em><br><em>500 g chicken liver<\/em><br><em>150 g butter<\/em><br><em>1 clove of garlic, finely chopped<\/em><br><em>\u00bd onion, finely chopped<\/em><br><em>Fresh thyme<\/em><br><em>Bay leaves<\/em><br><em>2 tbsp cognac<\/em><br><em>Salt and pepper<\/em><br><em>A little nutmeg<\/em><br><em>Another 150 g butter<\/em><\/p>\n<p style=\"text-align: center;\"><em>Clarify the butter: Melt 150 g butter slowly in a small saucepan and cook until the butter separates. Remove the white bubbles that form on the top. As soon as small black dots form on the bottom, the butter is clarified. It is best to pour through a coffee filter so that the foam does not remain.<\/em><\/p>\n<p style=\"text-align: center;\"><em>For the p\u00e2t\u00e9: Clean the chicken livers of all &#8220;strings&#8221; and dirt. Wash well and dry on kitchen paper. Heat 20 g butter in a shallow pan and cook the chopped garlic cloves and chopped onion in it for about 5 minutes until soft. Add the livers and thyme, cook gently, then add the cognac and 50 g butter. Mix well and let the butter melt. Once the livers are cooked (please do not overcook until they are rubbery!) pour everything into a blender. Add the remaining butter and season with salt and pepper. Puree everything well!<\/em><br><em>Pour the really smooth pureed p\u00e2t\u00e9 into a terrine mould, or like me, into a glass cake tin, leave to cool slightly, about 10 minutes, then pour the clarified butter over. Decorate with the laurel leaves and leave to cool completely, then cover with cling film and leave to cool overnight.<\/em><br><em>The p\u00e2t\u00e9 will keep for several days in the fridge as the clarified butter acts as an insulator.
