Egal wie <a href=\"https:\/\/pane-bistecca.com\/2019\/01\/31\/wuerzige-auberginen-sugandhita-ri%e1%b9%85ga%e1%b9%87a-gujarati-india\/\">gekocht<\/a>, als Involtini di Melanzane, gegrillt oder <a href=\"https:\/\/pane-bistecca.com\/2021\/05\/08\/scharfe-eingelegte-auberginen-spicy-pickled-eggplants\/\">eingelegt<\/a>, als <a href=\"https:\/\/pane-bistecca.com\/2020\/02\/14\/auberginen-salat-eggplant-salad\/\">Salat<\/a>, als <a href=\"https:\/\/pane-bistecca.com\/2019\/07\/05\/mirza-ghazemi-persian-eggplant-dip\/\">Dip<\/a> oder gar <a href=\"https:\/\/pane-bistecca.com\/2019\/12\/05\/yu-xiang-qie-zi-sichuan-eggplants-nach-fisch-duftende-auberginen\/\">chinesisch<\/a>, ich esse Tonnen davon! Jeden Tag, wenn&#8217;s denn m\u00f6glich w\u00e4re! Eines meiner Lieblingsrezepte ist von meiner Mama, die Italienerin war. Damals, als wir klein waren, gab es in der Schweiz keine oder kaum Auberginen, sie waren nicht bekannt. Aber bei meiner Nonna im Garten wuchsen sie wie Unkraut. Wir assen unglaublich viele davon und konnten nie genug kriegen. Dies ist <a href=\"https:\/\/pane-bistecca.com\/2021\/08\/06\/melanzane-fritte-fried-eggplants-nonnas-recipe\/\">meiner Mutter&#8217;s spezial Rezept.<\/a>\u00a0<\/p>\n<p style=\"text-align: center;\">Und ein weiteres Lieblingsrezept, ist dieses Auberginengericht von Ariane von <a href=\"http:\/\/tradolceedamaro.blogspot.it\/\">Tra dolce ed amaro.<\/a> Das schmeckt so gut, dass ich es ganz alleine f\u00fcr mich will! Ariane hat ganz lange in Rom gewohnt und schreibt dar\u00fcber in ihrem Blog. Sie postet vor allem ganz traditionelle Rezepte aus Italien mit viel Geschichte dahinter. Es ist eine Freude, dort zu lesen! No matter how <a href=\"https:\/\/pane-bistecca.com\/2019\/01\/31\/wuerzige-auberginen-sugandhita-ri%e1%b9%85ga%e1%b9%87a-gujarati-india\/\">cooked<\/a>, grilled or <a href=\"https:\/\/pane-bistecca.com\/2021\/05\/08\/scharfe-eingelegte-auberginen-spicy-pickled-eggplants\/\">pickled<\/a>, as a <a href=\"https:\/\/pane-bistecca.com\/2020\/02\/14\/auberginen-salat-eggplant-salad\/\">salad,<\/a> a <a href=\"https:\/\/pane-bistecca.com\/2019\/07\/05\/mirza-ghazemi-persian-eggplant-dip\/\">dip<\/a> or even <a href=\"https:\/\/pane-bistecca.com\/2019\/12\/05\/yu-xiang-qie-zi-sichuan-eggplants-nach-fisch-duftende-auberginen\/\">Chinese<\/a>, I eat tons of them! Every day, if only it were possible! One of my favourite recipes is from my mum, who was Italian. Back then, when we were little, there were no or hardly any aubergines in Switzerland, they weren&#8217;t known. But they grew like weeds in my Nonna&#8217;s garden. We ate an incredible amount of them and could never get enough. This is my <a href=\"https:\/\/pane-bistecca.com\/2021\/08\/06\/melanzane-fritte-fried-eggplants-nonnas-recipe\/\">mother&#8217;s special recipe<\/a>.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>And another favourite recipe, is this aubergine dish by Ariane from <a href=\"http:\/\/tradolceedamaro.blogspot.it\/\">Tra dolce ed amaro<\/a>. It tastes so good that I want it all to myself! Ariane lived in Rome for a long time and writes about it on her blog. She mainly posts very traditional recipes from Italy with a lot of history behind them. It&#8217;s a pleasure to read there! Thank you, Ariane!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/03\/ari11-683x1024.jpg\" alt=\"Involtini di Melanzane\" class=\"wp-image-13380\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">Fuer 4 Personen:<br \/>2 mittelgro\u00dfe Auberginen<br \/>2 El Mehl<br \/>Salz<br \/>hoch erhitzbares Pflanzen\u00f6l<br \/>1 kleine Zwiebel<br \/>1 Knoblauchzehe<br \/>Oliven\u00f6l extra vergine<br \/>400 g Polpa di pomodoro (st\u00fcckige Tomaten)<br \/>ein paar Basilikum Bl\u00e4ttchen<br \/>150 g gekochter Schinken (ich habe Rohschinken genommen)<br \/>200 g Provola affumicata (eine Art ger\u00e4ucherte Mozzarella) (ich habe frische Mozzarella genommen, da ich das Ger\u00e4ucherte nicht mag)<br \/>3-4 El Parmigiano Reggiano, frisch gerieben<br \/>Salz, frisch gemahlener Pfeffer<br \/>1 Prise Zucker<\/p>\n<p style=\"text-align: center;\">Die Auberginen l\u00e4ngs in Scheiben schneiden, in ein Sieb legen, mit Salz bestreuen und eine halbe Stunde ziehen lassen. Dann die Scheiben absp\u00fclen, mit K\u00fcchenpapier trocken tupfen, leicht bemehlen und in Pflanzen\u00f6l von beiden Seiten abraten. Die Auberginen Scheiben dann auf einen mit K\u00fcchenpapier ausgelegten Teller legen. Jeweils eine Auberginen Scheibe mit Schinken und einem St\u00fcck Provola belegen, (oder mit Mozzarella) (ich habe noch ein Blatt Basilikum dazu gegeben), aufrollen und in eine feuerfeste Form legen.<br \/>Die Zwiebel in feine W\u00fcrfel schneiden, die Knoblauchzehe fein hacken und beides in etwas Oliven\u00f6l anschwitzen. Die Polpa di pomodoro hinzuf\u00fcgen, mit Salz, Pfeffer und Zucker abschmecken und eine halbe Stunde leicht k\u00f6cheln lassen. Ab und zu umr\u00fchren. Zum Schluss ein paar Bl\u00e4ttchen Basilikum in feine Streifen schneiden und zu dem Sugo geben. Die Auberginenr\u00f6llen mit dem\u00a0<em>Sugo\u00a0<\/em>begie\u00dfen und dem Parmesan bestreuen. F\u00fcr eine halbe Stunde in den Ofen auf 180 C Grad vorgeheizten Ofen geben. Schmeckt wunderbar!<\/p>\n<p style=\"text-align: center;\">(Ich habe schon Versionen mit gekochtem Schinken, Mortadella und\/oder mit Gorgonzola gemacht)<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 4 Persons:<\/em><br \/><em>2 medium size Eggplants<\/em><br \/><em>2 tbsp Flour<\/em><br \/><em>Salt<\/em><br \/><em>Vegetable Oil<\/em><br \/><em>1 small Onion<\/em><br \/><em>1 clove of Garlic<\/em><br \/><em>Olive Oil extra vergine<\/em><br \/><em>400 g Polpa di pomodoro (canned Tomatoes in pieces)<\/em><br \/><em>some Basil leaves<\/em><br \/><em>150 g cooked Ham (I used raw ham)<\/em><br \/><em>200 g Provola affumicata (smoked Mozzarella) (I used fresh Mozzarella as I don&#8217;t like the smoked one)<\/em><br \/><em>3-4 tbsp Parmigiano Reggiano, grated<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>1 Pinch of Sugar<\/em><\/p>\n<p style=\"text-align: center;\"><em>Cut the eggplants into big slices and sprinkle them with salt. Let them marinate for 30 minutes, wash them and dry them on kitchen towels. Turn them over in the flour and fry them on both sides until browned. Put them onto kitchen paper to drain the oil. Layer each eggplant slice with a slice of ham and a piece of Provola (or Mozzarella) (I also put a leave of basil), roll up and put it into a greased gratin dish.\u00a0<\/em><br \/><em>Chop the onion and clove of garlic and fry both in hot olive oil. Add the Polpa di pomodoro, season with salt and pepper, add the sugar and let simmer for 1 hour. Add some basil leaves at the end.\u00a0 Pour the\u00a0Sugo over the eggplant rolls and sprinkle with grated Parmesan. Bake at 180 C for 30 minutes.
