Nicht nur zum Fasching wird er gegessen, sondern das ganze Jahr rum. Ich liebe sie sehr! Gef\u00fcllt mit Konfit\u00fcre, bedeckt mit Zucker, einfach YUMMY! Ich habe sie schon einmal auf meinem Blog verewigt, die <a href=\"https:\/\/pane-bistecca.com\/2019\/02\/02\/fasnachts-chrapfe-ofen-berliner-filled-doughnuts-from-the-oven\/\">Berliner aus dem Ofen<\/a>, die sind gut, aber\u2026 diese hier sind viel besser! Der Teig ist weich und luftig, die Kruste echt knusprig und der Geschmack nach meiner Meinung perfekt!<\/p>\n<p style=\"text-align: center;\">Und wie so oft, bringe ich Euch eine Geschichte mit! Meine Eltern haben uns oft in Hong Kong besucht. Eines der ersten Male waren wir auf dem Markt und da war eine kleine chinesische B\u00e4ckerei, die verkaufte auch Berliner. Meine Mama liebte die heiss und so raste sie hin, um einen zu kaufen. Ich rief noch hinter ihr her: \u201eMama, das sind chin\u2026..\u201c aber sie war schon am Reinbeissen. Ihr Gesicht h\u00e4ttet Ihr sehen sollen!! Klar, dass die Chinesen ihre nicht mit Konfit\u00fcre f\u00fcllen, sondern mit der s\u00fcssen rote Bohnen Paste!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Doughnuts, we call them lovingly Berliner, are a stable food by now. Not only to Carnival are they baked, but all year round. <\/em><em>I love them! Filled with jam and with Sugar on top\u2026YUMMY! <\/em><em>I already have a recipe on my blog, the <\/em><em><a href=\"https:\/\/pane-bistecca.com\/2019\/02\/02\/fasnachts-chrapfe-ofen-berliner-filled-doughnuts-from-the-oven\/\">Berliner from the Oven<\/a><\/em><em>. They are good, but\u2026 these are much much better! The dough is soft and airy, the crust crunchy, and the taste just perfect! <\/em><\/p>\n<p style=\"text-align: center;\"><em>And like so often, I bring you a story! My parents used to visit u soften in Hong Kong. On one of their first visits, we went to the market. <\/em><em>There was a small bakery and they sold doughnuts. My mum goes crazy about them! So she run off to get one. I called after her: \u201eMum, they are Chine\u2026.\u201c But she was already biting into it! You should have seen her face!! <\/em><em>Of course, the Chinese do not fill them with jam, but with their sweet red bean paste! <\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2022\/02\/ber28-683x1024.jpg\" alt=\"Berliner Schweizer Fastnacht\u2018s Geb\u00e4ck\" class=\"wp-image-13135\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr 12 Berliner:<br \/>500 g Mehl<br \/>60 g Zucker<br \/>2 EL Zitronenabrieb<br \/>18 g Hefe<br \/>220 ml warme Milch<br \/>70 g Butter weich<br \/>8 g Salz<br \/>2 Eier<br \/>Konfit\u00fcre<br \/>Puderzucker<\/p>\n<p style=\"text-align: center;\">Die trockenen Zutaten zusammen mischen. \u00a0Butter in der Milch schmelzen. Die Hefe zerkr\u00fcmeln und mit 1 TL Zucker vermischen. Dann alles zu den trockenen Zutaten geben (ausser Konfit\u00fcre und Puderzucker) und so lange kneten lassen, bis ein guter, geschmeidiger Teig entstanden ist. Das kann gut 5-10 Minuten dauern. Zugedeckt an einem warmen Ort 1 Stunde gehen lassen. <br \/>Dann je 75 g St\u00fccke abschneiden. Wer kleinere Berliner will, schneidet 50 g ab, das ergibt 18 Berliner. Aus den St\u00fccken Kugeln schleifen. Gut aufpassen, dass sie oben keine Naht haben! Unten gut zusammen kneifen und schleifen. Auf ein mit Backpapier ausgelegtes Blech geben und zugedeckt nochmals 40 Minuten gehen lassen. Dann die Berliner 10 Minuten entweder in den Tiefk\u00fchler, oder jetzt im Winter, ans Fenster stellen, so dass sich die Oberhaut verh\u00e4rtet. Oel in einem Topf erhitzen (180 C Grad) Die Berliner mit der Oberseite nach unten ins heisse Oel geben, Deckel auf den Topf geben und ca. 3-4 Minuten frittieren. Deckel abheben und die Berliner wenden. Nochmals (ohne Deckel) 2-3 Minuten backen.<\/p>\n<p style=\"text-align: center;\">Wem sie noch nicht dunkel genug sind, kann sie nochmal wenden und eine weitere Minuten backen. (Frittierzeit 6-8 Minuten) Rausheben und auf K\u00fcchenpapier abtropfen lassen. Ausk\u00fchlen lassen. Marmelade erw\u00e4rmen, so wird sie fl\u00fcssiger und in einen Spritzbeutel mit spitzer T\u00fclle oder in eine Spitze Spritzflasche f\u00fcllen. In die Berliner einstechen und mit der Konfit\u00fcre f\u00fcllen. Danach die Berliner mit Puderzucker bestreuen und geniessen!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 12 Doughnuts:<\/em><br \/><em>500 g Flour<\/em><br \/><em>60 g Sugar<\/em><br \/><em>2 tbsp Lemon Zest<\/em><br \/><em>18 g fresh Yeast<\/em><br \/><em>220 ml warm Milk<\/em><br \/><em>70 g Butter soft<\/em><br \/><em>8 g Salt<\/em><br \/><em>2 Eggs<\/em><br \/><em>Jam<\/em><br \/><em>Icing Sugar<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix the dry ingredients together. Melt the butter in the milk. Crumble the yeast and mix with 1 tsp sugar. Then add everything to the dry ingredients (except the jam and icing sugar) and leave to knead until a good, smooth dough has formed. This can take a good 5-10 minutes. Cover and leave in a warm place to rise for 1 hour. <\/em><br \/><em>Then cut off 75 g pieces each. If you want smaller doughnuts, cut off 50 g, which makes 18 doughnuts. Form balls out of the pieces. Make sure that there is no seam at the top! Pinch the bottom of the doughnuts together and shape them. Place on a baking tray lined with baking paper, cover and leave to rise for another 40 minutes. Then place the doughnuts in the freezer for 10 minutes, or now in winter, in the window, so that the epidermis hardens. Heat the oil in a saucepan (180 C degrees) Place the doughnuts top side down in the hot oil, place the lid on the saucepan and fry for about 3-4 minutes. Remove the lid and turn the doughnuts. Bake again (without the lid) for 2-3 minutes. <\/em><\/p>\n<p style=\"text-align: center;\"><em>If they are not dark enough, you can turn them again and bake for another minute. (Frying time 6-8 minutes) Remove and drain on kitchen paper. Leave to cool. Heat the jam to make it more liquid and pour into a piping bag with a pointed nozzle or a lacy piping bottle. Prick the doughnuts and fill with the jam.
