Das Fleisch wird butterzart! Man findet dieses Fleisch aber nicht \u00fcberall und deshalb war ich erstaunt, als ich es doch fand. Dieses Schweine-B\u00e4ckchen wurde langsam in Rotwein und Gem\u00fcse gekocht und war mit der Sauce unglaublich gut! Dazu habe ich einen Kartoffelbrei ohne Milch gemacht, der super gut schmeckte, da die Br\u00fche sehr viel mehr Geschmack brachte. Mit einem mit K\u00e4se \u00fcberbackenen Blumenkohl war das eine absolute Schlemmerei!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>The meat of cheeks is delicious if it is slowly braised! The meat will get beautifully tender. However, it is not easy to find this meat. The more astonished I was when I found this beautiful pork cheek! I braised it slowly in red wine and vegetables and it tasted wonderful with the reduced sauce. I served it with mashed potatoes, which I cooked without milk. It was delicious because I used broth, this gave it a nice spice. These two, together with cauliflower baked with cheese and the pureed sauce was a delight! \u00a0\u00a0<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/12\/bae16-683x1024.jpg\" alt=\"Langsam geschmortes Schweine-B\u00e4ckchen mit Kartoffelbrei und Blumenkohl\" class=\"wp-image-12256\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><strong>F\u00fcr 4-5 Personen:<\/strong><br \/>Ein Schweine-B\u00e4ckchen von ca. 800 g<br \/>2 Sellerie Stangen<br \/>3 Karotten<br \/>1 Zwiebel<br \/>4 Knoblauchzehen<br \/>1 rote Peperoni<br \/>1 gelbe Peperoni<br \/>300 ml Rotwein<br \/>2 EL Tomaten P\u00fcree\/Mark<br \/>Salz und Pfeffer<br \/>Thymian<br \/>Paprika<br \/>1 rote Chili<br \/>Oliven\u00f6l<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcr den Kartoffelbrei:<\/strong><br \/>1 kg Kartoffeln<br \/>20 g Butter<br \/>150 ml Gem\u00fcsebr\u00fche <br \/>\u00bd TL Salz<br \/>Muskatnuss<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcr den Blumenkohl:<\/strong><br \/>1 Blumenkohl<br \/>1 L Br\u00fche<br \/>30 g geriebener K\u00e4se<br \/>Salz und Pfeffer<br \/>20 ml Sahne<\/p>\n<p style=\"text-align: center;\">Das Schweine-B\u00e4ckchen w\u00fcrzen und in einer flachen Pfanne in etwas Oliven\u00f6l rundherum gut anbraten. In einen schweren Topf geben. Das Gem\u00fcse und Knoblauchzehen (ausser den Peperoni) in kleine W\u00fcrfel schneiden und in der selben flachen Pfanne anbraten. Dann zum Fleisch in den Br\u00e4ter geben. Den Rotwein dazu giessen und nachw\u00fcrzen. Das Tomaten P\u00fcree dazu geben und zugedeckt 4 Stunden auf kleinstem Feuer k\u00f6cheln lassen. Immer wieder nachsehen, dass genug Fl\u00fcssigkeit vorhanden ist und nichts ansetzt! <br \/>Die Peperoni in Streifen schneiden und in wenig Oel braten. Am Schluss die Fl\u00fcssigkeit aus der Bratschale absch\u00f6pfen, die Peperoni dazu geben und im Mixer p\u00fcrieren. <br \/>F\u00fcr den Blumenkohl, den Kohl in kleine R\u00f6schen teilen und in der Br\u00fche 8-10 Minuten sieden lassen. Dann abgiessen und in eine gefettete Auflaufform geben. Die Sahne dar\u00fcber geben, w\u00fcrzen und den Reibk\u00e4se dar\u00fcber streuen. 30 Minuten im Ofen bei 180 C backen. <br \/>F\u00fcr den Kartoffelbrei die Kartoffel weich kochen (ich mache das im Dampfkochtopf) und sch\u00e4len, dann durch die Kartoffelpresse dr\u00fccken. Die Butter, Muskatnuss und das Salz dazu mischen und langsam die Br\u00fche zugeben, evt. braucht man etwas weniger. Alles zusammen servieren.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><strong>For 4-5 Persons:<\/strong><\/em><br \/><em>One Pork Cheek approx. 800 g<\/em><br \/><em>2 Celery Sticks<\/em><br \/><em>3 Carrots<\/em><br \/><em>1 Onion<\/em><br \/><em>4 cloves of Garlic<\/em><br \/><em>1 red Capsicum<\/em><br \/><em>1 yellow Capsicum<\/em><br \/><em>300 ml Red Wine<\/em><br \/><em>2 EL Tomato Paste<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Thyme<\/em><br \/><em>Paprika<\/em><br \/><em>1 red Chili<\/em><br \/><em>Olive Oil<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the mashed Potatoes:<\/strong><\/em><br \/><em>1 kg Potatoes<\/em><br \/><em>20 g Butter<\/em><br \/><em>150 ml Vegetable Broth <\/em><br \/><em>\u00bd tsp Salt<\/em><br \/><em>Nutmeg<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the Cauliflower:<\/strong><\/em><br \/><em>1 Cauliflower<\/em><br \/><em>1 L Broth<\/em><br \/><em>30 g grated Cheese<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>20 ml Whipping Cream<\/em><\/p>\n<p style=\"text-align: center;\"><em>Season the pork cheek and fry it all around in a little oil in a flat pan. Put it into a heavy pot. Dice all the vegetables except the capsicum and fry it in the same pan. Then put it into the pot with the meat. Pour the red wine to the meat and season. Add the tomato paste and let simmer for 4 hours. Check if there is more liquid needed! <\/em><br \/><em>Cut the capsicum into stripes and fry them until slightly soft. At the end of the cooking time for the meat take the liquid out of the pot and puree it in the blender together with the capsicum. <\/em><br \/><em>For the cauliflower cut it into small rosettes and boil in broth for 8-10 minutes. Drain and add them to a greased gratin dish. Pour the cream over it and season well. Then sprinkle with grated cheese. Bake for 30 minutes at 180 C. <\/em><br \/><em>For the mashed potatoes cook the potatoes until soft (I did that in the pressure cooker) peel them and mash them. Add the butter, nutmeg and salt and slowly also add the broth, you might not need all of it!
