Gua Bao heisst eigentlich geschnittenes Br\u00f6tchen und wer Bao Bun sagt, (was die meisten tun) der sagt Br\u00f6tchen &#8211; Br\u00f6tchen. Diese ged\u00e4mpften Br\u00f6tchen alleine nennt man bei uns auch Lotusblatt Br\u00f6tchen. Sie sind traditionell ca. 6-8 cm gross, halbrund und recht flach. Wenn man es aufklappt, kann man es f\u00fcllen. Wieder sehr traditionell ist die Schweinebauch F\u00fcllung. Dazu passen auch <a href=\"https:\/\/pane-bistecca.com\/2021\/10\/26\/chinesische-eingelegte-gurken-chinese-pickled-cucumbers\/\">eingelegte Gurken<\/a>, frische Gurken, Karottenstreifen, Erdn\u00fcsse, <a href=\"https:\/\/pane-bistecca.com\/2021\/11\/08\/gemischtes-eingelegtes-gemuse-chinesische-art-passend-zu-bao-brotchen-mixed-pickled-vegetables-the-chinese-way-perfect-to-bao-buns\/\">eingelegtes Gem\u00fcse<\/a> und Kr\u00e4uter. Jetzt nochmals etwas Chinesisch: Die Br\u00f6tchen ohne F\u00fcllung nennt man \u201eHe Ye Bing\u201c; mit F\u00fcllung heissen sie \u201eHe Ye Bao\u201c!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Gua Bao, or Cha Bao, as they are called in Hong Kong, are a kind of sandwiches filled with pork belly you can get anywhere in China. Gua Bao translated means cut bread roll, and if you say Bao Bun (as most people call them) then you are saying bread roll \u2013 bread roll or bun-bun. We also call these breads Lotus Leave bread. They are traditionally approx. 6-8 cm big, oval in form and quite flat. If you open them, you can fill then easily. Also, very traditional is&nbsp; the pork belly filling! They are served with <a href=\"https:\/\/pane-bistecca.com\/2021\/10\/26\/chinesische-eingelegte-gurken-chinese-pickled-cucumbers\/\">pickled cucumbers<\/a>, fresh cucumbers, carrots, herbs, <a href=\"https:\/\/pane-bistecca.com\/2021\/11\/08\/gemischtes-eingelegtes-gemuse-chinesische-art-passend-zu-bao-brotchen-mixed-pickled-vegetables-the-chinese-way-perfect-to-bao-buns\/\">pickled vegetables<\/a>, and chopped peanuts. Now I teach you some Chinese: the bread rolls without filling are called \u201eHe Ye Bing\u201c; but with the filling they are called \u201eHe Ye Bao\u201c!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/11\/bao13-968x1024.jpg\" alt=\"Gua Bao - Cha Bao\" class=\"wp-image-12080\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><strong>F\u00fcr 6 Baos:<\/strong><br \/>150 g Mehl (kein Brotmehl)<br \/>30 g Maisst\u00e4rke<br \/>30 g Zucker (klingt nach viel, aber passt schon)<br \/>4 g Trockenhefe<br \/>1 Prise Salz<br \/>1 TL \u00d6l<br \/>75 ml Milch, Zimmertemperatur<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcllung:<\/strong><br \/>Man kann <a href=\"https:\/\/pane-bistecca.com\/2019\/12\/20\/nian-wuhuarou-klebriger-schweinebauch-sticky-chinese-pork-belly\/\">dieses Rezept ben\u00fctzen<\/a>, dabei die Bauchscheiben in ca. 5 mm dicke, Bao grosse St\u00fccke schneiden.<\/p>\n<p style=\"text-align: center;\">Das Mehl mit dem Salz, Zucker, Trockenhefe und der Maisst\u00e4rke mischen. Dann die fl\u00fcssigen Zutaten zugeben und sehr gut verkneten. 15 Minuten zugedeckt stehen lassen, damit der Teig sich erholen kann. Danach den Teig in 6 gleichschwere St\u00fccke schneiden. Einzeln weiterarbeiten, aber die St\u00fccke immer mit einem Tuch zugedeckt warten lassen. Die einzelnen St\u00fccke nun flachdr\u00fccken und in eine ovale form dr\u00fccken. Dann in der Mitte nach unten falten, dabei ein Backpapier dazwischen legen. Nun diese geformten Baos zugedeckt ca. 1 Stunde gehen lassen. Die Baos werden sich nicht wie normales Brot verdoppeln, aber sie werden weich und glatt. <br \/>Die F\u00fcllung muss bereit sein, bevor man die Baos d\u00e4mpft! Falls die F\u00fcllung nicht bereit ist, m\u00fcssen die Baos in den K\u00fchlschrank, zu langes gehen lassen, ist nicht gut f\u00fcr sie! Ich mache die F\u00fcllung meist am Tag zuvor bereit und brate es dann auf, wenn die Boas d\u00e4mpfen. <br \/>Zum D\u00e4mpfen einen Topf 2\/3 mit Wasser f\u00fcllen und dieses zum Sieden bringen. Ein Bambus K\u00f6rbchen mit einem Backpapier, das L\u00f6cher drin hat, auslegen. Die Baos da reinlegen und \u00fcber die Pfanne mit dem siedenden Wasser legen. Hitze etwas herunterstellen, es muss nicht sieden. Die Br\u00f6tchen 15 Minuten d\u00e4mpfen. Das K\u00f6rbchen vom Wasser nehmen und 1-2 Minuten stehen lassen. Die Br\u00f6tchen nun mit einer Scheibe Schweinebauch, etwas Gurken F\u00e4den, Karotten F\u00e4den, Salatblaetter und Kr\u00e4uter f\u00fcllen und sofort servieren. Man kann dazu eine <a href=\"https:\/\/pane-bistecca.com\/2020\/12\/28\/asiatische-dipping-saucen-asian-dipping-sauces\/\">asiatische Sauce servieren zum dippen<\/a>.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><strong><em>For 6 Baos:<\/em><\/strong><br \/><em>150 g Flour (all-purpose Flour)<\/em><br \/><em>30 g Cornstarch<\/em><br \/><em>30 g Sugar (it seems a lot, but you will need it)<\/em><br \/><em>4 g Dried Yeast<\/em><br \/><em>1 Pinch of Salt<\/em><br \/><em>1 tsp Oil<\/em><br \/><em>75 ml Milk, room temperature<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>Filling:<\/em><\/strong><br \/><em>You can use <a href=\"https:\/\/pane-bistecca.com\/2019\/12\/20\/nian-wuhuarou-klebriger-schweinebauch-sticky-chinese-pork-belly\/\">this recipe<\/a>, but cut the pork belly into 5 mm thick and Bao size pieces.<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix the flour with the salt, sugar, dried yeast, and cornstarch. Then add the wet ingredients and knead well. Cover and let rest for 15 minutes, so the dough can relax. Then cut the dough into 6 same size pieces. Now work with each piece, while you cover the rest with a towel. Now work each one! Press them slightly flat and form them into an oval. Then fold them down in the middle but put a piece of baking paper in between. Now let the formed bao buns rest covered with a towel for approx. 1 hour. They will not grow much, but the dough will get nice and smooth. <\/em><br \/><em>The filling has to be ready before you start steaming the baos! If the filling is not yet finished, let the baos rest in the fridge as over-proofing is not good for them. I usually make the filling a day ahead and just fry it up during the steaming. <\/em><br \/><em>To steam put a pot of water onto the cooker and bring to a boil. It should only be filled 2\/3 up. Put a baking paper with holes into a bamboo basket and turn the heat down, when the water boils. It does not need to boil to make enough steam. Put the baos into the basket and the basket onto the pan and let steam for 15 minutes. Take it from the pan and let rest for 1 minute. Now fill the baos with the pork belly, some thin cut cucumber and carrot, lettuce, herbs etc. and serve.
