F\u00fcr mich ist es beruhigend und fast schon therapeutisch. Aber hier in Asien ist es auch wichtig, dass man das Brot essen kann, das man eigentlich als Europ\u00e4er gew\u00f6hnt ist. Und als Schweizer ist man da sehr verw\u00f6hnt! Das Brot in der Schweiz ist einfach unschlagbar! Und so versuche ich immer wieder Brote herzustellen, die luftig sind, aber eine gute Krumme haben. Dieses Brot hat diese Eigenschaften und weil ich noch Leinsamen hatte, mussten die mit rein. Das Brot ist ein Beitrag zum <a href=\"https:\/\/www.kochtopf.me\/world-bread-day-2021\">16. World Bread Day 2021<\/a> organisiert von Zorra, von Kochtopf!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Bread baking is wonderful! For me it is reassuring and almost therapeutic! But for us, living in Asia, it is also very important to eat the bread we are used to get in Europe. And as Swiss we are spoiled for choice! The bread in Switzerland is unbeatable! And that\u2019s why I try to make breads who are airy inside, but with a nice crust! This bread is like that and as I still had some flaxseeds, I used them too. This recipe takes part at the <a href=\"https:\/\/www.kochtopf.me\/world-bread-day-2021\">16<sup>th<\/sup> World Bread Day 2021<\/a> organized by Zorra from Kochtopf. <\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/10\/flx9-683x1024.jpg\" alt=\"Leinsamenbrot\" class=\"wp-image-11645\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><strong>F\u00fcr einen Laib:<\/strong><br>40 g Leinsamen in ca. 150 ml Wasser einlegen.<\/p>\n<p style=\"text-align: center;\"><strong>Vorteig:<\/strong><br>60 g Frisch gef\u00fctterter Sauerteig<br>170 g Wasser<br>1 g Trockenhefe<br>230 g Brotmehl 550er<\/p>\n<p style=\"text-align: center;\">Zutaten zusammen mischen und 30 Minuten ruhen lassen.<\/p>\n<p style=\"text-align: center;\"><strong>Teig:<\/strong><br>Vorteig<br>Abgegossene Leinsamen<br>150 g Brotmehl 550er<br>8 g Salz<\/p>\n<p style=\"text-align: center;\">Alles gut kneten mit der K\u00fcchenmaschine, ca. 10 Minuten lang, dann zugedeckt \u00fcber Nacht bei Zimmertemperatur stehen lassen. Dabei nach der ersten Stunde 2-mal falten und strecken. Am n\u00e4chsten Morgen den Teig aus der Sch\u00fcssel nehmen und rund formen. In ein bemehltes K\u00f6rbchen geben und zugedeckt 3 Stunden ruhen lassen. Den Ofen auf 220 C Grad aufheizen, ich habe meine Grillplatte darin aufgew\u00e4rmt. Das Brot auf die Grillplatte kippen, nach belieben einschneiden und im Ofen 10 Minuten anbacken, dabei stark schwaden. Nach 10 Minuten den Dampf ablassen und die Temperatur auf 200 C Grad reduzieren, nochmals 30 Minuten backen.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><strong>For one Bread:<\/strong><\/em><br><em>40 g Flaxseed soaked in approx. 150 ml Water.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Mother dough:<\/strong><\/em><br><em>60 g refreshed Sourdough Starter<\/em><br><em>170 g Water<\/em><br><em>230 g strong Bread Flour<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix well together and let rest for 30 minutes.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Dough:<\/strong><\/em><br><em>Mother dough<\/em><br><em>Soaked Flaxseeds<\/em><br><em>150 g strong Bread Flour <\/em><br><em>8 g Salt<\/em><\/p>\n<p style=\"text-align: center;\"><em>Knead everything well together, approx. 10 minutes with the kitchen machine. Cover the bowl and let rest overnight at room temperature. But fold and stretch two times after the first hour. The next morning take it from the bowl and shape a round loaf. Put it into a floured proofing basket and let rest for 3 hours. Heat the oven to 220 C, I heated up my grilling plate in it. Topple the dough over onto the grilling plate and score to taste. Bake for 10 minutes with spraying the sides of the oven. After 10 minutes open the oven to let the steam out and turn down to 200 C.
