Darum mache ich Glutenfreie chinesische Schweinefleisch Dumplings. Ich habe schon einige Mehle ausprobiert und diese Version hier ist die Beste. Der Teig muss leicht dehnbar sein und doch zusammen halten. Was eben bei glutenfreien Teigen nicht ganz so einfach ist, weil die Gluten fehlen, die Teige dehnbar machen. Aber durch das Ben\u00fctzen der richtigen Mehle klappt&#8217;s auch! Die F\u00fcllung ist ganz einfach und schnell gemacht. Dann werden sie traditionell gebraten und ged\u00e4mpft! Einfach lecker!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Gluten-free Dumplings Wrappers are \u2013 if you get the trick oft hem \u2013 not really hard to make. I tried several different flours, and this variation really works well. The dough has to be a little stretchy but not fall apart. This is not easy with gluten-free doughs, because the gluten, which make a dough stretchy, are missing! However, through using the right flours this is not a problem. The filling is very simple and easy to do. Then they are cooked traditionally, first fried, then steamed! Just delicious! <\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/09\/dum17-763x1024.jpg\" alt=\"Glutenfreie chinesische Schweinefleisch Dumplings\" class=\"wp-image-11574\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr ca. 30 St\u00fcck:<br><strong>F\u00fcr die Dumpling Wrappers:<\/strong><br>160 g Glutinous Reis Mehl (Klebreismehl) (Bitte nicht durch normales Reismehl ersetzen!)<br>80 g glutenfreies Mehl<br>1 Prise Salz<br>3 EL Oliven\u00f6l<br>200-220 ml kochendes Wasser<\/p>\n<p style=\"text-align: center;\">Alle trockenen Zutaten zusammen mischen, dann das Oel und das heisse Wasser langsam dazu giessen und in der K\u00fcchenmaschine kneten lassen. Der Teig sollte weich, aber nicht br\u00f6selig sein. Unter einem Tuch etwas ruhen lassen.<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcr die F\u00fcllung:<\/strong><br>Ca 2\/3 eines Chinakohls oder kleinen Wirz, gehackt (Wirsingkohl)<br>450 g gehacktes Schweinefleisch<br>3 Fr\u00fchlingszwiebeln, gehackt<br>2 Eier<br>1 \u00bd EL Sesam\u00f6l<br>2 TL Soja Sauce<br>1 gestrichener TL Salz<br>\u00bd TL Zucker<br>\u00bc TL Pfeffer<\/p>\n<p style=\"text-align: center;\">Alle Zutaten in den Mixer geben und gut p\u00fcrieren.<\/p>\n<p style=\"text-align: center;\">Den Teig zu einer Rolle formen und d\u00fcnne Scheiben davon abschneiden. Die Rolle unter einem Tuch lassen, damit sie nicht austrocknet. Das Teilst\u00fcck auswallen zu einem Kreis. Mit einem Ausstecher ein ca. 10-12 cm grossen Kreis ausstechen. Die Disc auf die Hand legen, 1 TL der F\u00fcllung darauf geben, die R\u00e4nder mit Wasser bestreichen und in der Mitte zusammen falten. Nun auf beiden Seiten 2-3 Falten legen und gut zusammen dr\u00fccken. Man kann auch solche zusammen klappbare Raviolimacher nehmen, es geht auch sehr gut und viel schneller. Die Dumplings auf Backpapier legen, so kleben sie nicht. In einer weiten Pfanne etwas Oel erhitzen, die Dumplings aufrecht da hinein stellen und kurz braten. Dann ca. 200 ml Wasser zugeben, Deckel auflegen und d\u00e4mpfen lassen f\u00fcr ca. 5 Minuten. Die Dumplings mit <a href=\"https:\/\/pane-bistecca.com\/2020\/12\/28\/asiatische-dipping-saucen-asian-dipping-sauces\/\">diesen Saucen<\/a> servieren.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For approx. 30 Pieces:<\/em><br><strong><em>For the Dumpling Wrappers:<\/em><\/strong><br><em>160 g Glutinous&nbsp;Rice Flour (Please, do not use normal rice flour!)<\/em><br><em>80 g gluten-free Flour<\/em><br><em>1 Pinch of Salt<\/em><br><em>3 tbsp Olive Oil<\/em><br><em>200-220 ml boiling Water<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix all dry ingredients together, then add the oil and slowly the boiling water. The dough should be soft but not crumbly! Let rest under a towel.<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>For the Filling:<\/em><\/strong><br><em>Approx. 2\/3 of a Napa Cabbage or Savoy Cabbage, chopped <\/em><br><em>450 g ground Pork<\/em><br><em>3 Spring-onion, chopped<\/em><br><em>2 Eggs<\/em><br><em>1 \u00bd tbsp Sesame Oil<\/em><br><em>2 tsp Soy Sauce<\/em><br><em>1 level tsp Salt<\/em><br><em>\u00bd tsp Sugar<\/em><br><em>\u00bc tsp Pepper<\/em><\/p>\n<p style=\"text-align: center;\"><em>Put all ingredients into the blender and puree.<\/em><\/p>\n<p style=\"text-align: center;\"><em>Form a sausage with the dough and cut small slices off it. Leave the sausage under a towel, so it will not dry out. Now roll the piece out to a disc of approx. 10-12 cm. Cut it with a cookie cutter. Put the disc into your palm and add 1 tsp of the filling. Brush the sides with water and fold together in the middle. Now make small folds on each side and press well together. You can also use a ravioli cutter, that makes it a lot easier and quicker. Put the dumplings onto a baking paper so they will not stick together. Heat some oil in a wide pan and put all dumplings sitting up into it. Fry for a short while, then add 200 ml water and cover the pan. Let the dumplings steam for approx. 5 minutes. Dazu ersetzt man ca 1\/3 der Fl\u00fcssigkeit mit dem Saft. Heraus kommen knallrote Dumplings!&nbsp;<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>To serve the Dumplings in a different way I colored them with Beetroot juice.
