Man k\u00f6nnte sagen, es ist Chinesisch, das verstehen wir eh nicht, aber ich interessiere mich immer f\u00fcr den Hintergrund des Gerichtes, deshalb kann ich Euch dieses Geheimnis verraten! Sie heissen so, weil normalerweise die Nudeln handgezogen sind und es Bi\u00e1ng Bi\u00e1ng macht (oder bang Bang) wenn man den Teig auf den Tisch klopft. Neulich sagt man auch, dass dieses Wort mit Homer Simpsons \u201edoh\u201c verglichen werden kann, es ist ein Ausruf des Erschreckens. Das chinesische Zeichen f\u00fcr Bi\u00e1ng ist das komplizierteste, es ist aus 57 Strichen gemacht. Traditionell werden die Nudeln mit einer w\u00fcrzigen, leicht scharfen Sauce aus Gew\u00fcrzen und Chili, mit Lammfleisch serviert. Das Gericht stammt aus Xi\u2018an, einer Stadt in der Provinz Shaanxi. Einfachheitshalber habe ich meine mit gekauften Reisnudeln gemacht, denn ich musste glutenfrei kochen.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Why are Bi<\/em><em>\u00e1<\/em><em>ng Bi<\/em><em>\u00e1<\/em><em>ng Noodles called this way? You could say, it\u2019s Chinese, I do not understand this language. But I like to investigate the background of dishes and their names. They are called so because they are made with hand pulled noodles and the sound the dough makes, when being banged onto the wooden table is just like es Bi<\/em><em>\u00e1<\/em><em>ng Bi<\/em><em>\u00e1<\/em><em>ng (or Bang Bang). Nowadays they also say, it can be compared to Homer Simpsons \u201edoh\u201c, it is a sound of surprise. The Chinese sign for <\/em><em>Bi\u00e1ng<\/em><em> it is the most complicated one, with 57 strokes. Traditionally the noodles are served with a spicy sauce and lamb meat. The dish originates from Xi\u2019an, a city in Shaanxi province. To make it easier I used store bought rice noodles as I had to cook gluten-free. <\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/08\/bbn17-804x1024.jpg\" alt=\"Bi\u00e1ng Bi\u00e1ng Noodles with Lamb\" class=\"wp-image-11203\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr 4 Personen:<br>300 g breite Reisnudeln<\/p>\n<p style=\"text-align: center;\">Die Nudeln in 2 Liter gesalzenem Wasser ca. 8 Minuten kochen, abgiessen und mit Frischhaltefolie bedeckt aufbewahren.<\/p>\n<p style=\"text-align: center;\"><strong>Marinade:<\/strong><br>4 EL trockener Sherry<br>1 TL Salz<br>1 TL Oel<br>2 TL Speisest\u00e4rke<\/p>\n<p style=\"text-align: center;\">Die Zutaten gut vermischen.<\/p>\n<p style=\"text-align: center;\">400 g Lammschulter oder anderes, leicht durchzogenes Fleisch, klein geschnitten. Das Fleisch mit der Marinade vermischen und 30 Minuten ruhen lassen.<\/p>\n<p style=\"text-align: center;\"><strong>Sauce:<\/strong><br>100 ml Chili Oel<br>3 EL weisser Essig<br>30 ml trockener Sherry<br>20 ml Soja Sauce<\/p>\n<p style=\"text-align: center;\">Die Zutaten f\u00fcr die Sauce zusammen mischen.<\/p>\n<p style=\"text-align: center;\"><b>Gew\u00fcrz<\/b><strong>:<\/strong><br>2 EL Koriander Samen<br>2 TL Pfefferk\u00f6rner<br>2 EL Cumin Samen<\/p>\n<p style=\"text-align: center;\">Die Samen und Pfefferk\u00f6rner in einer fettfreien Pfanne r\u00f6sten bis sie knacken. Dann zerschlagen oder malen.<\/p>\n<p style=\"text-align: center;\">1 EL Oel<br>8 Knoblauchzehen, gehackt<br>1 rote Zwiebel, gehackt<br>2 cm Ingwer, gerieben<br>1 gr\u00fcne Chili Schote, gehackt<br>3 Fr\u00fchlingszwiebeln, 5 cm lang, der L\u00e4nge nach geschnitten<\/p>\n<p style=\"text-align: center;\">Das Oel in einer Pfanne erhitzen und das Lammfleisch darin gut durchbraten. Die gehackten Knoblauchzehen, Zwiebel und den Ingwer zugeben. Gut durchkochen. Chili und Fr\u00fchlingszwiebeln zugeben, dann alles Gew\u00fcrz und nochmals gut braten. Am Ende die Sauce zugeben, gut vermischen und die Nudeln dazu mischen. Mit etwas Sesam bestreuen und servieren.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 4 Persons:<\/em><br><em>300 g wide Rice Noodles<\/em><\/p>\n<p style=\"text-align: center;\"><em>Cook the noodles in 2 L of salted water for 8 minutes, drain and covert hem with cling-foil.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Marinade:<\/strong><\/em><br><em>4 tbsp dry Sherry<\/em><br><em>1 tsp Salt<\/em><br><em>1 tsp Oil<\/em><br><em>2 tsp Cornstarch<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix all ingredients well together.<\/em><\/p>\n<p style=\"text-align: center;\"><em>400 g Lamb Shoulder or other slightly marbled meat, diced into small pieces. Mix the meat with the marinade and let rest for 30 minutes.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Sauce:<\/strong><\/em><br><em>100 ml Chili Oil<\/em><br><em>3 tbsp white Vinegar<\/em><br><em>30 ml dry Sherry<\/em><br><em>20 ml Soy Sauce<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix all ingredients well together.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Seasoning:<\/strong><\/em><br><em>2 tbsp Coriander Seeds<\/em><br><em>2 tbsp Peppercorns<\/em><br><em>2 tbsp Cumin Seeds<\/em><\/p>\n<p style=\"text-align: center;\"><em>Roast the seasoning in a fat free pan until they spit, then grind them.<\/em><\/p>\n<p style=\"text-align: center;\"><em>1 tbsp Oil<\/em><br><em>8 cloves of Garlic, chopped<\/em><br><em>1 red Onion, chopped<\/em><br><em>2 cm Ginger, minced<\/em><br>1 green Chili, chopped<br>3 Spring-onion, 5 cm long pieces, cut lengthwise<\/p>\n<p style=\"text-align: center;\"><em>Heat the oil in a flat pan and fry the meat. Then add the garlic, onion and ginger and fry again. Add the chili and spring-onion, then the seasoning and fry again. At the end add the sauce, mix well and add the noodles.
