Es wird aus Vollkornmehl gemacht und in Schichten gelegt, so wird es richtig sch\u00f6n kross und luftig. Es kann gef\u00fcllt werden, oder leer gebacken werden.<\/p>\n<p style=\"text-align: center;\">Das Paratha ist ein wichtiger Bestandteil des nordindischen Fr\u00fchst\u00fccks. Urspr\u00fcnglich aus diesem Teil des Landes verbreitete es sich in verschiedenen Teilen des indischen Subkontinents. Traditionell wird es mit Ghee zubereitet, doch aufgrund gesundheitlicher Aspekte bereiten manche Menschen es auch mit \u00d6l oder im Ofen zu. Als Teil des Fr\u00fchst\u00fccks wird es mit Chai und Raita verzehrt, doch oftmals wird es auch mit Kartoffeln, Panier, Zwiebeln oder Keema gef\u00fcllt gegessen. It&#8217;s made with whole-wheat\u00a0flour, folded in layers, so it gets beautifully cross and airy. (from Wikipedia)<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/08\/par16-683x1024.jpg\" alt=\"Paratha - Indian Flat-Bread\" class=\"wp-image-11118\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr 6 Fladenbrote:<br \/>300 g Vollkornmehl (ich habe ihm 1 EL Kreuzk\u00fcmmel Samen zugegeben)<br \/>1 EL Oliven\u00f6l<br \/>200 ml Milch-Wasser Mischung<\/p>\n<p style=\"text-align: center;\">Diese Zutaten zu einem weichen Brotteig zusammen kneten und 30 Minuten ruhen lassen. Dann aus dem Teig 6 gleichgrosse runde Teige formen. Jeden runden Teig im Mehl wenden und d\u00fcnn auswallen. Mit Oliven\u00f6l bestreichen, dann zur H\u00e4lfte zusammen falten. Nun wieder mit Oel bestreichen und zu einem Viertel zusammen falten. Dann wie St\u00fccke wieder im Mehl wenden und auswallen. Dabei nehmen sie die Form eines Dreiecks an. Das Tava (indische Flachpfanne f\u00fcr Brote) oder eine flache Bratpfanne mit Oel bestreichen, es braucht nur sehr wenig, und aufheizen!<br \/>Nun die Fladenbrote darauf geben und die obere Seite mit Oel bestreichen. Nach 2-3 Minuten das Brot wenden, wieder die Oberseite mit Oel bestreichen, so weiter fahren bis die Brote beidseitig gut durchgebraten sind.\u00a0<br \/>Man sieht auf dem Bild hier unten, wie es sich auch ohne S\u00e4uerungsmittel aufbl\u00e4st. Das ist wegen den Schichten so.<br \/>Ich habe die Paratha zu einem Curry, dazu Raita und Chutney, serviert.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 6\u00a0Flat-breads:<\/em><br \/><em>300 g Whole-wheat Flour (I added 1 tbsp of Cumin Seeds)<\/em><br \/><em>1 tbsp Olive Oil<\/em><br \/><em>200 ml Milk-Water Mixture<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix all those ingredients together and knead it into a bread dough. Let rest for 30 minutes. Then make 6 small round dough pieces from that dough. Each round dough piece has to be turned over in flour and then rolled out thinly.<\/em><br \/><em>Brush with olive oil, then fold into half. Brush again with oil and fold into quarters. Turn the pieces over in flour and roll out again. The Paratha will take on the form of a triangle. Use the Tava (Indian pan for frying the flat-breads) or a flat frying pan, brush with very little olive oil! Fry the flat-breads by putting them on the hot Tava, brushing the top with some oil, after 2-3 minutes turn the Paratha over, brush the top with oil, fry for 2-3 minutes, go on turning over, until Paratha is well cooked. <\/em><\/p>\n<p style=\"text-align: center;\"><em>You can see on the next picture here how it starts to rise, even dough it&#8217;s an unleavened bread.
