Wenn es mit einem jungen Huhn gekocht wird, heisst es Seco de Pollo, wenn es aber mit einem \u00e4lteren Huhn gekocht wird, heisst es Seco de Gallina de Criola. Dies war, um die \u00e4lteren etwas z\u00e4heren H\u00fchner weichzukochen in einer Sauce mit Zwiebeln, Knoblauch, Peperoni, Tomaten, Kr\u00e4uter und Gew\u00fcrzen.\u201c Sie sagt auch, dass man fr\u00fcher Chicha, ein alkoholisches Getr\u00e4nk aus S\u00fcdamerika, gekocht, aber Bier geht auch und wird heute meist genommen. Die Knoblauchzehen, Zwiebel, Peperoni und Tomaten mit dem Oregano, Bier und Orangensaft p\u00fcrieren. Dann diese Sauce zum Kochen bringen, die H\u00fchnerst\u00fccke dazu geben und auf kleiner Flamme ca. 1 Stunde k\u00f6cheln lassen. Dabei sollte die Sauce reduziert werden und eindicken. Falls nicht kann man sie ohne die Fleischst\u00fccke am Schluss nochmals richtig aufkochen. Mit Petersilie bestreuen und mit den <a href=\"https:\/\/pane-bistecca.com\/2021\/07\/03\/llapingachos-gefullte-kartoffelpuffer-aus-ecuador-stuffed-potato-cakes-from-ecuador\/\">Llapigachos<\/a> servieren.<\/p>\n<p style=\"text-align: center;\"><em>************<\/em><\/p>\n<p style=\"text-align: center;\"><em>For 4 Persons:<\/em><br><em>8-10 Chicken Pieces (I used deboned upper legs)<\/em><br><em>6-8 whole Garlic cloves<\/em><br><em>1 Onion, coarsely chopped<\/em><br><em>4-6 Tomatoes quartered<\/em><br><em>2 tsp Cumin<\/em><br><em>2 tsp Paprika<\/em><br><em>Salt and Pepper<\/em><br><em>1-2 red Capsicum, cut in pieces<\/em><br><em>2 tsp Oregano<\/em><br><em>Parsley<\/em><br><em>1 can Beer<\/em><br><em>100 ml (or more) Orange Juice<\/em><br><em>Oil<\/em><\/p>\n<p style=\"text-align: center;\"><em>Rub the chicken pieces with the cumin, paprika, salt and pepper. Blend the garlic, onion, capsicum, and tomatoes together with the Oregano, beer, and orange juice. Bring this sauce to a boil then add the chicken. Cook on small flame for 1 hour. The sauce should have reduced and thickened by now. If it has not reduced enough pour the sauce in a pot and reduce more.
