Auch deshalb, weil unser Schweizer Metzger seine Firma verkauft hatte und wir hier keine wirklich guten Bratw\u00fcrste mehr erhalten. So mache ich halt meine W\u00fcrste selbst, wie diese Pfeffrig scharfe Schweins-Bratw\u00fcrste mit K\u00e4se und das macht Spass. Jedesmal \u00e4ndere ich die Zutaten ein wenig und vor allem die Gew\u00fcrze. Diese Wurst hat K\u00e4se und Rotwein drin und sind h\u00f6llisch scharf, genau so wie es die Rennfreunde meines Liebsten m\u00f6gen!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For the last few months, I have been making sausages myself, as we can have BBQ\u2019s all year long. But also, because our Swiss butcher had sold his business and now, we do not get proper sausages anymore. So, I make my own and this is fun! Each time I change the ingredients and the spices! This time I also added cheese and red wine and are hellishly spicy; just the way my hubbies friends love it!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/06\/wue2-830x1024.jpg\" alt=\"Pfeffrig scharfe Schweins-Bratw\u00fcrste mit K\u00e4se\" class=\"wp-image-10469\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr ca. 20 W\u00fcrste:<br>750 g Schweinefleisch vom Hinterbein<br>250 g Lendenfleisch<br>400 g Schweinebauch<br>600 g mageres Schweinefleisch<br>4 EL Chili Flocken<br>3 TL Fenchel Samen<br>2-3 EL grob gemahlener schwarzer Pfeffer<br>1 TL Oregano<br>1 TL Basilikum<br>1 TL Ingwer Pulver<br>6 Knoblauchzehen, gehackt<br>1 TL Senf Samen<br>4 EL geriebener K\u00e4se<br>150 ml Rotwein<br>3-4 Meter Schweinedarm<\/p>\n<p style=\"text-align: center;\">Den Darm in Wasser einlegen. Das Fleisch in W\u00fcrfel schneiden und mit allen Gew\u00fcrzen (nicht mit dem K\u00e4se und Wein) vermischen. Dann durch die grobe Scheibe des Fleischwolfs drehen. Dann die Sch\u00fcssel mit dem Fleisch mit dem Knethaken der K\u00fcchenmaschine kneten, dabei den K\u00e4se und Rotwein mitkneten, bis alles eine dicke Masse ist. Den Darm nun innen und aussen gut auswaschen, dann auf die dicke T\u00fclle des Wurstf\u00fcllers ziehen. Die Wurstmasse nun in den Darm dr\u00fccken, alle ca. 12 cm die Wurst mehrfach verdrehen, damit sie separiert sind. Dice the meat and mix it with all the seasoning (except the cheese and red wine). Then push it through the big holes of the meatgrinder. Put it into the bowl of the kitchen machine and with the hook knead the meat. Add the cheese and red wine and knead until it is a thick mass. Carefully wash the casings inside and out and put it onto the bigger sausage filler tube. Push the meat now into the casings and all 12 cm turn the sausage several times to separate them. Put the sausages onto a plate and let them dry in the fridge for 8 hours or overnight.
