Dies ist so in etwa eines, das sie hin und wieder gekocht hat. Leider habe ich keine Rezepte von ihr erhalten, sie schrieb selten etwas auf. Normalerweise hat sie Italienischer Schweinebauch in Tomatensauce mit Griess-Gnocchi mit Spaghetti serviert, aber ich bin ja anerkannter Teigwaren-Vermeider, also habe ich Griess Gnocchi dazu serviert. Wichtig ist bei diesem Gericht, wie bei vielen italienischen Gerichten, dass man es lange, lange, lange K\u00f6cheln l\u00e4sst! So wird die Sauce dick und w\u00fcrzig und das Fleisch ganz weich, bis es fast zerf\u00e4llt. Ein \u00e4hnliches Gericht habe ich bereits auf meinem Blog, das <a href=\"https:\/\/pane-bistecca.com\/2020\/03\/01\/ragu-bolognese-mit-schweinefuesschen-ragu-bolognese-with-pigs-trotters\/\">Ragout Bolognese mit Schweinef\u00fcsschen<\/a>. Uns hat es sehr gut geschmeckt!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>My Mama was Italian and had cooked delicious dishes! This is more or less as she cooked it. Sadly, I have no recipes from her as she very seldom wrote anything down. She usually served it with Spaghetti, but I am not a lover of Pasta, so I served it with semolina Gnocchi. It\u2019s important for this dish to get really soft and delicious, to let it cook for a long time. This way the sauce gets thick and creamy, and the spices infuse the meat. I already have a similar dish on my blog, <a href=\"https:\/\/pane-bistecca.com\/2020\/03\/01\/ragu-bolognese-mit-schweinefuesschen-ragu-bolognese-with-pigs-trotters\/\">Ragout Bolognese with Pork Trotters.<\/a> We loved it! <\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/05\/bac32-1024x683.jpg\" alt=\"Italienischer Schweinebauch in Tomatensauce mit Griess-Gnocchi\" class=\"wp-image-10153\"\/><\/figure>\n\n\n<p style=\"text-align: center;\">F\u00fcr 4 Personen:<br \/>800 g Schweinebauch in ca. 3 cm breite St\u00fccke geschnitten<br \/>8 Schweinef\u00fcsschen St\u00fccke, unsere hier sind zerhackt, wenn Eure ganz sind braucht es 4 St\u00fcck<br \/>1 Zwiebel, grob gehackt<br \/>6 Knoblauchzehen, grob gehackt<br \/>2 Karotten<br \/>\u00bd TL Zucker<br \/>1 EL Sardellenpaste oder 3 Sardellen (die geben sehr viel Geschmack ab, k\u00f6nnen aber auch weggelassen werden)<br \/>1 Dose Pelati (gesch\u00e4lte Tomaten)<br \/>200 g Tomatensauce<br \/>Salz und Pfeffer<br \/>Oregano<br \/>1 Zweig Rosmarin<br \/>1 TL Chili Flocken<br \/>4 EL Oliven\u00f6l<br \/>3 EL getrocknete Tomaten in Oel<\/p>\n<p style=\"text-align: center;\">F\u00fcr die Griess Gnocchi:<br \/>700 ml Milch<br \/>20 g Butter<br \/>\u00bd TL Salz<br \/>170 g feiner Griess<br \/>100 g geriebener Parmesan<br \/>1 Ei<\/p>\n<p style=\"text-align: center;\">Die Zwiebel mit dem Knoblauch in 2 EL Oliven\u00f6l anbraten. Die Karotten in kleine W\u00fcrfel schneiden und zugeben, den Zucker dar\u00fcber streuen und mit Salz und Pfeffer w\u00fcrzen. Gut durchbraten, bis die Zwiebel weich ist. Die Sardellen Paste zugeben und untermischen. Nun die Pelati dazu geben, ich zerhacke sie in der Dose, falls sie nicht schon gehackt sind. Gut mischen, den Schweinebauch und die F\u00fcsschen zugeben und die Tomatensauce dar\u00fcber leeren.<\/p>\n<p style=\"text-align: center;\">Die getrockneten Tomaten hacken und zugeben. Oregano, Rosmarin und Chili dazu geben, mischen und zugedeckt auf kleiner Flamme 3-4 Stunden k\u00f6cheln lassen. (die Kochzeit h\u00e4ngt von der Gr\u00f6sse der St\u00fccke und F\u00fcsschen ab) Bitte, immer wieder mischen und nachsehen, so dass nichts ankocht! Am Schluss die 2 restlichen EL Oliven\u00f6l dar\u00fcber geben.<\/p>\n<p style=\"text-align: center;\">Unterdessen die Griess Gnocchi machen, die brauchen mindestens 2 Stunden zum K\u00fchlen!<br \/>Die Milch mit der Butter und dem Salz aufw\u00e4rmen, kurz vor dem Siedepunkt die Hitze reduzieren und das Griess einrieseln lassen, dabei mit dem Schwingbesen gut mischen! Sobald die Masse eindickt vom Herd nehmen und den Parmesan und das Ei darunter mischen. Die Masse auf ein ca. 35\/35 cm Backblech, das mit Backpapier ausgelegt ist, streichen. Im K\u00fchlschrank mindestens 2 Stunden k\u00fchlen lassen, man kann dies aber auch am Tag zuvor vorbereiten. <br \/>Vor dem Kochen auf ein Schneidebrett st\u00fcrzen und in kleine W\u00fcrfel schneiden. 20 g Butter in einer flachen Pfanne erhitzen und die W\u00fcrfel darin auf allen Seiten braten. <br \/>Die Gnocchi mit dem Fleisch und der Sauce servieren.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 4 Persons:<\/em><br \/><em>800 g Pork Belly cut into approx. 3 cm wide pieces<\/em><br \/><em>8 pieces of Pork Trotters, ours are usually chopped apart, if you get whole once buy only 4 <\/em><br \/><em>1 Onion, coarsely chopped<\/em><br \/><em>6 cloves of Garlic, coarsely chopped<\/em><br \/><em>2 Carrots<\/em><br \/><em>\u00bd tsp Sugar<\/em><br \/><em>1 tbsp Anchovy Paste, if you don\u2019t get this add 3 Anchovies (they give the dish loads of taste but you don\u2019t need to add them)<\/em><br \/><em>1 can Pelati (peeled Tomatoes)<\/em><br \/><em>200 g Tomato Sauce<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Oregano<\/em><br \/><em>1 Twig Rosemary<\/em><br \/><em>1 tsp Chili Flakes<\/em><br \/><em>4 tbsp Olive Oil<\/em><br \/><em>3 tbsp dried Tomatoes in Oil<\/em><\/p>\n<p style=\"text-align: center;\"><em>For the Semolina Gnocchi:<\/em><br \/><em>700 ml Milk<\/em><br \/><em>20 g Butter<\/em><br \/><em>\u00bd tsp Salt<\/em><br \/><em>170 g fine Semolina<\/em><br \/><em>100 g grated Parmesan<\/em><br \/><em>1 Egg<\/em><\/p>\n<p style=\"text-align: center;\"><em>Fry the onion and garlic in 2 tbsp of olive oil. Dice the carrots and add them, sprinkle with the sugar and add salt and pepper. Fry well, until the onion is soft. Add the anchovy paste and mix. Now add the pelati, if they are not chopped, I chop them inside the can. Mix well, add the pork belly and trotters, and pour the tomato sauce over them. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Chop the dried tomatoes and add them, season with oregano, rosemary and chili. Cover with a lid and let simmer for 3-4 hours. (the cooking time depends on the size of the meat pieces and trotters) Do not forget to mix from time to time so nothing sticks to the pan! Add the 2 tbsp olive oil at the end!<\/em><\/p>\n<p style=\"text-align: center;\"><em>Meanwhile cook the semolina Gnocchi, they need at least 2 hours cooling time!<\/em><br \/><em>Heat up the milk, salt, and butter. Shortly before boiling point turn the heat down and add semolina slowly while whisking well. As soon as the semolina thickens take it from the heat. Add the grated Parmesan and the egg, mix well! Pour it onto a baking tray of 35\/35 cm, which you layer with baking paper. Flatten the semolina. Put into the fridge for at least 2 hours. You can prepare this a day ahead and leave it in the fridge overnight. <\/em><br \/><em>Before you fry them up, turn over onto a cutting board and cut into dices.
