Da ich allgemein kein grosser Fan von Teigwaren bin, dann will ich schon extra gute Pasta haben. Schon ewig lange hatten wir keine Carbonara mehr, also dachte ich, heute machen wir die wieder mal, aber als Selbstgemachte Spaghetti mit Auberginen Carbonara. Aber ich hatte noch eine angeschnittene Aubergine und die musste aufgebraucht werden. Klar, ich h\u00e4tte sie in den Salat mischen k\u00f6nnen, aber ich dachte, ich mache kleine frittierte W\u00fcrfelchen daraus und serviere sie in der Carbonara. Und daraus wurde nun unsere Lieblings Carbonara!! Die Auberginen gab ihr einen superguten Geschmack und ganz leichten knack, durch das Frittieren, einfach himmlisch!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>We love homemade pasta! <\/em><em>As I am not a big lover of pasta, I nowadays like to make my own, it is so much better. It\u2019s been quite a while since we have had spaghetti carbonara, so I thought, today I will make them once more. But I still hat half an eggplant in the fridge that needed to be used. Sure, I could have mixed it into the salad, but I thought, why not fry it nice and crunchy and add it? And because of that idea we now have our favorite carbonara recipe!! The eggplants gave the dish a nice crunch, because it is fried and also gives it a nice taste, just delicious! <\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/04\/cau12-1024x683.jpg\" alt=\"Selbstgemachte Spaghetti mit Auberginen Carbonara\" class=\"wp-image-9933\"\/><\/figure>\n\n\n<p style=\"text-align: center;\">Fuer 2 Personen:<br>Pasta selber machen nach diesem Rezept mit nur 200 g Mehl<br>\u00bd Aubergine, in leine W\u00fcrfel geschnitten<br>Oel zum Frittieren<br>100 g Pancetta, klein geschnitten<br>2 Eier<br>1 Eigelb<br>Salz und Pfeffer<br>\u00bd TL Chili Flocken<br>2 Knoblauchzehen, klein gehackt<br>30 g geriebener K\u00e4se, ein Gemisch aus Pecorino und Parmesan<\/p>\n<p style=\"text-align: center;\">Die Auberginen W\u00fcrfel in ca. 3 cm Oel frittieren, bis sie braun und knusprig sind. Absch\u00f6pfen und auf ein K\u00fcchenpapier geben. W\u00e4hrend dessen einen Topf mit gesalzenem Wasser zum Kochen bringen. Zur selben Zeit den Speck mit den gehackten Knoblauchzehen und dem Chili knusprig braten. Die Eier mit dem K\u00e4se, Salz und Pfeffer in einer kleinen Sch\u00fcssel gut verschlagen. Sobald das Wasser kocht, die Spaghetti zugeben und 3-5 Minuten kochen, dann abgiessen, aber kurz davor 1 grossen L\u00f6ffel des Kochwassers zum Speck geben. Die Spaghetti mit dem Speck und den Auberginen gut vermischen, dann sorgf\u00e4ltig die Eiermischung dazu geben und mischen. Bei Spaghetti Carbonara ist es wichtig, dass alles zur selben Zeit gekocht und noch heiss ist, denn sonst werden die Spaghetti durch die kalte Eiersauce zu sehr abgek\u00fchlt!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 2 Persons:<\/em><br><em>Make Pasta like shown in this Recipe with just 200 g Flour<\/em><br><em>\u00bd Eggplant, cut into small dices<\/em><br><em>Oil for frying<\/em><br><em>100 g Pancetta, chopped<\/em><br><em>2 Eggs<\/em><br><em>1 Egg-yolk<\/em><br><em>Salt and Pepper<\/em><br><em>\u00bd tsp Chili Flakes<\/em><br><em>2 cloves of Garlic, chopped<\/em><br><em>30 g grated Cheese, a mix of Pecorino and Parmesan<\/em><\/p>\n<p style=\"text-align: center;\"><em>Fry the eggplant dices in approx. 3 cm of hot oil until golden brown, then remove them and put them on a kitchen paper. Meanwhile put a pot with salted water onto the stove and bring to a boil. At the same time fry the bacon with the garlic and chili until crisp. In a small bowl beat together the eggs and the cheese and season with salt and pepper. As soon as the water boils add the pasta and cook for 3-5 minutes. Drain but add a big spoon full of the cooking water to the bacon. Mix the spaghetti with the bacon and eggplant, then slowly add the egg mixture and mix well.
