Und eine meiner \u201eSch\u00fclerinnen\u201c ist eine gute Freundin, die sehr fleissig lernte und echt ein H\u00e4ndchen f\u00fcr Teig hat. Mit ihr habe ich separat einen Einzelkurs f\u00fcr Ravioli gemacht, nat\u00fcrlich mit Teig einf\u00e4rben und mehreren verschiedenen Ravioli. Eines davon war dann die <a href=\"https:\/\/pane-bistecca.com\/2021\/02\/23\/raviolo-al-uovo-eigelb-im-riesen-raviolo-egg-yolk-xl-raviolo\/\">grosse \u00dcberraschung<\/a> f\u00fcr die M\u00e4nner, als sie zum Essen kamen. Die zweite Art der Ravioli ist nun dieses Rezept, Selbstgemachte zweifarbige Ravioli mit Fleisch-Spinat F\u00fcllung und drei verschiedenen Saucen, und wir haben dann noch eine dritte Art gemacht. Wir waren sehr fleissig, innert 2 Stunden hatten wir 3 verschiedene Ravioli mit drei verschiedenen F\u00fcllungen und drei verschiedenen Saucen produziert! Oh, wie wir uns drauf st\u00fcrzten! Dies ist nun das Rezept der Fleischravioli und dazu zeige ich Euch drei verschiedene Saucen, die passen.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>I have been giving several pasta classes again lately, it seems, they are IN again. One of my students is a good friend of ours, she is very good and knows how to work with dough. <\/em><em>So, I gave a ravioli course just for her! Naturally, also with coloring pasta and so on! <\/em><em>One big surprise for our husbands was the <\/em><em><a href=\"https:\/\/pane-bistecca.com\/2021\/02\/23\/raviolo-al-uovo-eigelb-im-riesen-raviolo-egg-yolk-xl-raviolo\/\">Egg-yolk Ravioli<\/a><\/em><em> served as a starter. This recipe is the second style, and we even did a third one. We were very busy, within 2 hours we had made three different ravioli, with three different fillings and three different sauces! Oh, how we loved them! This is the recipe for the meat ravioli, and I give you three different sauces to serve them with.<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/04\/pas10-683x1024.jpg\" alt=\"Selbstgemachte zweifarbige Ravioli mit Fleisch-Spinat F\u00fcllung und drei verschiedenen Saucen\" class=\"wp-image-9704\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><strong>F\u00fcr die Farbe der Streifen:<\/strong><br \/>1 kleine Rote Beete\/Randen, gekocht, gerieben und zerdr\u00fcckt oder p\u00fcriert, im K\u00fchlschrank gek\u00fchlt. Kann 1 Tag vorher vorbereitet werden.<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcr den Teig (heller Teig, ergibt ca. 30 St\u00fcck):<\/strong><br \/>200 g Pasta Mehl<br \/>2 Eier<br \/><a href=\"https:\/\/pane-bistecca.com\/2018\/10\/24\/pastateig-selbermachen-pasta-dough-handmade\/\">Den Pasta Teig nach diesem Rezept herstellen und ruhen lassen.<\/a><br \/>F\u00fcr den roten Teig:<br \/>100 g Pasta Mehl<br \/>1 Ei <br \/>Wie oberen Teig herstellen, dabei Teil oder ganze Menge der p\u00fcrierten Rote Beete dazu geben. (Falls der Teig zu weich wird, etwas mehr Mehl zugeben)<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcr die Fleisch-Spinat F\u00fcllung:<\/strong><br \/>250 g Rinderhackfleisch<br \/>200 g rohe Schweinswurst (aus der Haut gedr\u00fcckt)<br \/>200 g Ricotta<br \/>50 g Parmesan<br \/>Salz und Pfeffer<br \/>Paprika<br \/>Chili Flocken<br \/>100 g frischer Spinat<br \/>1 Ei<\/p>\n<p style=\"text-align: center;\">Beide Fleischsorten miteinander in wenig Oel braten. K\u00fchlen lassen, dann mit allen anderen Zutaten mischen. Im Mixer p\u00fcrieren und im K\u00fchlschrank ganz durchk\u00fchlen lassen. Die F\u00fcllung kann gut am Tag zuvor zubereitet werden.<\/p>\n<p style=\"text-align: center;\">Den hellen Pasta Teig mit der Pasta Maschine flach rollen, aber nur bis Nummer 3! Dann den roten Pasta Teig gleich weit verarbeiten, diesen aber nach der Nummer 3 durch den Nudelschneider drehen. Die H\u00e4lfte der hellen Pasta Scheiben mit Eiweiss bestreichen und die dunklen Nudeln in gleichem Abstand darauf \u201ekleben\u201c. Diese Paste Scheiben nun etwas bemehlen und nochmals durch die Nummer drei der Pasta Maschine drehen. Dann sorgf\u00e4ltig duch die Nummer 4 und 5 drehen.<\/p>\n<p style=\"text-align: center;\">Legt die fertigen Teig Platten auf bemehlte K\u00fcchent\u00fccher. Nun einen EL der F\u00fcllung in gr\u00f6sseren Abst\u00e4nden auf die Mitte der hellen Teigstreifen geben. Rund um die F\u00fcllung die Pasta mit Eiweiss bestreichen. Die gestreifte Pasta Platte nun mit den Streifen nach oben \u00fcber diese F\u00fcllungen geben und mit den Daumen die Platten rund um die F\u00fcllung gut andr\u00fccken. Die Ravioli zur gew\u00fcnschten Gr\u00f6sse zurechtschneiden. Auf ein bemehltes Backpapier geben. <br \/>In gesalzenem, kochendem Wasser ca. 5 Minuten kochen, dann absch\u00f6pfen.<\/p>\n<p style=\"text-align: center;\"><strong>Kr\u00e4uter-Butter Sauce:<\/strong><br \/>50 g Butter<br \/>\u00bd Bund Petersilie, gehackt<br \/>1 Ast Rosmarin, gehackt<br \/>Etwas Thymian<br \/>Salz und Pfeffer<br \/>Chili Pulver<\/p>\n<p style=\"text-align: center;\">Die Butter in einem kleinen Topf schmelzen, Kr\u00e4uter und Gew\u00fcrze zugeben und kurz gut durchw\u00e4rmen. \u00dcber die gekochten Ravioli giessen.<\/p>\n<p style=\"text-align: center;\"><strong>K\u00e4se-Sahne Sauce:<\/strong><br \/>100 g Frischk\u00e4se<br \/>50 g Saure Sahne<br \/>1 Bund Schnittlauch, gehackt<br \/>Salz und Pfeffer<br \/>Paprika<br \/>Muskatnuss<br \/>Etwas gehackte Petersilie<\/p>\n<p style=\"text-align: center;\">Die Sahne mit dem Frischk\u00e4se langsam erw\u00e4rmen, Schnittlauch dazu geben und alles gut w\u00fcrzen. Die gekochten Ravioli dazu geben, kurz schwenken und servieren. Mit etwas Petersilie bestreuen.<\/p>\n<p style=\"text-align: center;\"><strong>Einfache Tomatensauce (lohnt sich in grossen Mengen herzustellen und einzufrieren!):<\/strong><br \/>1.5 kg reife Tomaten in Achtel geschnitten<br \/>3 Knoblauchzehen, gehackt<br \/>2 EL Oliven\u00f6l<br \/>100 ml Rotwein<br \/>50 g Tomatenmark<br \/>Salz und Pfeffer<br \/>Rosmarin<br \/>Oregano<\/p>\n<p style=\"text-align: center;\">Den gehackten Knoblauch im Oel anbraten, dann die Tomaten zugeben. Kochen lassen, bis die Tomaten zerfallen, dann kann man die Haut der Tomaten einfach rausfischen. So muss man die Tomaten vorher nicht sch\u00e4len. Gut w\u00fcrzen und den Rotwein zugeben. Das Tomatenmark zugeben und 40 Minuten k\u00f6cheln lassen. Die Sauce danach p\u00fcrieren und nochmals 20 Minuten k\u00f6cheln lassen. <br \/>Die Sauce mit den gekochten Ravioli mischen und mit Reibk\u00e4se servieren.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><strong>For the coloring of the red stripes:<\/strong><\/em><br \/><em>1 small Beetroot cooked and grated, then blended, let cool in the fridge<\/em><br \/><em>(can be prepared 1 day ahead)<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the light-colored dough, Base (makes approx. 30 pieces):<\/strong><\/em><br \/><em>200 g Flour<\/em><br \/><em>2 Eggs<\/em><br \/><a href=\"https:\/\/pane-bistecca.com\/2018\/10\/24\/pastateig-selbermachen-pasta-dough-handmade\/\"><em>Make the dough as described in this recipe and let it rest.<\/em><\/a><\/p>\n<p style=\"text-align: center;\"><em><strong>For the red stripes:<\/strong><\/em><br \/><em>100 g Flour<\/em><br \/><em>1 Egg<\/em><br \/><em>Part of the coloring beetroot, if the dough gets too soft add a little flour<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the Meat filling:<\/strong><\/em><br \/><em>250 g ground Beef<\/em><br \/><em>200 g Sausage Meat<\/em><br \/><em>200 g Ricotta<\/em><br \/><em>50 g Parmesan<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Paprika<\/em><br \/><em>Chili Flakes<\/em><br \/><em>100 g Spinach fresh<\/em><br \/><em>1 Egg<\/em><\/p>\n<p style=\"text-align: center;\"><em>Fry the two meats well! Let cool down and then mix with all other ingredients. Pulse in the blender. Put into the fridge! This can also be prepared a day ahead!<\/em><\/p>\n<p style=\"text-align: center;\"><em>Roll out the two doughs, but only to number 3 on your pasta machine! Then roll the red dough through the noodle cuter. Brush the yellow pasta sheet with egg-white and stick the long noodles onto it. Slightly flout this stripe and let it through number 3 again and then carefully up to number 5. Put tbsp size batches of the meat filling into the middle of the light-colored pasta sheet. Brush the sheets with egg-white. Put the striped pasta sheet stripes up on top of this. Press the dough sheets between the fillings well together, then press all around well together. Cut the ravioli into size. Put onto a baking paper.<\/em><br \/><em>Simmer them in salted water for 5 minutes then drain.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Herb-Butter Sauce:<\/strong><\/em><br \/><em>50 g Butter<\/em><br \/><em>\u00bd Bunch Parsley, chopped<\/em><br \/><em>1 twig Rosemary, chopped<\/em><br \/><em>Some Thyme<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Chili Powder<\/em><\/p>\n<p style=\"text-align: center;\"><em>Melt the butter in a small pot add the herbs and let them warm up. Season and pour over the ravioli.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Cheese Cream Sauce:<\/strong><\/em><br \/><em>100 g Cream Cheese<\/em><br \/><em>50 g Sour Cream<\/em><br \/><em>1 Bunch Chives, chopped<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Paprika<\/em><br \/><em>Nutmeg<\/em><br \/><em>Some chopped Parsley<\/em><\/p>\n<p style=\"text-align: center;\"><em>Heat the cream cheese with the sour cream up slowly. Season and add the chives. Add the cooked ravioli and mix a little, serve with chopped parsley.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Simple Tomato Sauce (I always make a big batch of this sauce and freeze a part)<\/strong><\/em><br \/><em>1.5 kg of large Beef Tomatoes cut into 8 parts<\/em><br \/><em>3 cloves of Garlic, chopped<\/em><br \/><em>2 tbsp Olive Oil<\/em><br \/><em>100 ml Red Wine<\/em><br \/><em>50 g Tomato Paste<\/em><br \/><em>Salt and Pepper<\/em><br \/><em>Chili Flakes<\/em><br \/><em>Rosemary<\/em><br \/><em>Oregano<\/em><\/p>\n<p style=\"text-align: center;\"><em>Fry the garlic in the oil then add the tomatoes. Fry until the tomatoes fall apart, then you can peel the skin off easily. No need to peel the tomatoes before cooking. Season well and add the red wine. Add the tomato paste and let simmer for 40 minutes. Then blend the sauce.
