Ich muss zugeben, ich hatte M\u00fche, mich zu entscheiden, denn sie hat viele wirklich deutsche Hausfrauen Rezepte, die ich gerne probiert h\u00e4tte, aber diese Vollkorn Sp\u00e4tzle selbst gemacht, haben gewonnen. Wir Schweizer machen auch gerne <a href=\"https:\/\/pane-bistecca.com\/2018\/11\/13\/spaetzli-chnoepfli-swiss-pasta-dumplings\/\">Sp\u00e4tzli<\/a> (so nennen wir sie), aber ich wollte jetzt einfach einmal so richtig schw\u00e4bische Sp\u00e4tzle zu machen. Dass sie dazu noch aus Vollkornmehl sind, machte es mir doppelt sympathisch!<\/p>\n<p style=\"text-align: center;\">Katja sagt \u201eSeit meine Kinder am Tisch mitessen, wird immer frisch gekocht \u2013 bevorzugt mit frischem Obst und Gem\u00fcse aus Bioanbau. Gemeinsame Mahlzeiten sind wichtige Ereignisse des Tages und ich erschrecke immer wieder, wenn ich h\u00f6re, wie wenig in den Familien gemeinsam gekocht und gemeinsam gegessen wird. Dabei helfen Kinder gerne mit und sind sehr stolz darauf, das Brot mitgeknetet zu haben oder die Erdbeeren f\u00fcr die Marmelade selbst gepfl\u00fcckt zu haben. Ich finde es auch wichtig, dass meine Kinder wissen, dass man Pizza auch ohne Bringdienst haben kann, dass Obst und Gem\u00fcse nicht eingeschwei\u00dft aus dem Supermarkt kommt, sondern im Garten w\u00e4chst und Milch aus der Kuh und nicht aus der T\u00fcte kommt.\u201d Und das ist auch mir sehr wichtig!!!<\/p>\n<p style=\"text-align: center;\">Auch wir haben immer zusammen gegessen, das war Qualit\u00e4ts-Zeit f\u00fcr die Familie. Auch meine Kinder haben mitgeholfen beim Kochen und Backen, deshalb sind sie auch so gute K\u00f6che\/Baecker. Wer also so richtig Gutes, Selbstgemachtes und Bodenst\u00e4ndiges Essen sucht, ist bei Katja auf dem Blog goldrichtig!! \u00dcbrigens gibt\u2019s auf ihrem Blog nicht nur Rezepte! I have to admit I did not know what to choose, as there are so many really easy and delicious German recipes on this blog. But at the end the Spaetzle have won! We Swiss also make <\/em><em><a href=\"https:\/\/pane-bistecca.com\/2018\/11\/13\/spaetzli-chnoepfli-swiss-pasta-dumplings\/\">Sp\u00e4tzli<\/a><\/em><em> (slight difference in pronunciation), but this time I wanted to make the real Swabian Sp\u00e4tzle. As they are made with whole-wheat flour, I am even more intrigued. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Katja says \u201eSince my children eat at the table with us, I always cook fresh \u2013 preferably with fresh fruits and vegetables from BIO cultures. <\/em><em>Shared meals are the highlights of the day and I am often astounded, when I hear from other families how seldom they cook or eat together! Children want to help in the kitchen and are proud when they could help knead a bread dough or if they could pluck the strawberries from the field cooked into a jam. I think it\u2019s important for my kids to know Pizza is not only available through the delivery service but can also be baked at home. They should know vegetables and fruits don\u2019t just come packed in foil but grow in the gardens and farms. And milk is from the cow not from the package in the supermarket.\u201d \u00a0<\/em><em>All this is also very important for me!!!<\/em><\/p>\n<p style=\"text-align: center;\"><em>We also have always had meals together; this is quality time for the family! She also has cookbook revues and writes about the kitchen gadgets. <\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/03\/spa17-1024x683.jpg\" alt=\"Vollkorn Sp\u00e4tzle selbst gemacht\" class=\"wp-image-9366\"\/><\/figure>\n\n\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.fambrenner.de\/Kaffeebohne\/wordpress\/2006\/03\/04\/vollkornspatzle-selbst-gemacht\/\"><strong>Katja\u2019s Familienrezept f\u00fcr 4 Personen:<\/strong><\/a><br>150 g Weizenmehl<br>150 g Roggenmehl (ich habe Vollkornmehl ben\u00fctzt)<br>3 Eier<br>1 TL Salz<br>1 Schuss Oliven\u00f6l<br>225 ml Wasser (ich habe nur 200 ml gebraucht)<\/p>\n<p style=\"text-align: center;\">Den Weizen und den Roggen (oder Vollkornmehl) fein ausmahlen und in einer Sch\u00fcssel gut vermischen. Dann die Eier, das Salz und das Oliven\u00f6l dazugeben. Mit den Knethaken des Handr\u00fchrers auf kleiner Stufe vermischen. Nach und nach das Wasser zugeben und den Mixer auf eine h\u00f6here Stufe einstellen. Alles so lange vermischen, bis der Teig schwer vom Haken f\u00e4llt. Einen gro\u00dfen Topf Salzwasser zum Kochen bringen. (Katja hat ein besonderes Ger\u00e4t f\u00fcr Sp\u00e4tzle, das habe ich nicht, aber ich ben\u00fctze die Kartoffelpresse mit den kleinen L\u00f6chern) Den Sp\u00e4tzleschwob mit kalten Wasser waschen, denn dann geht der Teig besser ab. Wenn das Wasser kocht jeweils 3 EL Sp\u00e4tzleteig in den Schwob geben und durchpressen. Wenn die Sp\u00e4tzle oben schwimmen mit einer Schaumkelle absch\u00f6pfen und in ein Sieb zum Abtropfen geben.<\/p>\n<p style=\"text-align: center;\">Ich habe meine Sp\u00e4tzle mit Rindfleisch Geschnetzeltem und Kefen serviert.<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcr das Rindfleisch Geschnetzelte:<\/strong><br>300 g Rindfleisch<br>200 g Pilze (Ich hatte Mini Auster Pilze)<br>50 g Speckw\u00fcrfeli<br>3 Knoblauchzehen, gehackt<br>\u00bd Zwiebel gehackt<br>\u00bd Bund Petersilie gehackt<br>100 ml Weisswein<br>50 ml Sahne<br>50 g Saure Sahne<br>Salz und Pfeffer<br>Paprika<br>Chili<br>Oliven\u00f6l<\/p>\n<p style=\"text-align: center;\">Die Speckw\u00fcrfeli mit der Zwiebel, den Knoblauchzehen und der Petersilie in etwas Oliven\u00f6l gut anbraten, dann die Rindfleisch St\u00fccke dazu geben, gut durchbraten. Dann die in d\u00fcnne Scheiben geschnittenen Pilze zugeben, alles gut w\u00fcrzen und mit dem Weisswein abl\u00f6schen. Die Sahne zugeben und etwas einkochen lassen, dann die Saure Sahne dazu mischen.<\/p>\n<p style=\"text-align: center;\"><strong>F\u00fcr die Kefen:<\/strong><br>300 g Kefen, F\u00e4den abgezogen<br>3 Knoblauchzehen, gehackt<br>1 EL Oliven\u00f6l<br>Salz und Pfeffer<br>Etwas Wasser<\/p>\n<p style=\"text-align: center;\">Den Knoblauch im Oliven\u00f6l anbraten, dann die Kefen zugeben, mit Salz und Pfeffer w\u00fcrzen! Sobald die Kefen gut gebraten sind etwas Wasser zugeben und zugedeckt ca. 8-10 Minuten d\u00e4mpfen lassen.<\/p>\n<p style=\"text-align: center;\"><strong>Danke Katja, die Sp\u00e4tzle werden nun in unser Familien Repertoire aufgenommen, von Eurer Familie zu unserer!!<\/strong><\/p>\n<p style=\"text-align: center;\"><em>************<\/em><\/p>\n<p style=\"text-align: center;\"><em><a href=\"https:\/\/www.fambrenner.de\/Kaffeebohne\/wordpress\/2006\/03\/04\/vollkornspatzle-selbst-gemacht\/\"><strong>Katja\u2019s Family recipe for 4 Persons:<\/strong><\/a><\/em><br><em>150 g Flour<\/em><br><em>150 g Rye Flour (I used Whole-Wheat Flour)<\/em><br><em>3 Eggs<\/em><br><em>1 tsp Salt<\/em><br><em>1 splatter of Olive Oil<\/em><br><em>225 ml Water (I only used 200 ml)<\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix the flours in a bowl then add eggs, salt, and oil. With the kneading hook of your kitchen machine mix the dough together. Then let the machine work faster and slowly add the water until you have a dough the falls heavily from the spoon. Bring a big pot of salted water to boil. I used my potato masher with the small, holed sieve. Put 2-3 spoons of the dough into it and slowly let the dough drip through the holes into the boiling water. Make this in batches. Wait until the Sp\u00e4tzle float, then remove them with a slotted spoon and repeat.<\/em><\/p>\n<p style=\"text-align: center;\"><em>I served my Sp\u00e4tzle with creamy beef and snow peas.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the Beef Sauce:<\/strong><\/em><br><em>300 g Beef Stripes<\/em><br><em>200 g Mushrooms (I used Mini Oyster Mushrooms)<\/em><br><em>50 g Bacon Bits<\/em><br><em>3 cloves of Garlic, chopped<\/em><br><em>\u00bd Onion, chopped<\/em><br><em>\u00bd Bunch Parsley, chopped<\/em><br><em>100 ml White Wine<\/em><br><em>50 ml Cream<\/em><br><em>50 g Sour Cream<\/em><br><em>Salt and Pepper<\/em><br><em>Paprika<\/em><br><em>Chili<\/em><br><em>Olive Oil<\/em><\/p>\n<p style=\"text-align: center;\"><em>Fry the bacon bits with the onion, garlic, and parsley in some olive oil. Then add the beef stripes and fry well. Add the sliced mushrooms and season well. Then add the white wine. Add the cream and let reduce a little, then mix the sour cream in.<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>For the Snow Peas:<\/strong><\/em><br><em>300 g Snow Peas, cleaned<\/em><br><em>3 cloves of Garlic, chopped<\/em><br><em>1 tbsp Olive Oil<\/em><br><em>Salt and Pepper<\/em><br><em>Some Water<\/em><\/p>\n<p style=\"text-align: center;\"><em>Fry the garlic in the olive oil and add the snow peas. Season with salt and pepper.
