Die letzten paar Monate war es mir nicht m\u00f6glich, dabei zu sein aus verschiedenen Gr\u00fcnden. Zum einen essen wir kaum mehr Brot, die Kinder sind ja nicht mehr bei uns, eine Scheibe pro Person am Morgen ist alles was wir brauchen. Und zum anderen essen wir kein Weissbrot mehr. Und dann kam die Weihnachtszeit, obwohl ohne Kinder und alleine, war doch so viel zu tun und zu organisieren. Wir lieben dunkles, knuspriges Brot! Und das Leinsaat Ecken, aus dem dies monatigen Synchronbacken ist genau so wie wir es lieben. Dank gilt vor allem den Organisatorinnen <a href=\"https:\/\/www.kochtopf.me\/\">Zorra von Kochtopf<\/a> und <a href=\"https:\/\/www.from-snuggs-kitchen.com\/\">Sandra von from Snuggs Kitchen<\/a>. Dank gilt auch <a href=\"https:\/\/chili-und-ciabatta.de\/\">Petra von Chili und Ciabatta<\/a> die ihr Rezept modifiziert von <a href=\"https:\/\/www.hefe-und-mehr.de\/2012\/07\/leinsaat-ecke\/\">Hefe und mehr<\/a> abgeleitet zur Verf\u00fcgung gestellt hat. Das Brot ist echt eine Wucht!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Finally, I can partake at the event <a href=\"https:\/\/www.kochtopf.me\/synchronbacken-januar-2021\">synchronic baking<\/a>! The last few month I was not able to, because of several reasons. Firstly, we only eat very little bread now, the kids are gone, and we just eat 1 slice each. And also, we do not eat white bread anymore, whole-wheat or rye is perfect for us. And then came the holidays and even though we celebrated without our kids we were very busy. We love dork and crusty breads, and these flaxseed breads are perfect. My thank goes to the organizers <\/em><a href=\"https:\/\/www.kochtopf.me\/\"><em>Zorra from Kochtopf<\/em><\/a><em> and <\/em><a href=\"https:\/\/www.from-snuggs-kitchen.com\/\"><em>Sandra from Snuggs Kitchen<\/em><\/a><em>. Thanks also to <\/em><a href=\"https:\/\/chili-und-ciabatta.de\/\"><em>Petra from Chili und Ciabatta<\/em><\/a><em> who gave us the modified recipe from <\/em><a href=\"https:\/\/www.hefe-und-mehr.de\/2012\/07\/leinsaat-ecke\/\"><em>Hefe und mehr<\/em><\/a><em>. <\/em><em>The bread is delicious! <\/em><\/p>\n\n<div class=\"wp-block-image is-style-default\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2021\/01\/syn22-683x1024.jpg\" alt=\"Leinsaat Ecken\" class=\"wp-image-8728\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><strong>Poolish:<\/strong><br>200 g Weizenmehl 550er<br>200 g Wasser<br>1 g Frischhefe<em> (kriege ich nicht, so habe ich hier 1 g Trockenhefe genommen)<\/em><\/p>\n<p style=\"text-align: center;\"><strong>Br\u00fchst\u00fcck:<\/strong><br>150 g Leinsamen<br>200 g Kochendes Wasser<\/p>\n<p style=\"text-align: center;\"><strong>Teig:<\/strong><br>Poolish<br>Br\u00fchst\u00fcck<br>350 g Vollkornweizenmehl<br>450 g Weizenmehl 550er<br>450 g Wasser<br>10 g Frischhefe <em>(habe ich nicht, ich habe 5 g Trockenhefe genommen)<\/em><br>20 g Salz<\/p>\n<p style=\"text-align: center;\">Am Vorabend f\u00fcr den Poolish Hefe, Wasser und Mehl miteinander verr\u00fchren und bei Raumtemperatur etwa 10-12 Stunden (\u00fcber Nacht) gehen lassen. F\u00fcr das Br\u00fchst\u00fcck die Leinsamen mit kochendem Wasser \u00fcberbr\u00fchen, \u00fcber Nacht zugedeckt quellen lassen.<br>F\u00fcr den Hauptteig alle Zutaten au\u00dfer dem Salz in die Sch\u00fcssel der K\u00fcchenmaschine geben. Zuerst 5 Minuten auf Stufe 1 kneten, dann das Salz einrieseln lasen und weitere 8 Minuten auf Stufe 2 kneten, zum Schluss 1 Minute auf Stufe 3 stellen. Der Teig l\u00f6st sich von den Seiten, aber nicht komplett vom Boden der Sch\u00fcssel.<br>Den Teig in eine Teigwanne geben und zugedeckt 1 Stunde gehen lassen. <em>(Da es bei uns eisig kalt ist und meine K\u00fcche gem\u00fctliche 15 Grad hat, habe ich den Ofen etwas angew\u00e4rmt und die Sch\u00fcssel darin, im ausgemachten Ofen, ruhen lassen (Wilma)) <\/em>Ein Backpapier auf Backblechgr\u00f6\u00dfe auf einen gro\u00dfen Teigschieber legen.<br>Den Teig auf die bemehlte Arbeitsfl\u00e4che st\u00fcrzen und in drei St\u00fccke \u00e0 etwa 670 g teilen. Jedes Teil zu einem runden Ball formen und abgedeckt 15-20 Minuten ruhen lassen. Nun die Teigb\u00e4lle mit einem Wellholz an drei Seiten flach dr\u00fccken und diese \u201eFl\u00fcgel\u201c leicht nach au\u00dfen rollen. Den ersten Fl\u00fcgel nach oben auf das Brot klappen, den zweiten Fl\u00fcgel auf den ersten klappen und mit dem dritten abschlie\u00dfen, dabei die entstehenden Ecken sch\u00f6n ausformen. So entsteht ein dreieckiges Brot. Dieses mit den eingeschlagenen Seiten nach unten auf das Backpapier legen. Die anderen zwei Brote genauso ausformen. Die Brote mit Weizenmehl best\u00e4uben und abgedeckt 1 Stunde gehen lassen.<br>Den Backofen mit Backstein und Dampfschale auf 250\u00b0C vorheizen.<br>Die Brote jeweils parallel zu den Seiten einschneiden und mit Dampf in den Backofen einschie\u00dfen. 10 Minuten backen, dann die Temperatur auf 220\u00b0C reduzieren, den Dampf ablassen und weitere 30-35 Minuten backen, bis die Brote goldbraun und knusprig sind. Die Brote herausholen und auf einem Rost ausk\u00fchlen lassen.<br>Im Original wird das Br\u00fchst\u00fcck erst am Schluss unter den Teig geknetet \u2013 ich habe es versehentlich gleich zugegeben. Da das wunderbar geklappt hat, w\u00fcrde ich das wieder so machen. Auch habe ich die fertig geformten Brote zum letzten Gehen mit den Fl\u00fcgeln nach unten gleich auf ein Backpapier gelegt und sie dann ohne nochmaliges Umdrehen eingeschnitten und eingeschossen. (Petra von Chili und Ciabatta)<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><strong>Poolish:<\/strong><\/em><br><em>200 g very strong Bread Flour (550)<\/em><br><em>200 g Water<\/em><br><em>1 g Fresh Yeast<\/em> (I don\u2019t get that so I used 1 g Dried Yeast)<\/p>\n<p style=\"text-align: center;\"><em><strong>Brew Piece:<\/strong><\/em><br><em>150 g Flaxseed<\/em><br><em>200 g boiling Water<\/em><\/p>\n<p style=\"text-align: center;\"><em><strong>Dough:<\/strong><\/em><br><em>Poolish<\/em><br><em>Brew Piece<\/em><br><em>350 g strong Whole-wheat Bread Flour<\/em><br><em>450 g very strong Bread Flour (550)<\/em><br><em>450 g Water<\/em><br><em>10 g Fresh Yeast <\/em>(again I don\u2019t get it here, I used 5 g Dried Yeast)<br><em>20 g Salt<\/em><\/p>\n<p style=\"text-align: center;\"><em>The evening before mix together the ingredients for the poolish and let rest over night at room temperature or at least 10-12 hours. For the brew piece mix the flaxseed with the boiling water and let soak overnight. <\/em><br><em>The next day mix together poolish, brew piece and all ingredients except the salt and knead in the kitchen machine on level 1 for 5 minutes. Then add the salt and knead for another 8 minutes on level 2. Then knead for 1 minute on level 3. The dough will come off the sides but stick to the bottom of the bowl. <\/em><br><em>Let rest covered for 1 hour. (<\/em>As it is very cold here, I preheated the oven to 30 C and let it rest in there but with the oven turned off.)&nbsp;<br><em>Take the dough from the bowl and cut into 3 same size pieces. Form all three into balls. Cover and let rest for 15-20 minutes. Now with rolling pin roll out three sides flat (as shown on pictures) like wings. Fold the first one up over the bread then do the same with the second and also with the third. You will have a triangle. Put it with these folded sides down onto a baking tray covered with a baking paper. Do the same with the other doughs and let rest covered and dusted with some flour for 1 hour. <\/em><br><em>Preheat the oven to 250 C, if you have a baking stone heat it up in the oven. Score the breads on each side with a long cut and put into the oven. Immediately add some water and spray the sides of the oven to produce steam. Bake for 10 minutes, then let the steam escape and bake the breads on 220 C for another 30-35 minutes.<\/em><\/p>\n\n<div class=\"wp-block-image is-style-default\">\n<figure class=\"aligncenter
