Ich bin mit Panettone aufgewachsen. Christstollen war bei uns nie auf dem Tisch, aber Panettone \u2013 Italienisches Weihnachtsgeb\u00e4ck immer! Das kommt logischerweise von meiner italienischen Mutter her, die immer von ihren Verwandten Panettone zur Weihnacht aus Italien zugeschickt kriegte. Und als ich nach Asien zog, hat meine Mutter diese Tradition weitergef\u00fchrt. Ich habe immer zu Weihnachten Panettone erhalten, bis sie auch hier erh\u00e4ltlich wurden.<\/p>\n<p style=\"text-align: center;\">Noch nie habe ich einen gebacken, den die gekauften waren so gut, dass ich mir die M\u00fche nie machen wollte. Dieses Jahr aber \u2013 weil es ein ganz sonderbares Jahr ist und alles total verdreht ist \u2013 habe ich einen gebacken. Dieses Jahr feiern wir ohne unsere Kinder Weihnachten, denn wir sind in Hong Kong und unsere Kinder in Europa und Australien. Reisen ist ein No-Go und so, weil die Kinder nicht kommen, und ich auch keine Tonnen von Plaetzchen fuer die Kunden meines Liebsten backen muss, backe ich halt Panettone! Ich habe dieses Rezept aus dem Internet und vom Geschmack her bin ich zufrieden, aber der Panettone ist mir zu kompakt. Es ist eher ein Kuchen, \u00e4hnlich den Hefegugelhoepfen. Aber er schmeckt trotzdem gut!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Christmas without Panettone is not Christmas for me! I grew up with Panettone, the Stollen was never served, just Panettone! Of course, this is because of my Italian mother, who\u2019s family used to send her Panettone from Italy for Christmas. And when I moved to Hong Kong she went on with this tradition. She sent me Panettone each Christmas until it was available here. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Never have I baked one, as I found the store-bought ones were delicious. But this year \u2013 because it is a topsy-turfy year, and everything is upside down \u2013 I baked one! This year we do not celebrate Christmas with our kids, as we are in Asia and they are in Europe and Australia. Travelling is a no-go! And because my kids are not coming and I also don\u2019t need to bake tons of cookies for my hubby\u2019s clients, I baked Panettone! I found this recipe on the internet; it tastes very good but it is not as light and airy as the real one. It is more like a yeast Gugelhupf in Europe. But we loved it anyway! <\/em><\/p>\n\n<div class=\"wp-block-image is-style-default\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/11\/pan13-683x1024.jpg\" alt=\"Panettone \u2013 Italienisches Weihnachtsgeb\u00e4ck\" class=\"wp-image-8277\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\"><a href=\"https:\/\/authentisch-italienisch-kochen.de\/ricette\/panettone\/\">Das original Rezept findet Ihr hier!<\/a><\/p>\n<p style=\"text-align: center;\">Es ist ein langer Prozess, also viel Zeit reservieren!<br \/>Ich habe die Sultaninen in Rum eingelegt. Da ich keine richtige Panettone Form erhalten habe, hat meiner eben ein Loch in der Mitte, macht ja dem Geschmack keinen Abstrich.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><a href=\"https:\/\/authentisch-italienisch-kochen.de\/ricette\/panettone\/\">You find the original Recipe in German here!<\/a><\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>First Day:<\/em><\/strong><br \/><strong><em>First Dough:<\/em><\/strong><br \/><em>50 g very strong Bread Flour<\/em><br \/><em>17 g fresh Yeast<\/em><br \/><em>60 ml warm Water<\/em><br \/><em>1 Egg-yolk<\/em><br \/><em>10 g Sugar<\/em><\/p>\n<p style=\"text-align: center;\"><em>Put the flour into a bowl, make a hollow and add the Yeast which had been dissolved in the water. Mix in egg-yolk and sugar and mix well. Cover the bowl with a cloth and let rest for 1 hour.<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>Second Dough:<\/em><\/strong><br \/><em>200 g very strong Bread Flour<\/em><br \/><em>4 g fresh Yeast<\/em><br \/><em>25 ml Water<\/em><br \/><em>1 Egg<\/em><br \/><em>25 g Sugar<\/em><br \/><em>30 g Butter<\/em><\/p>\n<p style=\"text-align: center;\"><em>Put the flour into a bowl and make a hollow. Add dough number 1 and with an electrical whisk mix it into a little of the flour. Add the Yeast which had been dissolved in the water. Also add the egg and sugar and knead well. At the end add the butter in small pieces and knead really well. Let rest overnight in the fridge!<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>Second Day:<\/em><\/strong><br \/><em>Start early!<\/em><br \/><em>Take the dough from the fridge and let warm up in room temperature for 1 hour.<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>Third Dough:<\/em><\/strong><br \/><em>300 g very strong Bread Flour <\/em><br \/><em>85 g Sugar<\/em><br \/><em>2 Eggs<\/em><br \/><em>2 Egg-yolk<\/em><br \/><em>150 g Butter<\/em><br \/><em>80 g Sultanas<\/em><br \/><em>20 g candied Orange Peel<\/em><br \/><em>20 g candied Lemon Peel<\/em><br \/><em>\u00bd tsp Salt<\/em><br \/><em>15 g Breadcrumbs<\/em><br \/><em>15 g Butter to grease the baking pan<\/em><br \/><em>20 g Butter flakes<\/em><\/p>\n<p style=\"text-align: center;\"><em>Soak the sultanas in some warm water (I actually used Rum). Melt the 150 g butter and let cool a bit. Put the sugar into a bowl and add 30 ml water and over a bain marie let the sugar melt. Then add the eggs and egg-yolk and let this get warm. Put the flour into a bowl and make a hollow. Add the second dough! With the kitchen machine working add the melted butter, then add the sugar egg mixture and the salt. Let knead for at least 10 minutes. Drain the sultanas and add them together with the candied orange and lemon peel. <\/em><br \/><em>Grease a high Panettone dish with the 15 g butter and sprinkle with breadcrumbs. Add the dough and let rest covered for 6 hours. (the pan should fit 2.5 L) <\/em><\/p>\n<p style=\"text-align: center;\"><em>Heat up the oven to 200 C and put the Panettone in for 5 minutes on fan, then take it out, cut a cross into the top, add the 20 g butter in flakes and put back into the oven. Change to upper and lower heat and turn down to 180 C bake for 55 minutes. Let cool.
