Eigenlob stinkt, aber er ist wirklich unschlagbar geworden. Wichtig ist es, eine gute, kr\u00e4ftige Bouillon zu benutzen. Ich mag keine Gem\u00fcse Bouillon f\u00fcr Risotto, die schmeckt oft nicht nach viel. Deshalb habe ich gestern die Ochsenbouillon von <a href=\"https:\/\/www.oswald.ch\/\">Oswald<\/a> benutzt, sie ist fettfrei und schmeckt sehr kr\u00e4ftig. Die Zugabe von getrockneten Steinpilzen hat ihr \u00fcbriges getan und am Ende haben wir zu zweit den ganzen Topf ausgeschleckt!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>(Advertising through product recognition, cooperation) We love Risotto and so yesterday I made the worlds best Risotto ever! I know, I shouldn\u2019t brag but it was extremely delicious! Important is, to use a really good, strong broth. I do not like to use vegetable broth for the risotto, as they often are very mild and flavorless. That\u2019s why I used now the ox broth from <a href=\"https:\/\/www.oswald.ch\/\">Oswald<\/a>. It is fat free and has a very strong taste. I added some dried porcini mushrooms and it turned out so delicious, we liked every morsel out of the pan!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/10\/ste18-683x1024.jpg\" alt=\"\" class=\"wp-image-7746\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">F\u00fcr 2 Personen:<br>5 Handvoll Risotto Reis (meine italienische Mutter hat den Risottoreis immer als Handvoll abgemessen, 2 Handvoll pro Person, plus 1 dazu am Ende)<br>20 g Butter<br>2 EL Oliven\u00f6l<br>2 Knoblauchzehen, gehackt<br>Salz und Pfeffer<br>Paprika<br>30-50 g getrocknete Steinpilze, in 150 ml warmes Wasser eingeweicht<br>500 ml Mineralwasser<br>3 geh\u00e4ufte TL <a href=\"https:\/\/www.oswald.ch\/de\/bouillonprodukte-ochsenbouillon-fettfrei?attribute179=9\">Ochsenbouillon Pulver von Oswald<\/a><br>20 g Butter<br>Geriebener Parmesan<\/p>\n<p style=\"text-align: center;\">Die 20 g Butter mit dem Oliven\u00f6l in einem Topf schmelzen und den gehackten Knoblauch darin anschwitzen. Den Reis zugeben und mitbraten, bis er glasig ist. Einen Teil des Mineralwassers zugeben und gut vermischen. Ich benutze oft Mineralwasser, es macht den Risotto sehr luftig! Den Risotto w\u00fcrzen und das Ochsenbouillon Pulver dazu mischen. Gut umr\u00fchren und die eingeweichten Steinpilze mit dem Einweichwasser zugeben. Wieder gut vermischen. Je mehr man umruehrt, umso mehr l\u00f6st sich die St\u00e4rke im Reis, das ist es, was den Risotto so cremig macht. Deshalb darf man den Risottoreis auch niemals waschen! Nun nach und nach das restliche Wasser zugeben. Am Ende die restliche Butter und etwas Parmesan dazu mischen. <br>Risotto ist in Italien eine vollst\u00e4ndige Speise. Es wird oft als kleine Portion als Vorspeise serviert, wir essen sie meist alleine als Hauptspeise.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 2 Persons:<\/em><br><em>5 Handful Risotto Rice (my Italian mother measured the risotto always in handfuls. 2 handfuls per person plus one extra at the end)<\/em><br><em>20 g Butter<\/em><br><em>2 tbsp Olive Oil<\/em><br><em>2 cloves of Garlic, chopped<\/em><br><em>Salt and Pepper<\/em><br><em>Paprika<\/em><br><em>30-50 g dried Porcini Mushrooms, soaked in 150 ml warm water<\/em><br><em>500 ml Mineral Water<\/em><br><em>3 heaped tsp <a href=\"https:\/\/www.oswald.ch\/de\/bouillonprodukte-ochsenbouillon-fettfrei?attribute179=9\">Ox Broth Powder from Oswald<\/a><\/em><br><em>20 g Butter<\/em><br><em>grated Parmesan<\/em><\/p>\n<p style=\"text-align: center;\"><em>Heat the 20 g butter and olive oil in a pot and fry the chopped garlic. Add the rice and let fry until it sizzles. The rice will turn translucent. Mix well to avoid burning. Now add some of the mineral water and mix well. I use mineral water because it makes the risotto airy! Season well and add the broth powder. Mix well and add the soaked porcini mushrooms with the soaking liquid! Mix again, the more you mix the better, it will make the starch of the risotto rice come out and make it creamy. That\u2019s why you never ever wash risotto rice! Now add mineral water from time to time until the rice is creamy. At the end add the rest of the butter and some grated Parmesan. <\/em><br><em>In Italy Risotto is either a full meal or a small portion will be served as starter.
