Nat\u00fcrlich versuche ich jedes mal andere zu machen, einmal ist es Schokolade, einmal Vanille und diesmal habe ich eine etwas unkonventionelle Art davon gemacht, ich habe Mandel-Vanilla Eiweiss-Madeleines mit Schokoguss gemacht, \u00e4hnlich den Macaroons und habe sie als Madeleine in der speziellen Form gebacken. Sie sind unglaublich luftig und schmecken hervorragend, sehen aber sehr fade aus, deshalb habe ich sie in Schokolade getunkt.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>I love Madeleines, I like to make them from time to time. Of course, I try to make a different dough each time. One time it is chocolate, next time vanilla and this time I used egg-whites, and almond, similar to a macaroon dough. I baked them in the traditional Madeleine form, so they look nice. They are very airy and delicious, but they looked a bit bland, so I dipped them into chocolate.<\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/09\/mvm11-1024x893.jpg\" alt=\"Mandel-Vanilla Eiweiss-Madeleines mit Schokoguss\" class=\"wp-image-7538\"\/><\/figure>\n\n\n<p style=\"text-align: center;\">Fuer ca 18 Madeleines:<br>3 Eiweiss<br>225 g Puderzucker<br>1 geh\u00e4ufter TL St\u00e4rkemehl<br>1 TL Vanilla Extract<br>350 g gemahlene Mandeln<\/p>\n<p style=\"text-align: center;\">Die Eiweisse steif schlagen, dann den mit dem St\u00e4rkemehl gemischten Puderzucker langsam dazu mischen. Die Mandeln und das Vanilla Extrakt darunter ziehen. Den Teig im K\u00fchlschrank 1 Stunde k\u00fchl stellen.<br>Die F\u00f6rmchen f\u00fcr die Madeleines einfetten und einf\u00fcllen. Im Ofen bei 180 C Grad 15 Minuten backen. Dann die Madeleines sorgf\u00e4ltig aus den F\u00f6rmchen nehmen, wenden und nochmals 5-8 Minuten backen. Der Eiweissteig bleibt sonst unten fast ungekocht und wenn man sie l\u00e4nger einseitig backt, werden sie oben zu dunkel. <br>Die Madeleines ausk\u00fchlen lassen, dann einen Beutel Schokoladenglasur schmelzen, die Madeleines darin eintunken und trocknen lassen.<br>In einer Dose kann man dieses Geb\u00e4ck eine Woche halten.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For approx. 18 Madeleines:<\/em><br><em>3 Egg-white<\/em><br><em>225 g Icing Sugar<\/em><br><em>1 heaped tsp Cornstarch<\/em><br><em>1 tsp Vanilla Extract<\/em><br><em>350 g ground Almond<\/em><\/p>\n<p style=\"text-align: center;\"><em>Beat the egg-whites until stiff, then slowly mix with the cornstarch and icing sugar. Fold the almond and vanilla extract into them. Let the dough rest in the fridge for 1 hour. <\/em><br><em>Grease the madeleine dishes and fill them with the dough. Bake in the oven at 180 C for 15 minutes, then take them carefully from the baking dish, turn them over and bake for another 5-8 minutes. You need to do that, or the dough will stick to the form and not be cooked fully. Let them cool down.
