Und eines meiner liebsten eingelegten Gerichte ist dieses Brinjal! Wuerzig, leicht scharf, weich und einfach passend nicht nur zu indischen Gerichten, Eingelegte Auberginen indische Art! Das Gute an diesem Pickle\/Eingelegtem ist, dass es ganz schnell gemacht ist, aber man kann es nicht ewig halten, es muss also innert 10 Tagen gegessen warden. Bei mir hat es sich nicht gehalten, es war nach dem Abendessen weg!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>India is well known for its condiments given to any meal. Raita, chutney, raisins, coconut, or pickles, just to mention a few. One of my favorites is this brinjal pickle! Tasty, spicy, soft and just perfect not only to Indian dishes. The good thing is, it is quickly made, but you cannot keep it forever, you need to use it within 10 days. Mine was gone by the end of the dinner!<\/em><\/p>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/09\/IMG_2625-683x1024.jpg\" alt=\"Eingelegte Auberginen indische Art\" class=\"wp-image-7460\"\/><\/figure>\n<\/div>\n\n<p style=\"text-align: center;\">\u00a0F\u00fcr ein Halbliter Glas:<br \/>2 Auberginen<br \/>10 Knoblauchzehen<br \/>2 EL geriebener Ingwer<br \/>2 TL Senfsamen<br \/>2 rote Chilies<br \/>100 ml Rotweinessig<br \/>3 EL Zucker<br \/>60 ml Olivenoel<br \/>Salz<br \/>2-3 EL Chili-Garlic Sauce<\/p>\n<p style=\"text-align: center;\">Die Auberginen in grosse Stuecke schneiden und mit 2 TL Salz bestreuen, 10 Minuten stehen lassen. Dann auf K\u00fcchenpapier trockentupfen. <br \/>Die Senfsamen in einer beschichteten Pfanne anr\u00f6sten, bis sie knallen (Achtung: sofort vom Herd nehmen, so springen sie weg!) Zur Seite geben. Aus den Knoblauchzehen, dem Ingwer, den roten Chilies und dem Rotweinessig im Mixer\/Blender eine Paste herstellen. Etwas Oliven\u00f6l in einem Topf aufheizen und die Auberginenst\u00fccke darin anbraten. Die Paste dazugeben und gut vermischen. Den Zucker, Salz und die Senfsamen dazu mischen und 30 Minuten k\u00f6cheln lassen. Dann die Chili-Knoblauch Paste dazu mischen und nochmals 20 Minuten k\u00f6cheln lassen.<\/p>\n<p style=\"text-align: center;\">Heiss in ein Glas einf\u00fcllen und das Oliven\u00f6l dar\u00fcber giessen. Gut verschlossen und unge\u00f6ffnet ist es 2 Wochen haltbar. Einmal ge\u00f6ffnet sollte es innert 10 Tagen konsumiert werden.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For a Jar of half a liter:<\/em><br \/><em>2 Eggplants<\/em><br \/><em>10 cloves of Garlic<\/em><br \/><em>2 tbsp grated Ginger<\/em><br \/><em>2 tsp Mustard Seeds<\/em><br \/><em>2 red Chilies<\/em><br \/><em>100 ml Red Wine Vinegar<\/em><br \/><em>3 tbsp Sugar<\/em><br \/><em>60 ml Olive Oil<\/em><br \/><em>Salt<\/em><br \/><em>2-3 tbsp Chili-Garlic Sauce<\/em><\/p>\n<p style=\"text-align: center;\"><em>Cut the eggplants into chunks and sprinkle them with 2 tsp of salt. Let them sit for 120 minutes and then dry them with kitchen paper. <\/em><br \/><em>Dry roast the mustard seeds until they pop. (Careful: take them immediately from the heat otherwise the fly through the kitchen!) Set aside! Make a paste with the garlic, ginger, chilies, and red wine vinegar in a blender. Heat some olive oil in a pot and fry the eggplants for a short while. Add the paste and mix well. Add the sugar, salt and mustard seeds and let simmer for 30 minutes. Then add the chili-garlic sauce, mix well and cook for another 20 minutes. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Fill hot into a clean jar and pour the olive oil on top.
