Das ist zwar nicht traditionell Italienisch, aber sehr, sehr gut! Dieses Gericht heisst Parmigiana, weil die Leute von Parma sagen, sie haetten es erfunden. Parma ist die Heimat des Parmigiano Reggiano. Macht Sinn! Aber die Sizilianer sagen, sie haetten dieses Gericht erfunden, denn \u201cparmiciana\u201d in Sizilianisch heisst Persien. Es wird diskutiert, dass es eigentlich nichts mit Parma zu tun hat, denn Auberginen waren vor allem in jener Zeit in Sizilien erhaletlich und nicht in Parma! Auf jeden Fall ist es ein wunderbares Gericht, das ich durch Zugabe von Hackfleisch auch fuer meinen Mann schmackhaft gemacht habe. Er meinte, das schmeckt super, darfst du wieder kochen!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Melanzane alla Parmigiana normally is a vegetarian dish. But I added ground beef to it. It is not traditionally done this way, but it was delicious! This dish is called Parmigiana because the people of Parma claim this dish from their region. Parma is the home of Parmigiano Reggiano. Makes sense! But the Sicilian say, it comes from their region. \u201cParmiciana\u201d in Sicilian means Persian, so it would be possible. There is a discussion saying this dish has nothing to do with Parma, because at that time eggplants were not grown in Parma. But in Sicily there were plenty! Anyway, this is a wonderful dish, in which I added ground beef, so my husband would love it too. He said, this is delicious, you can cook it more often! \u00a0<\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/07\/par14-1024x660.jpg\" alt=\"\" class=\"wp-image-7089\"\/><\/figure>\n\n\n<p style=\"text-align: center;\"><strong>Fuer 4 Personen:<\/strong> <br \/>3-4 grosse Auberginen <br \/>Etwas Meersalz <br \/>Etwas Olivenoel <br \/>30 g geriebener Parmesan <br \/>Etwas gehackte Petersilie<\/p>\n<p style=\"text-align: center;\"><strong>Fuer die Fleischsauce:<\/strong> <br \/>500 g Rinderhackfleisch <br \/>400 ml <a href=\"https:\/\/pane-bistecca.com\/2019\/03\/30\/homemade-pizza-sauce\/\">Tomatensauce<\/a> <br \/>2 EL Tomatenmark <br \/>\u00bd Bund Petersilie <br \/>1 kleine Zwiebel, gehackt <br \/>3 Knoblauchzehen, gehackt <br \/>100 ml Wasser <br \/>Salz und Pfeffer <br \/>Chili Flocken <br \/>Paprika <br \/>1 Ast Rosmarin, gehackt <br \/>Etwas Olivenoel<\/p>\n<p style=\"text-align: center;\"><strong>Fuer die Kaesesauce:<\/strong> <br \/>150 g Frischkaese <br \/>200 ml Milch <br \/>20 g geriebener Parmesan <br \/>Muskatnuss <br \/>Pfeffer <br \/>Paprika<\/p>\n<p style=\"text-align: center;\">Die Auberginen in ca 5 mm dicke Scheiben schneiden und auf einem Backblech auslegen. Mit etwas Meersalz bestreuen, wenig Olivenoel darueber traeufeln und im Ofen bei 180 C Grad ca 30-40 Minuten garen, einmal wenden. <br \/>Fuer die Sauce den gehackten Knoblauch, Zwiebel und Rosmarin in wenig Oel andbraten, dann das Hackfleisch dazu geben. Kurz braten, dann das Tomatenmark dazu geben. Gut verruehren, dann das Wasser dazu giessen. Gut wuerzen und die Petersilie dazu geben. Dann die Tomatensauce dazu geben und 40 Minuten koecheln lassen. <br \/>Fuer die Kaesesauce den Frischkaese in die Milch geben, gut wuerzen und langsam aufkoecheln. Unter ruehren den Kaese schmelzen, dann den Parmesan zugeben, damit die Sauce leicht eindickt. <br \/>Die Auberginen alternativ mit den zwei Saucen in eine Gratinschahle einschichten, mit den Saucen enden und den geriebenen Parmesan darauf streuen. Im Ofen bei 180 C Grad ca 40 Minuten backen. Heiss servieren!<\/p>\n<p style=\"text-align: center;\"><strong>Tip:<\/strong> Koche dieses Rezept mit Zucchini oder Pepperoni, oder mit allen drei Gemuesen!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><strong><em>For 4 Persons:<\/em><\/strong> <br \/><em>3-4 big Eggplants<\/em> <br \/><em>Some Sea Salt<\/em> <br \/><em>some Olive Oil<\/em> <br \/><em>30 g grated Parmesan <\/em> <br \/><em>Some chopped Parsley<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>For the Meat Sauce:<\/em><\/strong> <br \/><em>500 g ground Beef<\/em> <br \/><em>400 ml <a href=\"https:\/\/pane-bistecca.com\/2019\/03\/30\/homemade-pizza-sauce\/\">Tomato Sauce<\/a><\/em> <br \/><em>2 tbsp Tomato Paste<\/em> <br \/><em>\u00bd Bunch Parsley<\/em> <br \/><em>1 small Onion, chopped<\/em> <br \/><em>3 cloves of Garlic, chopped<\/em> <br \/><em>100 ml Water<\/em> <br \/><em>Salt and Pepper<\/em> <br \/><em>Chili Flakes<\/em> <br \/><em>Paprika<\/em> <br \/><em>1 twig Rosemary, chopped<\/em> <br \/><em>some Olive Oil<\/em><\/p>\n<p style=\"text-align: center;\"><strong><em>For the Cheese Sauce:<\/em><\/strong> <br \/><em>150 g Cream Cheese<\/em> <br \/><em>200 ml Milk<\/em> <br \/><em>20 g grated Parmesan<\/em> <br \/><em>Nutmeg<\/em> <br \/><em>Pepper<\/em> <br \/><em>Paprika<\/em><\/p>\n<p style=\"text-align: center;\"><em>Cut the eggplants into 5 mm thick slices and put them onto a baking tray. Sprinkle with some sea salt and olive oil and roast in the oven at 180 C for 30-40 minutes. Turn them over once. <\/em> <br \/><em>For the sauce fry the chopped garlic, onion, and rosemary in a little olive oil, then add the ground beef. Fry well, then add the tomato paste and mix. Add the water and season very well. Add the parsley and the tomato sauce and let simmer for 40 minutes.<\/em> <br \/><em>For the cheese sauce pour the milk into a pan and add the cream cheese. Season well and heat slowly up. Whisk well until the cheese has melted, then add the Parmesan. Whisk until the sauce thickens. <\/em> <br \/><em>Now layer the eggplants alternatively with the two sauces into a greased gratin dish and end with the sauces. Sprinkle with the grated Parmesan. Bake in the oven at 180 C for approx. 40 minutes.
