Sie sind perfekt fuer Macaroons oder Merengue, aber ich wollte einmal etwas anderes machen. Amaretti, aber ich hatte nicht genug Mandeln zuhause. Also habe ich es mit dem gestreckt, was ich noch zuhause hatte, Kokosnuss. Sie sind ganz einfach zu machen und schmecken echt herrlich. Aussen knusprig, innen weich und erstnoch glutenfrei!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>I still had some egg-white to use up and wanted to bake with them. They would be perfect for Macaroons, or Merengue, but I wanted to do something new. Amaretti, but again, I did not have enough almond flour at home. So, I needed to use what I had at home, coconut. These cookies are simple and delicious! Crispy outside and chewy inside and of course gluten-free!<\/em><\/p>\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/06\/kmt12-739x1024.jpg\" alt=\"\" class=\"wp-image-6602\"\/><\/figure>\n\n\n<p style=\"text-align: center;\">Fuer ca 20-25 Cookies: <br \/>100 g gemahlene Mandeln <br \/>100 g geraspelte Kokosnuss <br \/>180 g Zucker <br \/>1 Prise Salz <br \/>70 g Eiweiss <br \/>\u00bd TL Zitronensaft <br \/>1 TL Mandelextrakt <br \/>Puderzucker<\/p>\n<p style=\"text-align: center;\">Als erstes ein Backbleck mit einem Backpapier belegen und im Backofen auf 140 C Grad vorheitzen. Wenn das Bleck und das Backpapier schon warm sind, wenn man die Kugeln drauf legt, bleiben die Kugeln ganz und es verhindert das Zerlaufen.<\/p>\n<p style=\"text-align: center;\">Die Mandeln mit der Kokosnuss, dem Zucker und der Prise Salz vermischen. Das Eiweiss mit dem Zitronensaft steif schlagen, dann das Mandelextrakt dazu mischen. Nun das Eiweiss mit den trockenen Zutaten mischen und zusammenkneten. Aus dieser Masse kleine Kugeln formen und diese in Puderzucker rollen. Die Kugeln auf das vorgewaermte Blech geben und im Ofen 25-30 Minuten backen.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For approx. 20-25 Cookies:<\/em> <br \/><em>100 g ground Almonds<\/em> <br \/><em>100 g desiccated Coconut<\/em> <br \/><em>180 g Sugar<\/em> <br \/><em>1 Pinch Salt<\/em> <br \/><em>70 g Egg-white<\/em> <br \/><em>\u00bd tsp Lemon Juice<\/em> <br \/><em>1 tsp Almond Extract<\/em> <br \/><em>Icing Sugar<\/em><\/p>\n<p style=\"text-align: center;\"><em>First pre-heat a baking tray, lined with baking paper in the oven at 140 C. By heating the tray, the cookies will keep their shape and do not spread. <\/em><\/p>\n<p style=\"text-align: center;\"><em>Mix the almonds with the coconut, sugar, and the pinch of salt. Beat the egg-white with the lemon juice until stiff. Then add the almond extract. Mix the dry and the wet ingredients together and knead to a crumbly dough. Then form little balls with this mass, roll them in the icing sugar and put them onto the heated baking tray.
