Da ich ein Auberginoholic bin, passt es wunderbar zu mir und zur <a href=\"https:\/\/volkermampft.de\/\">Kulinarischen Weltreise von Volkermampft<\/a>, die diesen Monat noch in Spanien weilt. Witzigerweise findet man ein ganz aehnliches Rezept auch in Italien! Dazu kann man Reis servieren oder einfach knuspriges Brot!<\/p>\n\n\n<p style=\"text-align: center;\">Da WP durch ein Update alles neu eingerichtet hat, ist meine ganze Formattierung zur Sau und es hat 60 Minuten gedauert, bis dieser Post eingetragen war. Ich bin sauer, das kann man sich sicher vorstellen! Ich hoffe, dass ich mit der Zeit alles wieder hinkriege!<\/p>\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>A simple but delicious recipe from Sevilla. As I am an eggplantoholic it fit to me and as well to our <a href=\"https:\/\/volkermampft.de\/\">culinary world travel from Volkermampft<\/a>. This month we travel Spain and its regions, so it is perfectly placed. Funnily you can find a very similar recipe in Italy! You can serve this dish with rice or with crusty fresh bread. <\/em><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/03\/sch18-683x1024.jpg\" alt=\"\" class=\"wp-image-5657\"\/><\/figure><\/div>\n\n\n<p style=\"text-align: center;\">Fuer 4 Personen:<\/p>\n<p style=\"text-align: center;\">3 Huehnerbrueste<\/p>\n<p style=\"text-align: center;\">1 Zwiebel, fein geschnitten<\/p>\n<p style=\"text-align: center;\">4 Knoblauchzehen, gehackt<\/p>\n<p style=\"text-align: center;\">Olivenoel<\/p>\n<p style=\"text-align: center;\">1 grosse Aubergine, gewuerfelt<\/p>\n<p style=\"text-align: center;\">Salz und Pfeffer<\/p>\n<p style=\"text-align: center;\">Paprika<\/p>\n<p style=\"text-align: center;\">Chili Pulver<\/p>\n<p style=\"text-align: center;\">3 grosse Kartoffeln, in Wuerfel geschnitten<\/p>\n<p style=\"text-align: center;\">4 Tomaten<\/p>\n<p style=\"text-align: center;\">Etwas Wasser<\/p>\n<p style=\"text-align: center;\">1 EL Tomatenmark<\/p>\n\n\n<p class=\"has-text-align-center\">Den Knoblauch und die Zwiebel in etwas Olivenoel in\neiner weiten Pfanne weich braten, dann die Auberginenwuerfel zugeben, gut\ndurchbraten. Die Tomaten in Viertel schneiden und das weiche Innere direkt in\ndie Pfanne loeffeln. Die Viertel dazu geben und ca 5 Minuten koecheln lassen.\nDann laesst sich die Haut der Tomaten ganz einfach loesen, diese wegwerfen. Weiter\nkoecheln mit Zugabe von etwas Wasser, gut wuerzen, bis alles weich wie ein Mus\nist. Nun alles im Blender\/Mixer puerieren. Zur Seite geben.<\/p>\n\n\n\n<p class=\"has-text-align-center\">In der selben Pfanne nochmals etwas Olivenoel erhitzen\nund die Kartoffelwuerfel darin anbraten. Die Huehnerbrueste in Stuecke\nschneiden und dazu geben, mit Salz, Pfeffer, Chili und Paprika wuerzen. Alles\ndurchbraten, dann die Sauce dazu giessen und das Tomatenmark und evt nochmals\netwas Wasser zugeben. Then add the diced eggplant and fry well. Cut the tomatoes into quarters and scoop the soft insides and seeds into the pan. Put the quarters into the pan too and let cook for 5 minutes. Then you can easily peel off the skin, throw it. Let cook, add some water if needed and season well. When everything is mushy pour into a blender and puree. &nbsp;Put aside.<\/em><\/p>\n<p style=\"text-align: center;\"><em>In the same pan heat up some more olive oil and fry the diced potatoes. Add the chicken, cut into smaller pieces and season with salt, pepper, paprika and chili. Fry well, then add the pureed sauce. Add the tomato paste and some water if needed and let simmer covered for approx. 30 minutes. &nbsp;<\/em><\/p>\n<p style=\"text-align: center;\"><em>Serve with rice or crisp fresh
