Sie hat mir damals erklaert, was wichtig ist beim Chutney kochen. Sehr wichtig ist der Zucker. Kein Inder oder Pakistani kocht Chutney mit normalem, raffiniertem Zucker. Man benuetzt Jaggery (oder Jaggeree), ein unraffinierter Rohrzucker, der in ganz Asien benuetzt wird. Ihr koennt diese Zuckerplaettchen auf dem 2. Bild sehen.\u00a0Jaggery kommt in Bl\u00f6cken von Pasten verfestigter Zuckersirupkonzentrate, die auf bis zu 200\u00a0\u00b0C erhitzt wurden, auf den Markt. Er ist viel gesuender als raffinierter Zucker und wird in Indien, Pakistan, Myanmar etc. in Getraenken, Desserts und Eis verwendet.<\/p>\n<p style=\"text-align: center;\">Chutneys werden nicht viel anders als unsere heimischen Marmeladen gekocht, nur sind sie nicht nur suess, sondern meist auch scharf und oft auch suess-sauer. Sie koennen in der Beschaffenheit variieren, von weich und sossig bis zu dick und klebrig. Sie werden immer zu indischen Speisen serviert, aber man kann Chutney auch als Brotaufstrich, zu Braten, oder Grilladen servieren. Hier findet Ihr das <a href=\"https:\/\/pane-bistecca.com\/2018\/10\/21\/tomaten-chutney-mit-aepfeln\/\">Tomaten-Apfel Chutney<\/a>.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>I cooked my first chutney with a Pakistani Chef. She explained to me what is important when cooking chutney. Very important is the sugar! No Indian or Pakistani would ever use white\u00a0refined\u00a0sugar for chutneys. They use Jaggery (or Jaggeree) a non-centrifugal cane sugar used all over Asia. You can see the sugar on the second picture.\u00a0Jaggery is not widely known in western countries, since it is rarely prepared there. Jaggery is predominantly made in\u00a0India, Pakistan, Bangladesh, Sri Lanka and Myanmar. Besides tasting very good, it has many health benefits. Jaggery comes in blocks of hardened sugar syrup\u00a0concentrate, which had been heated to 200 C.\u00a0\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>Chutney&#8217;s are not being cooked much different than jams, but they are not just sweet, the can be spicy, slightly sour and come in a variation of thin and saucy to thick and sticky. They are always served with Indian or Pakistani food, but they are good as well on sandwiches, to roasts or the any\u00a0BBQ\u00a0food. Here you can find the <a href=\"https:\/\/pane-bistecca.com\/2018\/10\/21\/tomaten-chutney-mit-aepfeln\/\">Tomato-Apple Chutney<\/a>.\u00a0<\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-5546\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/03\/apc18-683x1024.jpg\" alt=\"\" width=\"683\" height=\"1024\" \/><\/p>\n<p style=\"text-align: center;\">Fuer 4 kleine Glaeser:<br \/>\n200 g Pfirsichfleisch, kleingeschnitten<br \/>\n400 g Aepfel moeglichst saure, kleingeschnitten (Ich habe die Haut dran gelassen)<br \/>\n1 Zwiebel, gehackt<br \/>\n4 Knoblauchzehen, gehackt<br \/>\n500 ml Wasser<br \/>\n300 g Jaggery (siehe Beschreibung oben)<br \/>\n1\/2 TL Chiliflocken<br \/>\n1\/2 TL Salz<br \/>\n3 EL weisser Essig<\/p>\n<p style=\"text-align: center;\">Das Wasser mit dem Jaggery aufkochen. Ich habe den Jaggery einfach ueber den Topfrand geschlagen, um ihn zu zerbrechen.\u00a0Sobald der Zucker zerlaufen ist, die Fruechte, Zwiebel, Knoblauchzehen, Salz und Chiliflocken zugeben. Alles zum Kochen bringen. Dann auf kleinem Feuer das Chutney 40-50 Minuten koecheln lassen. Die Fluessigkeit kocht langsam ein und die Masse wird dicklich. Falls die Masse noch zu duenn ist, 10 Minuten laenger kochen lassen. Den Essig zugeben und gut vermischen.\u00a0Nun mit einem Kartoffelstampfer die Masse zerdruecken. Das Chutney in saubere Glaeser abfuellen und gut verschliessen.<br \/>\nDas Chutney kann wie Marmelade lange gehalten werden. Offene Chutney Glaeser sollten im Kuehlschrank gelagert werden.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 4 small jars:<\/em><br \/>\n<em>200 g Peaches, chopped<\/em><br \/>\n<em>400 g Apples if possible sour ones, chopped (I left the skin on)<\/em><br \/>\n<em>1 Onion, chopped<\/em><br \/>\n<em>4 cloves of Garlic, chopped<\/em><br \/>\n<em>500 ml Water<\/em><br \/>\n<em>300 g Jaggery (read the description overhead)<\/em><br \/>\n<em>1\/2 tsp Chili Flakes<\/em><br \/>\n<em>1\/2 tsp Salt<\/em><br \/>\n<em>3 tbsp white Vinegar<\/em><\/p>\n<p style=\"text-align: center;\"><em>Bring the water with the Jaggery to a boil. I just broke the sticks over the rim of the pan to make them smaller.\u00a0As soon as the sugar has dissolved add the fruits, onion, garlic, salt and chili flakes. Bring to a boil.\u00a0Then turn the heat down and cook the chutney for 40-50 minutes. The liquid should then have reduced. If it is still too liquid cook for another 10 minutes.\u00a0Add the vinegar and mix well.
