Orangen Pralinen mit kandierten Orangen als Dekoration. Es braucht etwas Zeit und bei uns in Asien kann ich diese Pralinen nur im Winter machen, denn im Sommer ist es viel zu heiss dafuer. Es ist grad Chinesisches Neujahr und ich habe immer wieder etwas Zeit zwischen den Feierlichkeiten und am Ende kann ich die Pralinen auftischen! Orangen bedeuten ja in China Glueck und Reichtum, da passen sie ganz besonders gut!<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>For the Blog event <a href=\"https:\/\/www.kochtopf.me\/blog-event-zitrusfruechte\">Zitrusfruechte<\/a> from <a href=\"https:\/\/www.kochtopf.me\/\">Zorra\u2019s Kochtopf<\/a> I have made something special! Orange pralines with candied orange as decoration! They need some time until they are done, but I have to make them in winter, as here in Asia summers are far to hot to work with chocolate. It\u2019s Chinese New Year now and in between the festivities I have some time to work on them. And at the end I can serve pralines! Oranges are a symbol of luck and prosperity here in China, so it fits perfect!<\/em><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2020\/01\/ora22-683x1024.jpg\" alt=\"Orangen Pralinen mit kandierten Orangen\" class=\"wp-image-5214\"\/><\/figure>\n<\/div>\n\n\n<p class=\"has-text-align-center\"><\/p>\n\n\n\n<p class=\"has-text-align-center\"><strong>Fuer die Pralinen:<\/strong><br>125 ml Sahne<br>250 g gemischte dunkle und helle Schokolade, zerbrochen<br>3 TL Orangenabrieb<br>2 TL Cointreau<br>100 g Dunkle Schokolade fuer die Ummantelung<\/p>\n\n\n\n<p class=\"has-text-align-center\"><strong>Fuer die kandierten Orangen:<\/strong><br>Die Schale von \u00bd Orange<br>200 ml Wasser<br>125 g Zucker<\/p>\n\n\n\n<p class=\"has-text-align-center\">Die Schale einer Orange abziehen, \u00bd davon in kleine feine Streifen schneiden. Diese in heisses Wasser geben und kurz waschen. Wasser abgiessen. In einem Topf das Wasser mit dem Zucker zum Sieden bringen, Hitze runterstellen, sobald aller Zucker aufgeloest ist, die Orangenstreifen dazu geben. Ca 40-50 Minuten koecheln lassen, bis die Fluessigkeit fast eingekocht ist. Die Streifen abgiessen und auf einem Backpapier ausbreiten. Mindestens 12 Stunden trocknen lassen (nicht im Kuehlschrank!)<\/p>\n\n\n\n<p class=\"has-text-align-center\">Fuer die Pralienen die Sahne aufkochen und ueber die 250 g zerbrochene Schokolade giessen, umruehren bis alles geschmolzen ist. Dann den Orangenabrieb und den Cointreau dazu geben und gut mischen. Im Kuehlschrank mindestens 1 Stunde kuehlen lassen. Dann mit einem Melonenausstecher Portionen auf einen Teller, ausgelegt mit Backpapier, geben und wieder im Kuehlschrank mindestens 1 Stunde kuehlen lassen. Dann die Pralinen zwischen kalten Haenden rund formen und in geschmolzener Schokolade drehen. Auf Backpapier geben und mit den kandierten Orangen dekorieren. Im Kuehlschrank lagern.<\/p>\n\n\n\n<p class=\"has-text-align-center\">*************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em><strong>For the Pralines:<\/strong><\/em><br><em>125 ml Whipping Cream<\/em><br><em>250 g mixed dark and Milk Chocolate<\/em><br><em>3 tsp Orange Zest<\/em><br><em>2 tsp Cointreau<\/em><br><em>100 g Dark Chocolate for cover<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em><strong>For the candied Oranges:<\/strong><\/em><br><em>Orange Peel of \u00bd Orange<\/em><br><em>200 ml Water<\/em><br><em>125 g Sugar<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Peel the Orange and cut \u00bd of it into very thin small stripes. Put those into hot water and wash them, drain. In a pot mix the water with the sugar and bring to a boil. Turn heat down and as soon as the sugar has dissolved add the cut orange peel. Let simmer for approx. 40-45 minutes or until the liquid has almost reduced. Drain and put the candied stripes onto a baking paper. Let dry (not in the fridge) for 12 hours.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>For the pralines bring the whipping cream to a boil, then pour it over the broken-up chocolate. Mix until melted. Add the orange zest and Cointreau and mix well. Let cool in the fridge for at least 1 hour. Then form little portions with a spoon or a melon cutter and put them on a plate covered with baking paper. Refrigerate for another hour. Then with cold hands roll the pralines between your hands to make them round.
