Die hart getrockneten mag bei uns keiner wirklich, aber die in Oel eingelegten schmecken gut. Wenn es auf dem Markt feine Tomaten gibt, sollte man, wie ein Eichhoernchen, einmachen, einkochen, haltbar machen fuer den Winter.<br \/>\nTomaten wurden frueher\u00a0<em>Liebesapfel oder Goldapfel<\/em>\u00a0genannt, daher der italienische Name\u00a0<em>Pomodoro<\/em>. Erst im 19. JH wurde der Name Tomate fuer sie gebraeuchlich. Das Wort stammt vom aztekischen Wort\u00a0<em>Xitomatl<\/em>\u00a0ab, aus Suedamerika, dem Herkunftsland der Tomate. Dort wurde sie ca. 200 Jahre v. Ch. schon kultiviert.<br \/>\nIch habe meine Tomaten nur halb getrocknet, so dass sie noch immer sehr geschmackvoll und weich sind. So schmecken sie super auf Brot, zu einer kalten Platte, mit Kaese, oder sogar auf einer Pizza.<br \/>\nEs ist ganz einfach!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Dried tomatoes nowadays are sold everywhere. The hard-dried ones are not really loved by us, we prefer the softer ones, the ones in oil. When you find ripe tomatoes on the market you should do what squirrels do, store them, by canning, preserving, cooking them. You will be thankful for them in winter!<\/em><br \/>\n<em>The tomatoes used to be called\u00a0<\/em>Love apples or Gold Apples<em>, that&#8217;s why the Italians call them\u00a0<\/em>Pomodoro<em>. Only in the 19th Century the name was changed to tomato. This name comes from the\u00a0Aztecan word\u00a0<\/em>Xitomatl<em>, South America, the birthplace of the tomato. There it was cultivated already 200 years b.Ch.\u00a0\u00a0<\/em><br \/>\n<em>I only dried mine halfway through, so to preserve the wonderful sweetish taste of the tomato. They are wonderful with bread, cold meats, cheese or even on the pizza.\u00a0<\/em><br \/>\n<em>And it&#8217;s really easy!<\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-4152\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2019\/11\/get14-683x1024.jpg\" alt=\"\" width=\"683\" height=\"1024\" \/><\/p>\n<p style=\"text-align: center;\">Fuer ein Einmachglas von 500 ml:<br \/>\n1.2 kg Tomaten<br \/>\n4 Knoblauchzehen<br \/>\n1\/2 TL Salz<br \/>\n1\/2 TL getrockneter Oregano<br \/>\n1\/2 TL getrockneter Basilikum<br \/>\n1\/4 TL getrockneter Thymian<br \/>\n2-3 Aestchen frischer Rosmarin<br \/>\n250 ml Weisswein<br \/>\n130 ml weisser Essig (oder Weissweinessig)<br \/>\n1.3 L Wasser<br \/>\nca 300 ml Olivenoel<\/p>\n<p style=\"text-align: center;\">Die Tomaten in Viertel schneiden und die Kerne entfernen. Mit der Haut nach unten auf ein Backblech legen, mit etwas Salz bestreuen und im vorgeheitzten Ofen bei 90 C Grad ca. 6 Stunden trocknen lassen. Dabei einen Kochloeffel in die Ofentuere stecken, so dass ein Schlitz offen bleibt.\u00a0Die Tomaten sind noch leicht weich, wer sie ganz trocknen will, kann das auch machen, doch brauchen sie bestimmt nochmals 2-3 Stunden.<br \/>\nDas Wasser, den Essig und den Weisswein zusammen aufkochen. Die Knoblauchzehen in Scheiben schneiden und zugeben. Dann die Tomaten zugeben und ca 3-5 Minuten darin koecheln lassen. Vom Herd nehmen und 10-15 Minuten ziehen lassen. Abgiessen und die Tomaten auf Kuechenpapier auslegen und trocken tupfen.\u00a0Nun die Tomaten mit den Knoblauchzehen, den Gewuerzen, dem restlichen Salz und dem frischen Rosmarin in das Glas einfuellen. Mit dem Olivenoel auffuellen, bis die Tomaten bedeckt sind.\u00a0Das Glas gut verschliessen und 2-3 Tage gut durchziehen lassen.<br \/>\nSie schmecken super auf Brot, als Zugabe zu kalten Platten und Kaese, als Topping auf Fleisch oder gar auf Pizza.\u00a0Im Kuehlschrank sind sie mindestens 3 Monate haltbar!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For a Jar of 500 ml:<\/em><br \/>\n<em>1.2 kg Tomatoes<\/em><br \/>\n<em>4 cloves of Garlic<\/em><br \/>\n<em>1\/2 tsp Salt<\/em><br \/>\n<em>1\/2 tsp dried Oregano<\/em><br \/>\n<em>1\/2 tsp dried Basil<\/em><br \/>\n<em>1\/4 tsp dried Thyme<\/em><br \/>\n<em>2-3 twigs fresh Rosemary<\/em><br \/>\n<em>250 ml White Wine<\/em><br \/>\n<em>130 ml white Vinegar (or White Wine Vinegar)<\/em><br \/>\n<em>1.3 L Water<\/em><br \/>\n<em>approx. 300 ml Olive Oil<\/em><\/p>\n<p style=\"text-align: center;\"><em>Cut the tomatoes into quarters and remove the seeds. Set them with the skin down onto a baking tray and sprinkle with salt. Dry in the preheated oven at 90 C for approx. 6 hours. Tuck a wooden spoon into the door, so the oven will not close completely.\u00a0The tomatoes should still be slightly soft. If you like them hard you have to bake-dry them at least another 2-3 hours.\u00a0<\/em><br \/>\n<em>Heat up the water with the vinegar and white wine. Cut the garlic into slices and add them. Then add the tomatoes and simmer for 3-5 minutes. Take from the heat and let sit for 10-15 minutes.
