Eine Atlas 150 Pastamaschine mit Ravioliaufsatz! Wunderbar!!! Danke mein liebes Toechterchen Andrea!!! Dies ist mein erstes Rezept mit einer ganz einfachen Kaesefuellung. Es geht mit dieser Maschine ganz schnell! Wer keine solche Maschine hat, kann sie auch einfach von Hand schneiden und fuellen. Selbstgemacht schmeckt halt wirklich so viel besser als gekauft.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Three years ago I got an early Birthday present and of course I had to try it out immediately! An Atlas 150 pasta machine with the Ravioli\u00a0equipment! Fabulous!!! Thank you my darling daughter Andrea!!! This is my first recipe for them and it&#8217;s very easy. With the machine they are made in no time! If you don&#8217;t have a machine like this, just make them by hand. It takes a bit longer but they are so much better than store bought ones.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-3672 size-large\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2019\/09\/ravi18-1024x683.jpg\" alt=\"\" width=\"1024\" height=\"683\" \/><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/pane-bistecca.com\/2018\/10\/24\/pastateig-selbermachen-pasta-dough-handmade\/\">1 Portion Pastateig nach diesem Rezept!<\/a><br \/>\nIch habe den Teig mit der Haushaltsmaschine hergestellt und dann 30 Minuten ruhen lassen.<br \/>\nDer Teig muss nun etwas bemehlt werden, damit er nicht an den Walzen der Maschine kleben bleibt.<br \/>\nDann jeweils 1\/4 des Teiges durch die groesste Oeffnung\u00a0der Walzen geben. Die Nudelplatte in dritteln zusammen falten und nochmals durch die groesste Oeffnung drehen, noch 2 Mal wiederholen. So wird der Teig geschmeidig.<\/p>\n<p style=\"text-align: center;\">Dann die Teigplatte nacheinander durch jede kleinerwerdende Oeffnung drehen, bis und mit Groesse 6. Die Teigplatte nun jeweils in zwei gleichgrosse , gerade geschnittene Platten schneiden.<br \/>\nDen Ravioliaufsatz auf die Maschine stecken und die 2 Teigplatten in die Mitte geben, den Hebel dabei um eine viertel Drehung drehen, so dass die Teige zusammen halten.<\/p>\n<p style=\"text-align: center;\">Fuellung:<br \/>\n250 g Mascarpone<br \/>\n100 g Gorgonzola<br \/>\n30 g Rucola, gehackt<br \/>\nPfeffer<br \/>\nAlle Zutaten gut zusammen mischen.<\/p>\n<p style=\"text-align: center;\">Den Aufsatz fuer die Fuellung auf die Maschine geben und gut einfuellen, Dabei darauf achten, dass die Fuellung gut verteilt ist und nicht nur in der Mitte ist.\u00a0Nun einfach am Griff drehen und die fertigen Ravioli auf ein bemehltes Handtuch geben.\u00a0Ca. 10 Minuten antrocknen lassen und danach die Ravioli sorgfaeltig auseinander nehmen.<br \/>\n<em>Ich habe die Abschnitte kleingeschnitten und als Suppeneinlage serviert!<\/em><br \/>\nDie Ravioli in siedendem Salzwasser 6-8 Minuten kochen, dann abgiessen. Mit beliebiger Sauce servieren, ich habe eine Sahnesauce mit Kaese, Rucola, Chili und Kraeutern dazu serviert. Die kleinen Ravioli eignen sich auch ganz super als Suppeneinlage!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em><a href=\"https:\/\/pane-bistecca.com\/2018\/10\/24\/pastateig-selbermachen-pasta-dough-handmade\/\">1 Portion Pasta dough, use this recipe!\u00a0<\/a><\/em><br \/>\n<em>I made the dough in my kitchen machine and let it rest for 30 minutes.\u00a0<\/em><br \/>\n<em>Use enough flour to make the dough not stick to the machine, but don&#8217;t overuse.\u00a0\u00a0<\/em><br \/>\n<em>Then cut the dough into 4 pieces and roll them through the biggest opening of the flat roller.\u00a0Fold one third from each side in and roll it through the flat roller again. Repeat two more times. This makes the dough smooth.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>Then roll the dough through the flat roller, each time on a smaller size until finished with number 6. Cut the long dough sheet into two same size sheets and cut the ends off to have a rectangle.\u00a0<\/em><br \/>\n<em>Put the Ravioli\u00a0extension\u00a0onto the machine and stick two of the dough sheets into the middle of it. Turn the handle 1\/4 to make them stick together.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>Filling:<\/em><br \/>\n<em>250 g Mascarpone<\/em><br \/>\n<em>100 g Gorgonzola<\/em><br \/>\n<em>30 g Rucola\/Rocket, chopped<\/em><br \/>\n<em>Pepper<\/em><br \/>\n<em>Mix all ingredients together.<\/em><\/p>\n<p style=\"text-align: center;\"><em>Put the plastic filler on top of the dough sheets and fill in the filling. Be careful to fill it evenly not just in the middle,\u00a0or the Ravioli will not be filled properly.\u00a0Now all you have to do is turn the handle. Give the finished Ravioli onto a floured kitchen towel.\u00a0Let the Ravioli dry for 10 minutes and then pull them carefully apart.<\/em><br \/>\nI cut the scraps into\u00a0small\u00a0pieces and\u00a0used them\u00a0in a\u00a0clear broth soup!<br \/>\n<em>Cook the Ravioli in boiling, salted water for approx 6-8 minutes. Drain them carefully. Serve them with any sauce. I made a cream sauce with cheese, rocket, chili and herbs.
