\nNowadays it\u2019s much easier to cook for those who have food allergies. You can find lactose free, gluten free products and egg replacements in the supermarket. Approx. 15 years ago my daughter and I lived 1 year gluten free. It was very hard to get anything without gluten. You had to be careful, what to buy and in restaurants they did not know what gluten free meant. Today it\u2019s a bit easier, as people are aware of these allergies. You can buy lactose free milk product from almonds, soy or coconut, nut allergies are well known, and you find gluten free pastas and products in the shops. But still, I recommend reading the labels and ingredients of everything you buy, as sometimes gluten products are added as starch. \u00a0And what I recognized; allergy products are very expensive!<\/em><\/p>\n
Now we have gluten allergy in our family, and we need to rethink our cooking. These Zoodles are an alternative to pasta and very much as versatile as normal pasta. They taste delicious and are not only for people with gluten allergy.<\/em><\/p>\n \u00a0Fuer 2 Personen: \u00a0Die Zucchini entweder mit dem Spiraler in feine Nudeln schneiden, oder mit dem Sparschaehler mit dem speziellen Schneider. Man kann es auch von Hand machen, braucht aber ziemlich Zeit. Den Knoblauch hacken und die Tomaten in ganz feine Scheiben schneiden. Die Butter in einem Wok schmelzen, den Knoblauch und die Tomaten zugeben und kurz durchbraten lassen. Die Zucchinistreifen zugeben und sehr gut wuerzen. Alles unter ruehren ca 5 Minuten durchbraten lassen, die Zucchini lassen dabei Wasser aus. Die Sahne dazu geben, mischen und den Parmesan rein geben, der dickt die Sauce etwas ein. Die Zucchini koennen alleine, oder mit Fleisch oder Fisch serviert werden.<\/p>\n ************ Cut the zucchini into zoodles with the spiraler or with the slicer, as I did. Fry for a short while. \u00a0Add the zucchini and fry for approx. 5 minutes but turn them over all the time. The zucchini will lose some water. Season very well. Add the cooking cream and mix, then add the grated Parmesan, that will thicken the sauce slightly.
