Erfunden wurde es in Harry&#8217;s Bar in Venedig im Jahre 1950 von Giuseppe Cipriani, fuer die Comtessa Amalia Nani Macenigo, der von ihrem Arzt der Verzehr von gekochtem Fleisch verboten wurde. Chef Giuseppe benannte seine Kreation nach dem Maler Vittore Carpaccio, der fuer seine leuchtenden Rottoene bekannt war und der gerade in jenem Jahr eine Ausstellung in Venedig hatte. Cipriani servierte sein rohes Rindfleisch hauchduenn geschnitten mit einer dicklichen Sauce aus Mayonnaise und Zitronensaft.<br \/>\nHeute serviert man Carpaccio meist nicht mehr mit dieser Sauce, sondern nur noch mit etwas Olivenoel und Parmesansplittern.<br \/>\nCarpaccio nennt man heute nicht mehr nur die Rindfleischgerichte, sondern alle Gemuese, Fruechte, Kaese etc, die hauchduenn aufgeschnitten und meist mariniert sind.<br \/>\nIch habe ein Carpaccio mit Zucchini gemacht, denn Zucchini kann man sehr gut auch roh essen.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>Carpaccio is a well known Italian starter, normally made with raw beef. It was invented in Harry&#8217;s Bar in Venice in the year 1950 by Giuseppe Cipriani. He made it for the Comtessa Amalia Nani Macenigo, who was not allowed to eat any cooked meat. Chef Giuseppe named his creation after the painter Vittore Carpaccio, known for hie use of bright red colors. This painter just had an exhibition in that year in Venice and was quite popular. Cipriani served the meat very thinly cut with a thick sauce of mayonnaise and lemon juice.<\/em><br \/>\n<em>Today Carpaccio is not served with such a thick sauce anymore, but just with some olive oil and shaved Parmesan.<\/em><br \/>\n<em>Also Carpaccio can nowadays be made with anything, not just beef, but all vegetables, fruits, cheese etc, sliced very thin and mostly marinated.<\/em><br \/>\n<em>I made my Carpaccio with zucchini, because they are very delicious served raw.<\/em><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2723 size-large\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2019\/05\/zuc1-1024x768.jpg\" alt=\"\" width=\"1024\" height=\"768\"><\/p>\n<p style=\"text-align: center;\">F\u00fcr 4 Personen:<br \/>\n2-3 Zucchini in feine Scheiben gehobelt<br \/>\n4 Kirschtomaten kleingehackt<br \/>\neinige Kaperbeeren<br \/>\n1\/2 Bund Petersilie gehackt<br \/>\n2 EL Pinienkerne<\/p>\n<p style=\"text-align: center;\">F\u00fcr die Marinade:<br \/>\n1 EL Sojasauce<br \/>\n1 EL hellen Essig<br \/>\n1 EL Balsamico Essig<br \/>\n4 EL Oliven\u00f6l<br \/>\n1 Zitrone, der Saft<\/p>\n<p style=\"text-align: center;\">Die Zucchini mit einem breiten Schaehler der laenge nach in duenne Scheiben schneiden. Auf einen Teller drapieren. Die Kirschtomaten ganz klein hacken und darueber streuen.&nbsp;Die Kapernbeeren und die Pinienkerne darueber verteilen. Die Petersilie hacken und darueber streuen. Die Zutaten zur Marinade gut vermischen, am besten in einem Glas, das man schuetteln kann und dar\u00fcber giessen. Die gehackten Tomaten und Petersilie dar\u00fcber streuen und zuletzt die Pinienkerne dazu geben. Cirka 10 Minuten marinieren lassen, damit die Zucchini weich werden.&nbsp;Dazu serviert man knuspriges Ciabatta Brot.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 4 Persons:<\/em><br \/>\n<em>2-3 Zucchini, sliced very thinly<\/em><br \/>\n<em>4 Cherry Tomatoes, chopped<\/em><br \/>\n<em>some Caper Berries<\/em><br \/>\n<em>1\/2 Bunch Parsley, chopped<\/em><br \/>\n<em>2 tbsp Pine-nuts<\/em><\/p>\n<p style=\"text-align: center;\"><em>For the Marinade:<\/em><br \/>\n<em>1 tbsp Soy Sauce<\/em><br \/>\n<em>1 tbsp white Vinegar<\/em><br \/>\n<em>1 tbsp Balsamic Vinegar<\/em><br \/>\n<em>4 tbsp Olive Oil<\/em><br \/>\n<em>1 Lemon, the Juice<\/em><\/p>\n<p style=\"text-align: center;\"><em>Slice the zucchini with a peeler very thinly, put them onto a big plate. Chop the cherry tomatoes and sprinkle them over the zucchini. Add the caper berries and chopped parsley. Put the ingredients of the marinade into a jar and shake well together.&nbsp; Pour over the zucchini. Let marinade for approx. 10 minutes, to soften the zucchini.
