Deshalb essen wir auch oft Fisch, jeglichen Fisch, egal wie gekocht.\u00a0Diesmal habe ich einen feinen Bio-Lachs gekauft und diesen mit Kartoffeln, Spinat und einem feinen Safranschaum serviert. Wir haben geschlemmt wie in einem 5-Sterne Restaurant!<br \/>\nObwohl das Menue kompliziert aussieht, ist es sehr schnell gekocht und sehr einfach. Einzig das Aufschaeumen der Sauce ist etwas schwierig, weil daraus eher eine Sauce, als ein Schaum entsteht. Aber sie schmeckt sehr fein!<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>I believe my readers know by now that I am a big fish fan. That&#8217;s why I cook very often fish for dinner. It doesn&#8217;t matter what fish and how it is cooked, I love them all! This time I found this beautiful Bio Salmon and I served it with some potatoes, spinach and a beautiful light saffron foam. We dined as if we were in a 5-star restaurant!<\/em><br \/>\n<em>I know the menu looks complicated, but it is cooked very quickly and it is so easy.\u00a0<\/em><br \/>\n<em>The foaming of the sauce is the hard part, if you don&#8217;t foam it right away it might just end up as a simple sauce. Never mind, the sauce is delicious!<\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-2614 size-large\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2019\/05\/saf14-1024x575.jpg\" alt=\"\" width=\"1024\" height=\"575\" \/><\/p>\n<p style=\"text-align: center;\">Fuer 2 Personen:<br \/>\n2 Bio-Lachs Filets a je ca 150-180 g<br \/>\nCa 12 Mini Kartoffeln, gekocht<br \/>\n500 g frischer Spinat<br \/>\n2 Knoblauchzehen<br \/>\n2&#215;20 g Butter<br \/>\nSalz und Pfeffer<br \/>\nfrischer Dill<br \/>\n\u200b<br \/>\nDen Fisch wuerzen und mit etwas Dill belegen. In einer weiten Pfanne 20 g Butter schmelzen und die Lachsfilets mit der Haut nach unten reingeben. Deckel auflegen und den Fisch bei mittlerer Hitze ca 7 Minuten braten, dann wenden. 3 Minuten auf der Fleischseite braten, dann wieder sorgfaeltig wenden. Die Gekochten Kartoeffelchen zugeben und mitbraten lassen.<br \/>\nFuer den Spinat den gehackten Knoblauch in den 20 g Butter braten. Portionenweise den Spinat zugeben und zusammenfallen lassen. Mit Salz und Pfeffer wuerzen und immer wieder wenden, bis alles zusammengefallen ist.<br \/>\nDen Spinat in ein Abtropfsieb geben, um das Wasser abzugiessen.<\/p>\n<p style=\"text-align: center;\">Safranschaum:<br \/>\n1\/2 kleine Zwiebel, fein gehackt<br \/>\n20 g Butter<br \/>\n1 Beutel Safran<br \/>\n150 ml Bruehe<br \/>\n100 ml Sahne<br \/>\nSalz und Pfeffer<\/p>\n<p style=\"text-align: center;\">Die Butter in einem kleinen Topf schmelzen und die gehackte Zwiebel darin weich daempfen. Den Safran zugeben und vermischen. Die Bruehe zugiessen, mit Salz und Pfeffer wuerzen und auf die Haelfte einkochen lassen.\u00a0Den Topf vom Herd nehmen und die Sahne zugiessen, sofort mit dem Mixer aufschaeumen und zum Fisch servieren.<\/p>\n<p style=\"text-align: center;\">************<\/p>\n<p style=\"text-align: center;\"><em>For 2 Persons:<\/em><br \/>\n<em>2 Bio-Salmon Fillets at approx. 150-180 g each<\/em><br \/>\n<em>\u00a012 Mini Potatoes, cooked<\/em><br \/>\n<em>500 g fresh Spinach<\/em><br \/>\n<em>2 cloves of Garlic<\/em><br \/>\n<em>2 x 20 g Butter<\/em><br \/>\n<em>Salt and Pepper<\/em><br \/>\n<em>fresh Dill<\/em><br \/>\n<em>\u200b<\/em><br \/>\n<em>Season the fish and add some dill. Melt the butter in a wide pan and put the fish, skin down, into it.\u00a0<\/em><br \/>\n<em>Cover the pan and let fry on medium heat for approx 7 minutes. Turn the fish over and fry for another 3 minutes, then turn carefully over again.\u00a0Add the cooked potatoes and let them fry with the fish.\u00a0<\/em><br \/>\n<em>For the spinach melt the butter in a wide pan and fry the chopped garlic. Now add some of the spinach and turn over until it falls together, add the rest of the spinach and season with salt and pepper. When everything has fallen together, drain the spinach from the water.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\"><em>\u200bSaffron Foam:<\/em><br \/>\n<em>1\/2 small Onion, chopped finely\u00a0<\/em><br \/>\n<em>20 g Butter<\/em><br \/>\n<em>1 Bag of Saffron<\/em><br \/>\n<em>150 ml Broth<\/em><br \/>\n<em>100 ml Whipping Cream<\/em><br \/>\n<em>Salt and Pepper<\/em><\/p>\n<p style=\"text-align: center;\"><em>Melt the butter in a small pot and fry the chopped onion in it. Add the saffron and mix well. Add the broth and let reduce to half.\u00a0Take the pot from the heat and add the whipping cream.
