Hier sind meine Green Pepper and Chili Pickles.&nbsp;<br>Wir waren in China und da hatten unsere Freunde grosse Freude an den scharfen Zutaten, wie Chilisaucen, Pickles etc. Also dachte ich, warum nicht gruene Pfefferschoten und Chilies einmachen, dann koennen sie die zu ihrem Fleisch nehmen und haben die gewuenschte Schaerfe dazu.<br>Die Chinesen sind Meister in eingelegten kleinen Zutaten, meist sind sie als Gewuerze in kleinen Schaehlchen auf dem Tisch und jeder nimmt sich das, was er zu seinem Essen will.<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>************<\/em><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2019\/03\/chi10-1-1024x683.jpg\" alt=\"Green Pepper and Chili Pickles\" class=\"wp-image-2228\"\/><\/figure>\n<\/div>\n\n\n<p class=\"has-text-align-center\"><em>We should start the BBQ season &#8211; if the weather would agree to it &#8211; it&#8217;s raining and raining and raining. So, I am preparing what can be cooked or canned in advance. I am quite busy. Our China travelling friends liked the spices in the many dishes we had in Yunnan. So, I thought, why not pickle chilies and green peppers. They can have these pickles with their meat.<\/em><br><em>The Chinese are masters in pickling! They have all kinds of pickles and sauces ready on their table and you just take whatever you wa<\/em><em>nt with your bite.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\">Fuer ein grosses Glas:<br>200 g Gruene Pfefferschoten<br>50 g gruene Chilies<\/p>\n\n\n\n<p class=\"has-text-align-center\">Zum Mitkochen:<br>3 El Oel<br>1 Tl Koriandersamen<br>1 Tl Fenugreek\/Bockshornklee Samen<\/p>\n\n\n\n<p class=\"has-text-align-center\">Zum Auffuellen:<br>2 El Coriander Samen<br>2 El schwarze Senfsamen<br>4-6 El weissen Essig<br>2 Zitronen den Saft<br>1\/2 Tl Turmeric\/Kurkuma Pulver<br>1,5 Tl Salz<\/p>\n\n\n\n<p class=\"has-text-align-center\">Die Pfefferschoten und die Chilies in schmale Raedchen schneiden. Das Oel in einer weiten Pfanne erhitzen und Samen zum Mitkochen im Oel anbraten. Dann die Schoten und Chilies reingeben, gut durchbraten bei hoher Hitze fuer ca 3-5 Minuten, bis alle Fluessigkeit, die entstanden ist, verdampft ist. Kurz etwas auskuehlen lassen.<br>Unterdessen die Samen in den Zutaten zum Auffuellen im Moerser leicht aufknacken, sie muessen nicht pulverisiert sein. Dann diese mit den restlichen Zutaten mischen. Die gekochten Schoten und Chilies in ein Glas fuellen, die Fluessigkeit darueber giessen, das Glas gut verschliessen und gut durch schuetteln.<br>Die Pickles koennen im Kuehschrank bis 3 Monate aufbewahrt werden.<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>For one big glass:<\/em><br><em>200 g green Peppers<\/em><br><em>50 g green Chilies<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>To cook with them:<\/em><br><em>3 tbsp Oil<\/em><br><em>2 tsp Coriander Seeds<\/em><br><em>1 tsp Fenugreek seeds<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>To fill the glass with:<\/em><br><em>2 tbsp Coriander Seeds<\/em><br><em>2 tbsp black Mustard Seeds<\/em><br><em>4-6 tbsp white Vinegar<\/em><br><em>2 Lemons, the juice<\/em><br><em>1\/2 tsp Turmeric powder<\/em><br><em>1,5 tsp Salt<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Cut the peppers and chilies into small rounds. Heat the oil in a flat pan and add the coriander and fenugreek seeds. Fry them a short while then add the peppers and chilies. Let cook on high heat for 3-5 minutes, until all liquid, that is building up, evaporates.&nbsp; Let cool for a short while.<\/em><br><em>Meanwhile crack the seeds with a mortar and pestle; they do not have to be pulverized, just cracked. Then mix them with the rest of the ingredients. Fill the cooked peppers and chilies into a glass and add the liquid. Close the jar and shake it well.<\/em><br><em>The pickles can be kept for up to 3 month in the fridge.<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\"
