Flammkuchen ist eine Spezialitaet aus dem Elsass, der benachbarten Pfalz und aus Baden. Der Elsaesser Flammkuchen besteht aus einem duennen Brotteig, und dem traditionellen Belag aus Saurer Sahne, Zwiebeln und Speck.<br>Was ich sehr interessant finde, ist die direkte Uebersetzung ins Englische, die Flammkuchen gerne &#8220;French&nbsp;Tarte flamb\u00e9e&#8221; nennen. Flammkuchen wird aber nicht flambiert, sondern traditionell im Holzofen auf Flammen gebacken.<br>Der Brotteig kann mit oder ohne Hefe gebacken werde, ich bevorzuge den ohne. Es wird kein Kaese auf den Flammkuchen gegeben, die cremige Unterlage besteht nur aus saurer Sahne!<br>Heutzutage gibt es wie bei der italienischen Pizza keine Grenzen zur Kreativitaet der Belaege. So sieht man oft auch Flammkuchen mit Kuerbis, Sauerkraut, Lauch oder sogar Tomaten und Mozzarella (ich sagte ja, Pizza) oder suesse Flammkuchen mit Aepfeln oder Birnen.<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Flammkuchen is probably the French-German version of Italian Pizza. It&#8217;s not that different. Flammkuchen (Tarte flamb\u00e9e) is a&nbsp;specialty&nbsp;from Alsace and&nbsp;the German&nbsp;neighbor&nbsp;Pfalz (Palatinate) and Baden. It consists of a thin bread dough and sour cream, onion and bacon on top.&nbsp;<\/em><br><em>I find it very interesting to see the direct translation into English. It&#8217;s called&nbsp;Tarte flamb\u00e9e, but&nbsp;this tarte is not being&nbsp;flamb\u00e9ed, but baked on top of flames in a wood fired oven.&nbsp;<\/em><br><em>The bread dough can be made with or without yeast; I prefer the one without.&nbsp;<\/em><br><em>There is never any cheese on the Flammkuchen, for creaminess they use sour cream.&nbsp;<\/em><br><em>As just like with Pizzas, nowadays, with Flammkuchen there is no stopping your creativity in what to use to top the dough. So, you can find restaurants serving Flammkuchen with pumpkin, Sauerkraut, leek or even tomato and mozzarella (I told you, just like Pizza) or even sweet Flammkuchen with apples or pears.&nbsp;&nbsp;&nbsp;<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"738\" class=\"wp-image-2099 size-large\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2019\/03\/flammku11-1024x738.jpg\" alt=\"\"><\/p>\n\n\n\n<p class=\"has-text-align-center\">Fuer den Brotteig:<br>200 g Weissmehl<br>1 Prise Salz<br>2 EL Oel<br>125 ml Wasser<\/p>\n\n\n\n<p class=\"has-text-align-center\">Daraus einen geschmeidigen Teig kneten. Danach ganz duenn auswallen.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Fuer den Belag:<br>1 EL Butter<br>150 g Speck, kleingeschnitten oder Wuerfelchen<br>2 Zwiebeln in duenne Scheiben geschnitten<br>200 g Saure Sahne<br>Salz und Pfeffer<br>evt 1-2 EL Sahne, falls die Saure Sahne dick ist.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Die Butter in einer flachen Pfanne schmelzen und die Zwiebeln darin anschwitzen, den Speck zugenem und kurz etwas knusprig kochen.&nbsp;(Traditionell wird das nicht gemacht, die Zwiebeln kommen roh auf den Kuchen. Jedoch finde ich den Kuchen viel besser, wenn die Zwiebeln nicht so scharf schmecken) Die Saure Sahne wuerzen und evt. mit der Sahne etwas verduennen. Die Saure Sahne auf dem Teig verstreichen. Die Zwiebeln und den Speck darueber geben und den Flammkuchen im vorgeheitzten Ofen bei 250 C Grad 10-15 Minuten knusprig backen.<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>************<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>For the Bread Dough:<\/em><br><em>200 g Flour<\/em><br><em>1 Pinch of Salt<\/em><br><em>2 tbsp Oil<\/em><br><em>125 ml Water<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Knead this into a nice dough and roll it out very thin.&nbsp;<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>For the Topping:<\/em><br><em>1 tbsp Butter<\/em><br><em>150 g Bacon, chopped or use bacon bits<\/em><br><em>2 Onion, sliced<\/em><br><em>200 g Sour Cream&nbsp;<\/em><br><em>Salt and Pepper<\/em><br><em>You might add 1-2 tbsp of Whipping Cream to the sour cream to thin it.&nbsp;<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Melt the butter in a flat pan and cook the sliced onion in it, then add the bacon bits and cook them slightly crisp.&nbsp;<\/em><br><em>(Traditionally this is not done, the onion will be put onto the dough uncooked, but I like them soft without the sharp taste of raw onion.) Season the sour cream with salt and pepper and thin it a little with whipping cream if needed.&nbsp;<\/em><br><em>Spread it onto the dough.
