Ich mag starkes Brot, dieses hier ist wunderbar im Geschmack und ziemlich schwer. Es laesst sich ohne weiteres mehrere Tage frisch halten. Es passt sehr gut zu Aufschnitt und Kaese!<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>This is an easy and healthy bread recipe with cracked wheat, cracked rye and oats. I like strong tasting breads, this one has a very good taste and is quite heavy. But it keeps fresh for a few days.&nbsp;It is perfect to cold cuts and cheese!<\/em><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2019\/03\/brot7-683x1024.jpg\" alt=\"Gesundheitsbrot\" class=\"wp-image-1981\"\/><\/figure>\n<\/div>\n\n\n<p class=\"has-text-align-center\"><\/p>\n\n\n\n<p class=\"has-text-align-center\">70 g Weizenschrot<br>70 g Roggenschrot<br>1 El Essig<br>210 g Wasser<br>Diese Zutaten zusammen mischen und im Kuehlschrank ueber Nacht einweichen lassen.<\/p>\n\n\n\n<p class=\"has-text-align-center\">250 g Weisses Brotmehl<br>5 g Trockenhefe<br>1 Tl Salz<br>70 g Haferflocken<br>70 g warme Milch<\/p>\n\n\n\n<p class=\"has-text-align-center\">Diese Zutaten zum eingeweichten Schrot geben und alles ca 10 Minuten mit der Kuechenmaschine oder 20 Minuten bei Hand kneten, bis ein elastischer Teig entstanden ist.&nbsp;Den Teig zugedeckt an einem warmen Ort ca 2 Stunden lang gehen lassen. Da der Teig relativ schwer ist, geht er nicht riesig auf.<br>Den Teig nochmals durchkneten und dann in eine lange Rolle formen. In eine gefettete und bemehlte Cakeform geben und zugedeckt nochmals 20 Minuten gehen lassen.<br>Unterdessen den Ofen auf 250 C Grad vorheitzen.&nbsp;Das Brot 10 Minuten bei 250 C Grad, mit Dampf, (Waende und Boden des Ofens mit einer Blumenspritze einspritzen), dann auf 220 C Grad reduzieren, nochmals 10 Minuten backen, dann auf 200 C Grad reduzieren und noch 20 Minuten fertig backen.<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>70 g Cracked Wheat<\/em><br><em>70 g Cracked Rye<\/em><br><em>1 tbsp Vinegar<\/em><br><em>210 g Water<\/em><br><em>Mix these ingredients together and let soak overnight in the fridge.&nbsp;<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>250 g strong white Bread Flour<\/em><br><em>5 g Dry Yeast<\/em><br><em>1 tsp Salt<\/em><br><em>70 g Oats<\/em><br><em>70 g warm Milk<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Mix those ingredients with the soaked dough and knead by machine for 10 minutes, or by hand approx 20 minutes, until you have an elastic dough.&nbsp;Cover the dough and let rise for 2 hours. As the ingredients of the dough are heavy it will not rise that much.&nbsp;<\/em><br><em>Knead the dough again and form a long roll. Put it into a greased, floured cake dish and cover.
