Man braucht keine Pastamaschine, keine K\u00fcchenmaschine, nichts als seine H\u00e4nde!<br>Hier in diesem Eintrag zeige ich euch Schritt f\u00fcr Schritt, wie man es macht! Ihr werdet sehen, dass es sich lohnt und von nun an macht ihr eure eigene Pasta!<\/p>\n\n\n\n<p class=\"has-text-align-center\">Wer aber eine Nudelmaschine hat, dem zeige ich, wie man damit feine Nudeln machen kann.<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>It&#8217;s actually no big work to make your own pasta dough!<\/em> <em>You don&#8217;t need a pasta machine, no kitchen machine, nothing but your hands!<\/em><br><em>Here I show you step by step how to get the best pasta ever! Ich habe Pasta f\u00fcr 3 Personen gemacht. Es ergibt reichlich Pasta, es ist als Vollmahlzeit gedacht.<\/h4>\n\n\n\n<p class=\"has-text-align-center\">300 g feines Semolina Mehl (oder spezielles Pasta Mehl)<br>3 Eier<br>1 Prise Salz<br>2 -3 EL Oliven\u00f6l<\/p>\n\n\n\n<p class=\"has-text-align-center\">Das Mehl auf eine Arbeitsflaeche geben und eine Mulde in der Mitte machen. Die Eier, das Salz und Olivenoel in die Mulde geben.<br>Mit einer Gabel die Masse in der Mulde leicht aufschlagen und dann in Kreisbewegungen von der Mitte nach Aussen das Mehl einarbeiten.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Sobald die Masse zusammen kommt, von Hand weiter arbeiten.<br>Den Teig nun ca 10 Minuten von Hand kneten, bis er richtig sch\u00f6n elastisch und nicht mehr klebrig ist. Falls er zu trocken ist, die hand leicht befeuchten, falls er zu sehr klebt, sehr wenig Mehl zugeben und einkneten.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Man knetet in regelm\u00e4ssigen Bewegungen:<br>&#8211; von oben nach unten falten<br>&#8211; mit der Handfl\u00e4che von sich dr\u00fccken<br>&#8211; 90 Grad Drehung<br>&#8211; von oben nach unten falten<br>&#8211; mit der Handfl\u00e4che von sich dr\u00fccken<br>&#8211; 90 Grad Drehung<br>&#8211; wiederholen bis der Teig sch\u00f6n elastisch ist<\/p>\n\n\n\n<p class=\"has-text-align-center\">Den Teig in Frischhaltefolie wickeln und 30 Minuten ruhen lassen. Ich habe ihn im Kuehlschrank ruhen lassen, da es bei uns relativ warm ist.<br>Dann den Teig in 2 Teile schneiden. Er sollte wie ein Brotteig Luftblasen haben.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-text-align-center\">Kneten war die leichte Aufgabe, jetzt kommen die Armmuskeln zum Zug!<\/h4>\n\n\n\n<p class=\"has-text-align-center\">Mit einem Wallholz wird nun der Teig auf einer ganz leicht mit Pastamehl bestreuten Arbeitsflaeche ausgewallt.<\/p>\n\n\n\n<p class=\"has-text-align-center\">&#8211; Man arbeitet von unten nach oben, da man so etwas Druck ausueben kann.<br>&#8211; Man drueckt das Wallholz mit der Handflaeche auf den Teig und rollt es nach oben.<br>&#8211; Mit der anderen Hand haelt man den Teig unten fest, indem man sie leicht auf den Teig legt. So rutscht er nicht!<br>&#8211; Nach jedem Mal rollen, loest man den Teig von der Arbeitsflaeche und dreht ihn um 90 Grad.<br>&#8211; Wieder mit einer Hand sorgfaeltig festhalten und mit dem Wallholz ausrollen.<br>&#8211; wiederholen, bis der Teig duenn und fast durchsichtig ist. Vergesst nicht, dass der Teig beim Kochen aufgeht und er deshalb so duenn wie moeglich sein sollte.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Den ausgewallten Teig nun nicht zu satt aufrollen und mit einem sehr scharfen Messer in gleich breite Scheiben schneiden. Es ist jedem selbst \u00fcberlassen, wie breit er seine Pasta m\u00f6chte, meine war 5-6 mm breit.<br>Beim ersten Mal w\u00fcrde ich empfehlen, nicht zu schmale Nudeln zu schneiden, da man sehr sorgf\u00e4ltig mit d\u00fcnnen Nudeln umgehen muss. Breitere Nudeln sind etwas einfacher zu handhaben.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Die geschnittenen Roellchen sorgfaeltig aufmachen und auf einem Kuechentuch, das mit Pastamehl bestreut ist, auslegen.<br>Man kann die Pasta soweit vorbereiten und dann ohne weiteres ein paar Stunden trocknen lassen. Ich w\u00fcrde sie aber noch am selben Tag kochen. (bitte weiter unten weiter lesen!)<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-text-align-center\"><em>You measure 100 g Flour (fine Semolina Flour) per Person and 1 Egg. I made Pasta for 3 Persons. It&#8217;s a full meal, there is more than enough pasta.<\/em><\/h4>\n\n\n\n<p class=\"has-text-align-center\"><em>300 g fine Semolina Flour (or the special Flour for Pasta)<\/em><br><em>3 Eggs<\/em><br><em>1 Pinch of Salt<\/em><br><em>2 -3 tbsp Olive Oil<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Put the flour onto a working space and make a well in the middle. Break the eggs into the well and add the salt and olive oil.<\/em><br><em>Work with a fork, first beat the eggs a little to break the egg-yolks, then swirl the fork to incorporate the flour slowly into the liquid.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>As soon as the dough sticks together go on working by hand.<\/em><br><em>Now knead the dough for approx. 10 minutes by hand. It should get nice and elastic without any lumps. If it is too dry, wet your hand, if it is too wet, add a little flour.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Work in regular movements:<\/em><br><em>&#8211; fold from top to bottom<\/em><br><em>&#8211; push it from you with your palm<\/em><br><em>&#8211; turn 90 degrees<\/em><br><em>&#8211; fold from top to bottom<\/em><br><em>&#8211; push it from you with your palm<\/em><br><em>&#8211; turn 90 degrees<\/em><br><em>&#8211; do this until the dough is nice and soft<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Wrap the dough into cling-foil and let rest for 30 minutes. I let him rest in the fridge, as we have most often 30 C in the kitchen.<\/em><br><em>Cut the dough into two pieces. It should have small bubbles of air in it.<\/em><\/p>\n\n\n\n<h4 class=\"wp-block-heading has-text-align-center\"><em>Kneading was the easy part, now you can use your arm muscles!<\/em><\/h4>\n\n\n\n<p class=\"has-text-align-center\"><em>Work on a slightly floured work surface now. Roll the dough out with a wooden rolling pin.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>&#8211; Work away from you, so you have more strength!<\/em><br><em>&#8211; Push the rolling pin down on the dough and roll it away from you.<\/em><br><em>&#8211; If the dough slips on the surface hold it with the flat hand close to you and roll the rolling pin from you.<\/em><br><em>&#8211; Each time you rolled the dough a bit more out, lift it from the surface and turn it 90 degrees.<\/em><br><em>&#8211; repeat as often as you can. The dough should be very thin and almost see through. Don&#8217;t forget, the dough will grow when being cooked, so roll it out as thin as possible.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Now roll the dough up not too tightly and then cut slices of approx 5 mm. You can cut them wider if you like, it&#8217;s all up to you!<\/em><br><em>For the first time I would recommend to cut the noodles not too small. It&#8217;s quite hard to work with thin noodles.&nbsp;<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Open the cut slices and put them onto a floured kitchen towel. You can prepare the pasta until here and let them dry for a few hours, but I would cook them the same day. class=\"has-text-align-center\">Den Teig in 3-4 Teile schneiden und jedes Teil etwas flach dr\u00fccken. Dann die Teigstuecke erst durch die flache Rolle geben, auf der groessten Stufe, dann das ausgewallte Teigstueck in Drittel zusammenfalten und nochmals durch die groesste Oeffnung drehen. Ich mache dies 3 Mal.<br>Mit der Teigmaschine stufenweise flachpressen, aber nicht weiter als bis zur 2. letzten Einstellung. Je dicker und breiter die Nudeln sind, desto laenger muss man sie kochen. Ich empfehle, sie nach 8 Minuten zu probieren, damit man sieht, ob sie schon weich sind. Then turn these pieces each through the flat roll of the pasta machine, but with the biggest opening. Fold the dough into thirds and roll them again through the same roll with the biggest opening. I do this 3 times.&nbsp;&nbsp;<\/em><br><em>Now turn the roll of the machine one level closer and let the dough trough, go on, each time closing the rolls one step. Stop at the second last opening. Sprinkle with flour.&nbsp;<\/em><br><em>Now let the pasta sheets through the small noodle cutter.&nbsp;<\/em><br><em>Let the pasta dry on a hanger. .<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Cook the thin noodles in salted water for 2-3 minutes.&nbsp;<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>The hand rolled pasta need to be cooked 8-12 minutes, as they are often not as thin rolled as the machine ones. The thicker and wider the pasta is, the longer it takes. I would cook them for 8 minutes and then try, if they are good.
