Bald beginnt die Adventszeit und wer will da nicht seine Familie mit feinen Sachen verwoehnen?<br>Dazu gehoeren nicht nur Weihnachtsplaetzchen, Stollen und Baumkuchen, sondern auch Brot fuer&#8217;s Fruehstueck. Und weil wir Schweizer an Feiertagen und an Sonntagen gerne Zopf essen, bringe ich Euch hier zwei verschiedene Flechttechniken.<br>Eine ist die in der Schweiz uebliche Art mit vier Straengen.<br>Die Andere ist mit nur 3 Straengen. Beide Zoepfe werden wunderschoen.<br>Spaeter werde ich noch mehr Flechttechniken zeigen, aber diese 2 muessen erstmal reichen.<br>Es gibt ja so viele Moeglichkeiten, wie man den Zopfteig verarbeiten kann.<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre19-1024x771.jpg\" alt=\"Zopf flechten\" class=\"wp-image-468\"\/><\/figure>\n<\/div>\n\n\n<p class=\"has-text-align-center\"><em>Soon we start with the Advent again and so who doesn&#8217;t want to spoil his\/her family with good food?<\/em><br><em>There are not only Christmas cookies, Stollen and other sweets, but also festive breads. And we Swiss love our Zopf, which we serve on weekends and holidays. So I bring you two different ways to braid your Zopf.<\/em><br><em>One is the traditional way the Swiss braid their Sunday Zopf, it&#8217;s done with 4 &#8220;arms&#8221;.<\/em><br><em>The other is braided with 3 &#8220;arms like you do your hair. Both ways will give you a beautiful bread.&nbsp;<\/em><br><em>Later I will bring you more ways to braid your bread but for now these will have to suffice.<\/em>1 kg Zopfmehl (Bei Migros und Coop erhaeltlich, Weissmehl geht aber auch)<br>1 EL Salz<br>14 g Trockenhefe<br>1 TL Zucker<br>500 ml warme Milch<br>150 g weiche Butter<br>1 Eigelb veklopft<\/p>\n\n\n\n<p class=\"has-text-align-center\">Das Mehl mit der Hefe und dem Zucker vermischen, eine Mulde in der Mitte machen und die warme Milch und die weiche Butter hinein geben. Alles gut verkneten und wenn der Teig zusammen kommt das Salz zugeben.<br>Ca 5 Minuten kneten lassen oder von Hand 10 Minuten gut kneten.<br>In einer Schuessel, zugedeckt 2 Stunden gehen lassen.<br>Den Teig aus der Schuessel nehmen und halbieren. Die Haelfte, die spaeter bearbeitet wird, wieder in der Schuessel zudecken.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-text-align-center\">\u200b<br>Fuer den Vierstrangigen Zopf:<\/h4>\n\n\n\n<p class=\"has-text-align-center\">Die eine Haelften nochmals halbieren und zu langen Rollen formen, ich mache das so:<br>Den Teig flachdruecken und mit dem Walholz leicht lang rollen. Dann ganz eng von der langen Seite her aufrollen. Diese Rolle nun noch auf der Arbeitsflaeche rollen, so dass sie in der Mitte dicker sind und am Ende duenn auslaufen.<\/p>\n\n\n\n<p class=\"has-text-align-center\">1. Fuer den&nbsp;vierstrangigen Zopf&nbsp;die beiden Rollen im Kreuz uebereinander legen, so dass der Strang von unten links nach oben rechts darueber liegt.<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>For 2 Zopfs:<\/em><br><em>1 kg of Zopf Flour (in Switzerland you can get the special flour in most shops, but if you cannot buy this just use normal white flour.)<\/em><br><em>1 tbsp Salt<\/em><br><em>14 g dried Yeast<\/em><br><em>1 tsp Sugar<\/em><br><em>500 ml warm Milk<\/em><br><em>150 g soft Butter<\/em><br><em>1 Egg, beaten<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Mix the flour with the sugar and dried yeast and make an indentation in the middle. Pour the warm milk into that and add the soft butter. Knead all well together and when the dough gets together add the salt.&nbsp;<\/em><br><em>Knead for 5 minutes or if kneading by hand knead for 10 minutes.&nbsp;<\/em><br><em>Put into a bowl and cover with a towel, let rest for 2 hours.&nbsp;<\/em><br><em>\u200bThen take the dough out from the bowl and cut it into halves. Put one half back into the bowl and cover again until needed.<\/em><\/p>\n\n\n\n<h4 class=\"wp-block-heading has-text-align-center\"><em>For the 4 armed Zopf:<\/em><\/h4>\n\n\n\n<p class=\"has-text-align-center\"><em>Cut this half of the dough into two halves again and make two long arms out of them. I make it this way:<\/em><br><em>Flatten the dough slightly, then roll it with a rolling pin out in a long piece of dough. Roll it up very tightly from the long side. Then roll the arm on the surface so that in the middle it is fatter then the ends.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>1. For the&nbsp;Zopf with 4 &#8220;arms&#8221;&nbsp;put the rolls over each other in the form of a cross. The one from down left to up right must be on top.&nbsp;<\/em><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre2-300x187.jpg\" alt=\"\" class=\"wp-image-475\"\/><\/figure>\n<\/div>\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre3-300x200.jpg\" alt=\"\" class=\"wp-image-476\"\/><\/figure>\n<\/div>\n\n\n<p class=\"has-text-align-center\"><\/p>\n\n\n\n<p class=\"has-text-align-center\">2. Das linke Ende der Rolle ueber die darueber gelegte Rolle nach rechts legen, das rechte Ende der Rolle ueber die mittlere Rolle nach links legen. Dabei darauf achten, dass von nun an immer die linke Rolle oben und die rechte Rolle unten liegt.<\/p>\n\n\n\n<p class=\"has-text-align-center\">3. Jetzt den oberen Strang nach unten falten und den unteren nach oben. Auch hier achten wir darauf, dass immer der selbe zuerst gelegt wird, sonst verschiebt sich das Zopfmuster.<br>4. So weiter flechten bis zum Ende und die Enden unter den Zopf druecken. Der Zopf sollte von oben dick nach unten duenn werden.<br>\u200bSo wird der Schweizer Zopf geflochten!<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>2. Fold the left &#8220;arm&#8221; to the right and the right &#8220;arm&#8221; of the roll over the middle one to the left. Be sure to always put the left one on top, the right one on the bottom.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>3. Now fold the top &#8220;arm&#8221; down and to the left, the left &#8220;arm&#8221; up and to the right. Again we always fold the top one first, then the bottom last. Your Zopf will not look good if you don&#8217;t do that.&nbsp;<\/em><br><em>4. Go on folding like that and tuck the ends under the Zopf. Your Zopf should be going from fat to slim as shown in the picture below.<\/em><br><em>This is how the Swiss Zopf is traditionally made<\/em><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre4.jpg\" alt=\"Zopf flechten\" class=\"wp-image-477\"\/><\/figure>\n<\/div>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre5.jpg\" alt=\"geflochten\" class=\"wp-image-478\"\/><\/figure>\n<\/div>\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img decoding=\"async\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre16.jpg\" alt=\"Zopf flechten\" class=\"wp-image-471\"\/><\/figure>\n<\/div>\n\n\n<h4 class=\"wp-block-heading has-text-align-center\">Der Dreistrangige Zopf<\/h4>\n\n\n\n<p class=\"has-text-align-center\">wird mit drei gleichlangen, gleichdicken Rollen gemacht!<br>Den Teig in drei gleichgrosse Teile schneiden und jedes Teil flachdruecken und mit dem Walholz leicht lang rollen. Dann ganz eng von der langen Seite her aufrollen.<br>1. Alle drei rollen auf die Arbeitsflaeche nebeneinander legen und die oberen Enden zusammen drueckken und unter die Rollen schieben.<\/p>\n\n\n\n<p class=\"has-text-align-center\">2. Wie bei einem Haarzopf nun die linke Rolle ueber die Mittlere in die Mitte zwischen die Mittlere und die dritte Rolle legen.<\/p>\n\n\n\n<p class=\"has-text-align-center\">3. Nun die rechte Rolle ueber die nun Mittlere in die Mitte zwischen die Mittlere und linke Rolle legen.<\/p>\n\n\n\n<p class=\"has-text-align-center\">4. So weiter flechten und am Ende die Enden zusammen unter den Zopf druecken.<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-text-align-center\"><em>For the Zopf with 3 arms:<\/em><\/h4>\n\n\n\n<p class=\"has-text-align-center\"><em>Cut the dough into 3 parts, flatten the dough slightly, then roll it with a rolling pin out in a long piece of dough. Roll it up very tightly from the long side.&nbsp;<\/em><br><em>1. Put the three rolls (&#8220;arms&#8221;) onto a working surface next to each other. Tuck the ends on top together and under the rolls.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>2. Like braiding your hair, put the left arm over the middle one between the middle and the left arm.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>3. Now put the right one over the middle one in between the middle and the left one.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>4. Go on braiding like that until the end, tuck the ends together and under the Zopf.&nbsp;<\/em><br><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-479\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre6-234x300.jpg\" alt=\"\" width=\"234\" height=\"300\"> <img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-480\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre7-300x296.jpg\" alt=\"\" width=\"300\" height=\"296\"> <img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-481\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre8-266x300.jpg\" alt=\"\" width=\"266\" height=\"300\"> <img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-482\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre9-281x300.jpg\" alt=\"\" width=\"281\" height=\"300\"> <img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-472\" src=\"https:\/\/pane-bistecca.com\/wp-content\/uploads\/2018\/10\/dre17-200x300.jpg\" alt=\"\" width=\"200\" height=\"300\"><\/p>\n\n\n\n<p class=\"has-text-align-center\">Das Eigelb verklopfen und die Zoepfe damit bestreichen.<br>Im vorgeheitzten Ofen bei 200 C Grad 35 &#8211; 40 Minuten backen.<br>Backprobe: wenn man mit dem Knoechel des Fingers auf den Boden des Brotes klopft, sollte es wie auf Holz klingen, dann ist das Brot fertig gebacken.<br>\u200bEn Guete<\/p>\n\n\n\n<p class=\"has-text-align-center\">************<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em>Beat the egg-yolk with a fork and brush the Zopf with it.<\/em><br><em>Then bake the Zopf in the pre-heated oven at 200 C for 35 &#8211; 40 minutes.&nbsp;<\/em><br><em>\u200bTest by tapping the bottom of the bread with your knuckle.
