Why? Because for a while in Switzerland in the early 80s, everything was replaced with tofu because it was supposed to be so much healthier than meat. I remember how my then future mother-in-law put schnitzel on the table, which had nothing to do with schnitzel at all. It was bland, weird and not edible for me. Tofu, she called it. Schnitzel substitute&#8230; horrible! Nobody ate it!\n        <br><br>\n\t\tSince then I have avoided tofu&#8230;. until I started eating it in Chinese restaurants here in Hong Kong. I was hesitant to try it and I have to admit, I really like it cooked like this! Now place something heavier on top of the tofu so that the liquid is pressed out of the tofu. Leave to stand like this for approx. 30 minutes.
