In Asia, it is difficult to buy European fruit. Anyone who has ever bought apricots in Hong Kong knows that they are mealy and tasteless. However, I once found apricots and plums from South Africa at the market and they tasted really good, so I went for it! I love jams that have slight acidity, logically the apricot jam is first. Plums add a wonderful color and the vanilla gives that special kick! What could be better than spreading fresh bread thickly with a homemade jam in the morning? Mmmmmm… now I’m hungry!

Aprikosen-Pflaumen-Vanille Konfitüre

Für 8 Gläser:
1 kg Aprikosen
500 g Pflaumen

entsteinen und kleinschneiden, ergibt ca 1,4 kg Fruchtfleisch

1 Vanillestange ausgekratzt
1,3 kg Zucker

For 8 jars:
1 kg Apricots
500 g Plums

pit and cut into small pieces, yields approx. 1.4 kg fruit flesh

1 Vanilla Pod scraped out
1.3 kg Sugar
the Juice of 1 Lemon

Put the fruit in a high saucepan with all the other ingredients and leave to stand for 30 minutes. The sugar will melt and the fruit will marinate. Slowly bring to the boil and simmer until the jam thickens.
This is my mother’s cooking method, at that time – just like now here with us in Asia – there was no preserving sugar and therefore the jam had to cook for a long time. You have to be careful that the jam doesn’t foam up too much and then overflow. Pour the jam into hot washed jars and seal well.
